Try basic vinaigrette on mixed greens, steamed or boiled vegetables, such as greens beans, asparagus, broccoli, or potatoes.

- In a small bowl, whisk together vinegar, mustard, salt, pepper, and a pinch of sugar.
- Slowly add oil, whisking until emulsified, or shake the ingredients in a jar, or whirl them in a blender.
EVERYDAY VINAIGRETTE
Once you taste this broth-based vinaigrette with only a teensy bit of oil, you'll use it frequently-for tossing with greens or veggies or for marinating chicken or seafood. Make a batch and refrigerate it for up to one week. For a slight change of taste, substitute white or Champagne vinegar for the red, or doctor the dressing with 2 teaspoons fresh, finely minced herbs such as thyme, tarragon, chives or parsley.

- Sprinkle the salt over the garlic on a cutting board. Mash to a paste with the flat side of a heavy knife.
- Combine the mashed garlic, the broth, vinegars, oil, and shallots in a small jar with a tight-fitting lid. Cover and shake well. Yields 2 tablespoons per serving.

I got this recipe many years ago from one of my favorite Canadian author/teacher, Ann Lindsay. This recipe never gets boring as there are many variations to choose from. It is fun to play around, coming up with something new each time!

- In a small bowl, combine oil, water, garlic, mustard and salt and pepper.
- Mix well.
- Variations: Add ONE of the following to the dressing: 1 tsp sesame oil. 1/4 tsp cumin. 1 fresh Parmesan cheese, grated.
- Herb Dressing: Add 2 T chopped fresh herbs (basil, dill or parsley or a combination).
- Poppyseed Dressing: Omit mustard and garlic. Add 1 T poppy seeds and 1 tsp sugar.
- Ginger Garlic Dressing: use 1 T each of vegetable oil and sesame oil; add 1 tsp finely minced gingerroot, omit mustard.

- Put the vinegar, mustard, honey, and salt into a small jar. Screw on the lid and shake vigorously. Add the oil to the jar, return the lid and shake again until the ingredients form a smooth emulsion. Dip a lettuce leaf to be sure the taste is to your liking. Adjust any ingredients if needed. - In a liquid measuring cup or bowl, combine all of the ingredients. Stir well with a small whisk or a fork until the ingredients are completely mixed together.
