BASIC VINAIGRETTE



Basic Vinaigrette image

Try basic vinaigrette on mixed greens, steamed or boiled vegetables, such as greens beans, asparagus, broccoli, or potatoes.

Yield Makes 1 cup

Number Of Ingredients 6

1/4 cup white-wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/2 teaspoon pepper
Pinch of sugar
3/4 cup extra-virgin olive oil

Steps:

  • In a small bowl, whisk together vinegar, mustard, salt, pepper, and a pinch of sugar.
  • Slowly add oil, whisking until emulsified, or shake the ingredients in a jar, or whirl them in a blender.

Everyday vinaigrette image

Once you taste this broth-based vinaigrette with only a teensy bit of oil, you'll use it frequently-for tossing with greens or veggies or for marinating chicken or seafood. Make a batch and refrigerate it for up to one week. For a slight change of taste, substitute white or Champagne vinegar for the red, or doctor the dressing with 2 teaspoons fresh, finely minced herbs such as thyme, tarragon, chives or parsley.

Number Of Ingredients 8

1 tsp Table salt
2 medium clove(s) Garlic clove(s) minced (or less to taste)
6 Tbsp Canned chicken broth reduced-sodium
0.25 cup(s) Balsamic vinegar
0.25 cup(s) Red-wine vinegar
2 Tbsp Olive oil extra-virgin
2 tsp Olive oil extra-virgin
2 medium Uncooked shallot(s) very finely chopped

Steps:

  • Sprinkle the salt over the garlic on a cutting board. Mash to a paste with the flat side of a heavy knife.
  • Combine the mashed garlic, the broth, vinegars, oil, and shallots in a small jar with a tight-fitting lid. Cover and shake well. Yields 2 tablespoons per serving.

I got this recipe many years ago from one of my favorite Canadian author/teacher, Ann Lindsay. This recipe never gets boring as there are many variations to choose from. It is fun to play around, coming up with something new each time!

Number Of Ingredients 6

2 tablespoons olive oil or 2 tablespoons vegetable oil
2 tablespoons cider vinegar or 2 tablespoons balsamic vinegar
2 tablespoons water
1 small garlic clove, minced
1 teaspoon Dijon mustard
1 pinch salt and pepper

Steps:

  • In a small bowl, combine oil, water, garlic, mustard and salt and pepper.
  • Mix well.
  • Variations: Add ONE of the following to the dressing: 1 tsp sesame oil. 1/4 tsp cumin. 1 fresh Parmesan cheese, grated.
  • Herb Dressing: Add 2 T chopped fresh herbs (basil, dill or parsley or a combination).
  • Poppyseed Dressing: Omit mustard and garlic. Add 1 T poppy seeds and 1 tsp sugar.
  • Ginger Garlic Dressing: use 1 T each of vegetable oil and sesame oil; add 1 tsp finely minced gingerroot, omit mustard.

  • In a liquid measuring cup or bowl, combine all of the ingredients. Stir well with a small whisk or a fork until the ingredients are completely mixed together.
  • Taste, and adjust as necessary. If the mixture is too acidic, thin it out with a bit more olive oil or balance the flavors with a little more maple syrup or honey. If the mixture is a little blah, add another pinch or two of salt. If it doesn’t have enough zing, add vinegar by the teaspoon.
  • Serve immediately, or cover and refrigerate for future use. Homemade vinaigrette keeps well for 7 to 10 days. If your vinaigrette solidifies somewhat in the fridge, don’t worry about it—real olive oil tends to do that. Simply let it rest at room temperature for 5 to 10 minutes or microwave very briefly (about 20 seconds) to liquify the olive oil again. Whisk to blend and serve.
