These Easy Tuna Patties are sort of like hamburgers, except instead of ground beef, they're made from a mixture of tuna, breadcrumbs, and eggs. Perfect for a light, healthy meal!

3 eggs
1 teaspoons lemon juice
3 tablespoons grated Parmesan cheese
3/4 cup Italian-seasoned bread crumbs
1 teaspoon old bay seasoning
4 5 ounce cans albacore tuna, drained
1 teaspoon dijon mustard
1/8 cup finely diced onion
1/4 cup finely diced celery
1/4 teaspoon ground black pepper
1/4 teaspoon dill
3-4 tablespoons vegetable oil

Steps:

  • Beat eggs and lemon juice in a bowl. In a separate bowl, combine Parmesan cheese, bread crumbs, Old Bay, tuna, mustard, onion, celery, black pepper and dill. Pour in egg/lemon mixture.
  • Shape tuna mixture into about eight 1-inch-thick patties. NOTE: If you have time, it is best to refrigerate patties for at least an hour. This will help them stay together better during frying. However, this is no a required step.
  • Heat vegetable oil in a skillet over medium heat. Fry patties until golden brown, about 5 minutes per side.

4 (3-oz.) pouches Blue Harbor Albacore Tuna (or 12-oz. total drained canned tuna)*
1 egg
1/4 cup finely chopped white onion
2 tablespoons finely chopped fresh parsley
1 tablespoon mayonnaise
1 teaspoon Sriracha sauce
zest and juice of 1/2 lemon
1/4 teaspoon salt
1/2 cup dry bread crumbs
3 tablespoons avocado oil (or your preferred oil)

Steps:

  • Add the tuna to a large bowl. Stir in the onions and fresh parsley.
  • In a smaller bowl, whisk together the egg, mayonnaise, Sriracha, lemon zest, and lemon juice.
  • Add the liquid mixture to the tuna mixture and stir together. Add the bread crumbs, and use your hands to combine and mix evenly.
  • Divide the mixture into 4 equal portions, about 1/2 cup each. Shape into 4 patties, each about 1 inch thick.
  • Heat the avocado oil (or your desired cooking oil) over medium heat. Using a fish turner, gently lay the tuna patties in the pan, and cook until browned, about 3-4 minutes on each side. Season with additional salt and pepper, as desired. Serve warm.

10 ounces tuna (2 cans of 5 ounces each)
1/3 cup breadcrumbs or panko
1 tablespoon dried chives or 2 tablespoons fresh chives (finely chopped)
1/2 tablespoon dried dill or 1 tablespoon fresh dill
1 tablespoon dijon mustard
2 eggs (beaten)
1 teaspoon olive oil
salt and pepper to taste
lemon wedges (optional)

Steps:

  • Drain the tuna.
  • Combine all of the ingredients in a large bowl.
  • Form into 4 equal patties. (roll into balls first then press into patties)
  • In a non-stick pan, add the oil and saute the patties over medium heat.
  • Cook until golden brown, about 3-4 minutes per side.
  • Drizzle with lemon juice from wedges.

2 5 ounce cans chunk light tuna in water, drained
1 egg
1/4 cup chopped onion
1 tablespoon mayonnaise
2 teaspoons Dijon mustard
1/4 teaspoon black pepper
1/4 teaspoon salt
Few drops hot sauce (optional)
25 Ritz crackers (finely crumbled (could use saltine crackers))
1/3 cup cooking oil (I use Canola)

Steps:

  • Mix together all ingredients in a bowl with a spoon except cooking oil. Heat oil in skillet until sizzling. Pat tuna mixture into patties with your hands. Brown in hot oil on both sides.
  • Turn down and continue cooking about ten minutes until crusty brown. Makes 5 to 6 patties depending on size you make them.

1/2 tsp salt
oil, for frying

Steps:

  • 1. Frist open & drian the cans of tuna. break up into flaked pieces & place in a meduim bowl. Add in the salt & pepper. Mix to season.
  • 2. Next beat the eggs, add to the bowl & mix well. Then heat a large or medium frying pan over medium heat with the oil.
  • 3. Then spoon a small ladle spoon full into the frying pan. Fry on both sides until a light golden brown for about 3 mins each side.

Turn a can of tuna into easy Tuna and Potato Patties which have a crisp, crunchy exterior and a tender, flavoursome interior. This is a great budget dinner option that the whole family can enjoy. It is a tasty meal made with staples from the pantry. It is a meal which is quick to make and is easily put together after a busy day.

200 g potato
425 g can of tuna in oil, drained well (See Note 1)
1 medium brown/yellow onion, finely chopped
1 egg, lightly beaten
2 tbsp flat leaf parsley, finely chopped (See Note 2)
sea salt and black pepper, to taste (See Note 3)
1/2 cup finely ground cornmeal/polenta, for coating (See Note 4)
1/4 cup olive oil, for frying (See Note 5)

Steps:

  • Peel the potato and cut into cubes.
  • Place the potato in a small saucepan and add enough cold water to just cover the potato. Add 1/2 teaspoon salt to the water. Over high heat bring the water to a boil. Reduce the heat to low and cover the saucepan with a lid. Cook the potatoes until tender, about 15 minutes. Test with a skewer to see if they are cooked. It should easily slide into the potato.
  • Drain the potato when cooked. Return the potato to the empty saucepan for a minute or two to dry further in the residual heat.
  • Add the potato to a medium size bowl and mash with a fork.
  • Add the well-drained tuna and finely chopped onion and mix together.
  • Add the egg and parsley and mix well. The tuna pieces should have broken down to a fairly fine texture.
  • Season to taste with sea salt and freshly ground black pepper. Cover the bowl with cling wrap and refrigerate for at least 30 minutes to one hour to allow the mixture to firm up.
  • Shape the mixture into small balls and then flatten into patties, shaping them firmly with your hands. I used an ice cream scoop to make even sized patties.
  • Place the polenta/cornmeal on a large plate.
  • Coat the patties evenly in the cornmeal and then move to a separate plate.
  • Heat the olive oil in a large non-stick frying pan until it is hot but not smoking. Gently add the patties to the pan and cook about 3 minutes each side until the exterior is crisp and golden. Avoid moving the patties around, they are fragile. Leave them to cook and firm up. Turn only once if possible.
  • Cook the Tuna Patties in batches if necessary. Place the first batch on a plate lined with kitchen paper and keep warm in a low oven.
  • Serve the Tuna Patties with a wedge of lemon and a delicious salad.Alternatively, they make a great burger. Place them in a burger roll with mayonnaise, tomato slices and shredded lettuce.

Steps:

  • Start by draining canned tuna from water. I use a small colander to do that.
  • Next, combine it with garlic, onion, salt and pepper, lemon juice and zest, egg, breadcrumbs, mayo, 1/4 cup of grated Parmesan cheese and dried parsley. Mix well.
  • Combine remaining breadcrumbs and grated cheese in a shallow dish. Scoop 1/4 cup of tuna mixture, form into a patty and lightly coat with breading mixture.
  • Fry cake in pan with oil, until nicely browned on each side. Remove from pan and let rest for 5 minutes. Serve with spinach or other greens, additional lemon wedge or even simple aioli.
