14 ounces broccoli
1 tablespoon olive oil
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut broccoli florets from the stalk. Peel the stalk and slice into 1/4-inch slices. Mix florets and stem pieces with olive oil in a bowl and transfer to a baking sheet; season with salt and pepper.
  • Roast in the preheated oven until broccoli is tender and lightly browned, about 18 minutes.

Do you have 20 minutes tonight? Do you have access to broccoli? Then you need to make this recipe! This just shot up to the top of my list for favorite side dish. There were no leftovers at our table. It is simply delicious.

2 heads of broccoli, cut into florets
3 tbsp melted coconut oil
5 cloves of garlic, minced
1 tsp salt
1/2 tsp pepper
1 tsp lemon juice
Pinch of red pepper flakes (optional)

Steps:

  • Preheat the oven to 400 degrees F.In a large bowl, toss the broccoli with melted coconut oil, salt, black pepper and garlic. Spread the broccoli in a single layer on a rimmed baking sheet.Bake until florets are tender enough to pierce with a fork and the edges are browning, about 15 minutes. Turn once halfway through the baking process and add red pepper flakes, if using. After baking, squeeze lemon juice liberally over the broccoli before serving.

1 can(s) cream of broccoli soup
1/2 c milk
1 tsp soy sauce
dash pepper
1 bunch fresh broccoli, cut up, or 1 (20 oz.) pkg. frozen broccoli cuts, cooked and drained
1 can(s) (2.8 oz.) french fried onions

Steps:

  • 1. In a 1 1/2 qt. shallow casserole combine soup, milk, soy sauce, and pepper. Stir in broccoli and 1/2 can of the onions.
  • 2. Bake at 350 degrees for 25 minutes or until hot; stir. Top with remaining onions; bake 5 minutes more.
  • 3. Microwave method: Cover casserole with waxed paper; microwave on HIGH for 8 minutes, rotating dish halfway through heating. Top with remaining onions. Microwave, uncovered, for 1 minute more.

2 eggs
1 onion, finely chopped
1 teaspoon garlic powder
salt and pepper, to taste
1/2 cup cheddar cheese, if desired

Steps:

  • Steam broccoli until fork tender, drain.
  • In a bowl, mix together ricotta, eggs, onion, garlic powder and salt and pepper.
  • Toss with steamed broccoli.
  • Sprinkle cheese over if desired.
  • Put into a greased 9x11 baking dish.
  • Bake at 350' for 1 hour.

CAULIFLOWER AND BROCCOLI CASSEROLE RECIPE



Cauliflower and Broccoli Casserole Recipe image

Cheesy goodness makes the vegetables go down-especially the sharp cheddar in this cheesy cauliflower and broccoli casserole!

Number Of Ingredients 13

2 heads of cauliflower (broken into florets)
1 head of broccoli (broken into florets)
2 cups milk
3 Tbsp unsalted butter (divided)
1/4 cup breadcrumbs (or panko)
1/2 yellow onion (diced)
1 clove garlic (minced)
2 Tbsp all-purpose flour
1/2 tsp red pepper flakes (optional)
2 cups sharp cheddar cheese (shredded)
1/2 cup Parmesan cheese (grated)
1 tsp salt
1/2 tsp pepper

Steps:

  • Preheat oven to 400 degrees and generously butter a 9" x 13" casserole dish. Set aside.
  • Fill a large pot halfway with water and bring to a boil over high heat. Cook cauliflower and broccoli florets for 6 minutes.
  • In a large non-stick skillet, melt 1 Tbsp butter. Add the breadcrumbs and toast until fragrant and browned. Set aside and wipe out the skillet with a paper towel.
  • Remove cauliflower and broccoli florets from heat, strain then place back in the empty pot. Return the pot to the heat and toss the veggies for 2-3 minutes to release steam and dry them out. Remove from the heat and set aside.
  • In the large clean skillet, melt 2 Tbsp butter. Sauté onion and garlic in the butter over medium heat for about 2 minutes or until onion is translucent. Add flour and red pepper flakes, whisk to combine then cook for 1 minute. Slowly whisk in milk until flour is dissolved. Cook for 2 minutes until slightly thickened.
  • Stir in cheeses until melted then season with salt and pepper to taste. Pour the cheese sauce over the cauliflower and broccoli florets and stir to combine. Sprinkle with 1 tsp of salt and ½ tsp pepper.
  • Pour the cheesy cauliflower mixture into the prepared 9" x 13" baking dish. Sprinkle with toasted breadcrumbs and bake 20-25 minutes or until hot and bubbly. Cool for at least 5 minutes before serving.

One Pan Chicken and Broccoli is sweet and juicy; perfect for any night of the week!

4 boneless skinless chicken breasts
16 oz red potatoes quartered
24 oz broccoli florets
4 tablespoon olive oil divided
2 tablespoon butter melted
2 tablespoon honey
2 tablespoons brown sugar
1 tbso dijon mustard
3 cloves garlic minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
garlic powder
salt and pepper
non-stick cooking spray

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with foil and spray with non-stick cooking spray.
  • Whisk together 2 tablespoons olive oil, melted butter, honey, brown sugar, mustard, garlic, oregano and basil, a dash of salt and pepper in a small bowl. Set aside.
  • Place the potatoes on the baking sheet and drizzle with 1 tablespoon of olive oil, and season with salt, pepper, and garlic powder. (no need to measure, just sprinkle across the top)
  • Toss to coat and arrange in a single layer on one side of the baking sheet.
  • Reserve 1/4th cup of the honey garlic sauce for later use.
  • Lay your chicken on the other side and brush both sides with the remaining honey garlic sauce.
  • Bake in the oven for 30 minutes.
  • While the potatoes and chicken are baking, mix 1 tablespoon of olive oil with the 1/4th cup of the honey garlic sauce and toss to lightly coat the broccoli.
  • Remove the chicken and potatoes after 30 minutes and pour the broccoli on top of the potatoes. Using a large spoon, carefully mix the broccoli and potatoes together.
  • Bake for an additional 15 minutes or until the chicken is no longer pink, and the potatoes are fork tender. (depending on the sizes of your chicken breasts, you may need to remove one or two before the potatoes are done)
  • After 15 minutes, turn the oven to broil and broil for 3 to 4 minutes or until things are a bit caramelized.

Steps:

  • First of all, preheat your oven to 400 degrees F and then spray a baking dish with cooking oil.
  • In a pan, melt 2 sticks of butter on medium heat and sauté the onions for 4-5 minutes until they become tender. In a bowl, beat 1 egg and add it to the pan with the onions and cook for another minute.
  • Place your broccoli in a steamer and steam it for 5-6 minutes and then drain it well and add 1 cup of cheddar cheese, mushroom soup mix, chili powder, and salt to taste.
  • Add this mixture to the pan with onions and mix all the ingredients well. Now spread the mixture in a baking dish, sprinkle 1 cup of cheddar cheese on top and bake for 30 minutes until it turns golden brown.
  • Let the broccoli cheese casserole cheddars cool down completely before serving.
