Chicken, veggies, Marsala wine and mozzarella come together to make a delicious, savory casserole. Sometimes I leave the cheese off and put out a bowl, so it can be added as needed. If you're planning on keeping leftovers, I recommend doing this so the cheese doesn't get gummy.

1 (16 ounce) can chicken broth
1 (1 ounce) package garlic and mushroom soup mix
2 tablespoons prepared mustard
1 tablespoon honey
1 ½ cups uncooked brown rice
1 ½ cups cooked and cubed ham
1 pound cubed cooked chicken breast
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
3 celery ribs, finely chopped
2 carrots, peeled and diced
1 (14.5 ounce) can diced tomatoes with garlic and onion
2 tablespoons dry Marsala wine
1 teaspoon dried parsley flakes
½ teaspoon crushed bay leaf
1 teaspoon dried basil
½ teaspoon cayenne pepper
½ teaspoon dried thyme
1 (8 ounce) container sour cream
1 cup dried plain breadcrumbs
6 ounces fresh mozzarella, grated
salt and freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
  • Stir the chicken broth, mushroom soup mix, mustard, and honey together in a bowl until thoroughly blended. Set aside.
  • Spread the rice evenly over the bottom of the prepared baking dish. Cover the rice with a layer of ham, then the chicken.
  • Heat the olive oil in a large skillet over medium heat. Stir in the onion, garlic, celery, and carrots; cook until onion is transparent and caramelized, about 5 minutes. Stir in the tomatoes, and cook 5 minutes more. Spoon the vegetables evenly over the chicken in the baking dish. Deglaze the skillet by adding the Marsala wine; cook and stir over medium heat to loosen any browned pieces of vegetables from the bottom. Let the liquid cool slightly, then stir into the chicken broth mixture. Pour the chicken broth mixture over the vegetables in the baking dish. Sprinkle with parsley, bay leaf, basil, cayenne pepper, and thyme. Cover the baking dish with foil.
  • Bake the casserole in preheated oven until top bubbles, about 50 minutes. Remove the foil, and stir in the sour cream. Sprinkle mozzarella cheese and bread crumbs evenly over the top. Bake, uncovered, 10 minutes more.

1 3/4 cups all-purpose baking mix (spooned and leveled)
1/2 cup sugar
1 teaspoon cinnamon
1 cup applesauce
1/2 cup buttermilk
2 large eggs, lightly beaten
3 tablespoons vegetable oil
1 teaspoon pure vanilla extract
1/2 cup grated carrots
1/4 cup golden raisins
1/4 cup pepitas
1/4 cup chopped pecans

Steps:

  • Preheat oven to 375 degrees. Line 12 standard muffin cups with paper liners; lightly coat liners with cooking spray.
  • Whisk together baking mix, sugar, and cinnamon. In a large bowl, whisk together applesauce, buttermilk, eggs, oil, and vanilla. Fold in dry mixture until just combined, then gently fold in carrots, raisins, pepitas, and pecans.
  • Divide batter evenly among cups, filling each to the brim. Bake until a toothpick inserted in center of a muffin comes out clean, 25 to 30 minutes. Let cool in pan 5 minutes, then remove from pan and let cool completely on a wire rack.

My sister, Cheryl, gave me this recipe. It has everything in it but the kitchen sink, hence the name. These are really great muffins and freeze well, that's if there are any left to freeze because they go so fast.

1 1/2 c flour
1 c sugar
1/2 c oatmeal, uncooked
2 tsp cinnamon
1/2 tsp salt
1 Tbsp nutmeg
2 c apples, peeled, chopped
1 1/2 c carrots, grated
1/2 c nuts, walnuts/sunflower seeds/almonds - chopped
1 c dried cranberries or raisins
3 eggs
1/2 c butter, melted
1 c coconut, shredded
1/2 c applesauce

Steps:

  • 1. In a large mixing bowl combine flour, sugar, oatmeal, cinnamon, salt and nutmeg. Add apples, carrots, cranberries/raisins, nuts and coconut. Stir until well mixed.
  • 2. Beat eggs in a medium bowl with a wire whisk. Stir in butter and applesauce.
  • 3. Add egg mixture to flour mixture. Stir until just moistened.
  • 4. Scoop into muffin cups. Bake in 350 degree oven for 20 to 25 minutes.

This soup is usually made up of leftover vegetables in the fridge or you can cut up fresh vegetables. The amount of vegetables you put in depends on how thick you want your soup. We like lots of veggies. This soup can be pureed and served with croutons on top. Great for a cold night supper. You can really let your imagination get carried away with this soup. I don't make it the same every time. It depends on what is in my fridge that is left over. Meat or chicken can be added. Enjoy

2 potatoes, cubed
2 carrots, sliced
2 stalks celery, diced
5 fresh mushrooms, sliced
1 green bell pepper, chopped
1 fresh broccoli, chopped
4 cups cauliflower florets
1 parsnip, sliced
1 onion, chopped
1 cup green peas
1 cup cut green beans, drained
1 cup wax beans, drained
½ cup cooked chickpeas
½ cup cooked navy beans
salt and pepper to taste
1 teaspoon dried parsley

Steps:

  • In a large stockpot, combine all the ingredients and cook over medium heat partially covered for about 30 minutes or until all the vegetables are tender. Serve hot with buttered biscuits.

1/2 cup butter, softened
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon grated nutmeg
3-4 medium banana's mashed
1 cup canned pure pumpkin
1 small apple peeled and grated
1 medium size carrot peeled and grated
1/4 cup chopped pecans
1/4 cup golden raisins
2 cup unbleached all purpose flour
1 teaspoon baking soda
1 teaspoon salt
12 muffin liners

Steps:

  • Preheat oven to 350 degrees. Mix softened butter and sugar in a mixing bowl and beat until blended. Add eggs and vanilla. Add the mashed banana's, pumpkin,apples, and carrots. In a separate bowl mix flour, baking soda, salt, cinnamon and nutmeg. Gradually add the flour mixture to the batter until blended. Stir in the pecans and raisins. Using a 1/4 measuring cup add the batter to the muffin liners and bake for approximately 27 minutes or until golden brown.

I've been making this bread since high school when I won some long forgotten cooking contest with it. It has a little bit of everything in it, thus the name.

3 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup butter, softened
1 1/3 cups sugar
3 eggs
1/2 cup milk
3 large bananas, mashed
1 cup walnuts, chopped
1/2 cup chocolate chips
1/2 cup white chocolate chips
1/2 cup coconut
1/2 cup maraschino cherry, drained & chopped

Steps:

  • Heat Oven to 350.
  • In a small bowl whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl beat together butter, sugar, eggs, and milk until smooth and creamy.
  • Beat flour mixture into wet ingredients on low speed just until combined.
  • Stir in mashed bananas.
  • Fold in walnuts, chocolate & white chocolate chips, coconut, and cherries.
  • Pour mixture into 2 well greased loaf pans.
  • Bake in 350 degree oven for approximately 1 hour until toothpick inserted in center tests clean.
  • Cool in pan on wire rack.
