Amazingly Easy Banana Cake image

One day I had 3 overripe bananas, no flour, no eggs, and four kids I did not want to take shopping. I made this up on the fly and now I make it all the time.

3 over-ripe bananas, mashed
1 (8 ounce) package cream cheese, softened
1 cup vegetable oil
1 (15.25 ounce) package cake mix with candy bits (such as Pillsbury® Funfetti®), or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.
  • Beat bananas, cream cheese, and oil together in a bowl using an electric mixer on medium speed until smooth and creamy, about 2 minutes. Add cake mix and continue beating for 3 minutes more; spread into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 to 35 minutes.

This is an old Seattle recipe for a simple cake to turn overripe bananas into a delicious dessert.

1 cup white sugar
½ cup unsalted butter
2 eggs
4 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 x 13 inch cake pan.
  • Cream together the butter or margarine and the sugar.
  • Add eggs, bananas, flour, soda, salt, nuts, and vanilla. Mix thoroughly and pour batter into the prepared pan.
  • Bake at 375 degrees F (190 degrees C) for 30 minutes. Cool and frost cake.

Whenever I have overripe bananas, I always make this easy cake. You always have all of the ingredients on hand and it mixes up in a hurry. This recipe works for cupcakes, loaf pans, 9 x 13 pyrex or 8 or 9 inch layer cake pans. Frost with your favorite cream cheese or buttercream recipe.

1 cup sugar
2 cups all-purpose flour
2 teaspoons baking soda
1/2 cup water
1 cup ripe banana, mashed
1 cup mayonnaise
1/2 teaspoon cinnamon
1 pinch salt
3/4 cup walnuts, chopped & toasted (optional)

Steps:

  • Preheat oven to 350 degrees. Lightly grease cupcake, 9 x 13, or 2 (8 or 9 inch) layer pans.
  • Dump all ingredients (except walnuts) into large bowl.
  • Mix by hand using a wire whisk or wooden spoon just until the dry ingredients are combined. DO NOT OVERMIX.
  • If using walnuts, mix with a teaspoon of flour and then fold into batter.
  • Bake 350 degrees about 30 minutes or until a toothpick comes out clean.
  • Cool on wire rack and frost with favorite frosting, if desired.
