WAFFLES

Waffles image

It's time to put that waffle iron languishing in the back of your cabinet to good use. These airy, delicate and crisp-edged waffles are so fabulous, yet so simple to throw together, they're destined to become part of your weekend breakfast routine. Freeze leftovers, if you have any, in Ziplock bags and serve them during the week. You can pop them in the toaster to reheat (use a light setting) and they come out nearly as well as freshly made, maybe even slightly crunchier. For a lighter, fluffier waffle, separate the eggs and proceed with step 2 using the egg yolks. Beat the whites until stiff, then fold into the batter. For whole-grain waffles, use 1 1/3 cup all-purpose flour and 2/3 cup whole-wheat flour. You can also substitute brown sugar for the granulated.

Time 35m

Yield about 10 waffles

Number Of Ingredients 9

6 tablespoons unsalted butter, more for waffle iron
2 cups/240 grams all-purpose flour
1 tablespoon/15 grams sugar
1 teaspoon/8 grams baking powder
1 teaspoon/5 grams fine sea salt
1/2 teaspoon/3 grams baking soda
1 cup plain yogurt (or see note)
1 cup milk
4 large eggs

Steps:

  • Melt butter either on the stove or in the microwave. Set aside.
  • In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda. In a separate bowl, whisk together yogurt, milk, melted butter, and eggs. Fold wet ingredients into dry ingredients.
  • Preheat a waffle iron and, using a pastry brush or paper towel, lightly coat with butter. Cook waffles (using about 1/2 cup batter per waffle) until golden and crisp. Butter the iron in between batches as needed. Serve waffles immediately as they are ready, or keep them warm in a 200 degree oven until ready to serve.

EASY WAFFLES

Easy Waffles image

Consider this your new, go-to waffle recipe when you want to start your day off on a sweet note. No fussy steps or unexpected ingredients are required here, which means you can whip these up whenever your cravings hit.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 30m

Number Of Ingredients 8

1 cup all-purpose flour, spooned and leveled
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
2 large eggs
4 tablespoons (1/2 stick) unsalted butter, melted
Maple syrup and butter, as desired, for serving

Steps:

  • Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
  • In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
  • Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.

LIGHT AND CRISPY WAFFLES

Light and Crispy Waffles image

These light and crispy waffles come together quickly. Cornstarch is the secret to crispy waffles. It guarantees that your waffles will be perfectly crisp and tender. This recipe makes four standard waffles (1/2-inch to 3/4-inch thick). If you want to make thicker Belgian waffles or use a deep waffle iron, you will get closer to three waffles using our recipe below. Separating the egg is optional but is recommended. We do not do this in the video; however, after years of feedback from readers, we have determined that whipping the egg white thickens the batter slightly and improves the results for deeper waffle irons.

Provided by Adam and Joanne Gallagher

Categories     Breakfast

Time 35m

Yield Makes 4 standard waffles or 2 to 3 thick waffles

Number Of Ingredients 11

1 cup (130 grams) all-purpose flour
1/4 cup (30 grams) cornstarch
1/2 teaspoon fine sea salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 tablespoon sugar
1 cup (235 ml) buttermilk or milk
1/3 cup (80 ml) vegetable oil
1 teaspoon vanilla extract
1 large egg
Butter, syrup and/or berries, for serving

Steps:

  • Whisk together the flour, cornstarch, salt, baking powder, baking soda, and sugar in a large bowl.
  • In a separate bowl, whisk the buttermilk, oil, and vanilla extract.
  • For the lightest waffles, separate the egg. Whisk the egg yolk into the milk mixture. If you do not plan on separating the egg, whisk the whole egg into the milk mixture.
  • If you separate the egg, add the egg white to another bowl, use a handheld mixer to beat until stiff, and then set aside.
  • Whisk the milk mixture into the dry ingredients until only small lumps are left. Switch to a rubber spatula and gently fold in the whipped egg whites.
  • Set the batter aside for five to ten minutes while preparing the waffle iron.
  • Heat the waffle iron to the highest heat setting.
  • Cook waffles until golden and crisp, adding enough batter to the waffle iron to fill the entire lower grid. If the waffles look too dark, turn the heat down slightly.
  • Serve the waffles immediately or keep them warm and crispy on a rack in a 200°F oven until ready to serve. Stacking them outside the oven will cause them to steam and become floppy.

CRISP EVERYDAY WAFFLES RECIPE

Crisp Everyday Waffles Recipe image

A simple splash of oil helps crisp these quick waffles. No whipping egg whites or running out for fussy ingredients here. You can adapt the batter in the Variations to match sweet or savory toppings. The cooking heat and time, amount of batter per waffle and total yield depend on your waffle maker model, so read the instructions to figure out the settings to get golden-brown crisp waffles.

Time 35m

Yield Makes 6 (7-inch) waffles

Number Of Ingredients 8

1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/4 cup unsalted butter
2 tablespoons vegetable oil
1 ½ cups milk, preferably whole, room temperature
2 large eggs, room temperature

Steps:

  • Heat a waffle iron to medium-high heat. If you're planning to serve the waffles all at once, place a metal rack in a rimmed baking sheet and place in the oven. Heat the oven to 200 degrees.
  • Whisk the flour, sugar, baking powder and salt in a large bowl. Place the butter in a large liquid measuring cup if you have one or another bowl if not. Microwave in 20-second increments until melted. Whisk in the oil until emulsified and smooth, then whisk in the milk and eggs until very smooth.
  • Make a well in the center of the dry ingredients and add the wet ingredients all at once. Fold gently with a silicone spatula just until no traces of flour remain; it's fine for the batter to be lumpy.
  • Scoop the batter into the center of the heated waffle iron, adjusting the amount to your machine, then close the iron and cook until golden brown and crisp. Eat immediately or transfer to the prepared pan in the oven to keep crisp and hot.

  • Begin by preparing the cinnamon sugar coating. In a flat tray or casserole pan, combine the sugar, cinnamon and nutmeg. Use a whisk or a large spoon and combine the ingredients together until a uniform mixture forms. Make sure to break apart any clumps of brown sugar. Set the coating aside for later.
  • Next, prepare the waffle batter. If you cannot find buttermilk in stores, make your own by combining whole milk with the 2 tablespoons lemon juice or vinegar. Whisk in the juice, then let the milk stand for a few minutes, forming a buttermilk.
  • In a large bowl, combine the buttermilk, oil or melted butter, eggs, sugar and vanilla. Whisk on high speed with a mixer or use a hand whisk; mix for a few minutes until the eggs are well beaten. In a separate bowl, combine all the dry ingredients: flour, baking soda, baking powder, salt and cinnamon. Sift the dry ingredients into the batter, then mix for about 1 minute, until the batter is smooth.
  • While preparing the batter, preheat a waffle griddle. Once the griddle is hot and ready, add approximately ¼ to 1/3 cup waffle batter into the center; close and let the waffles cook until golden.
