EVER-READY OAT/BRAN MUFFINS
This is a recipe my grandmother gave to me and I believe she got it off a bag of Quaker Oats. It is the best bran muffin recipe I have tried. I misplaced the recipe and couldn't find it online anywhere, so I'm posting it here so I can find it. I remember my grandmother making these when we'd go to stay with her and I loved them. I usually store the unused batter in plastic containers in the refrigerator. I fill the containers with the batter and then put a layer of plastic wrap over the top before I put the lid on...I find the batter keeps longer that way. Also, by putting it in a couple of smaller containers, rather than one large one, the batter keeps longer because you aren't exposing it until you use it. I'm not sure exactly how many muffins this will make because I've never made them all at once, but it makes alot.

Steps:
- Preheat oven to 375 degrees.
- Pour boiling water over bran and let stand.
- Combine flour, baking soda and salt in a very large bowl. Stir well to blend.
- In a separate bowl, cream shortening and sugar together. Then add eggs and buttermilk. Mix well.
- Add liquid ingredients to flour mixure and mix well.
- Add oats, raisins and bran (the bowl will be very full). Stir well to blend.
- Fill greased muffin cups 3/4 full and bake at 375 for 15-20 minutes.
- Store unused muffin batter in refrigerator until ready to use. Mixture can be kept up to 6 weeks.

INCREDIBLE OAT BRAN MUFFINS, PLAIN, BLUEBERRY OR BANANA
I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

- *Blueberry or banana variations are at bottom.
- Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
- Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
- Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
- *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
- These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

Steps:
- Preheat oven to 425 degrees.
- In a large bowl combine oat bran, flour, chopped apricots, baking powder, brown sugar (save 2 tbs), and cinnamon.
- Separately beat the egg with 2tbs of sugar until fluffy and light.
- Warm up milk (just until lukewarm) and dissolve honey in it.
- Mix milk, egg, oil and vanilla.
- Blend together with dry ingredients, adding a bit more skim milk if the mixture seems too thick.
- Line a muffin pan with paper baking cups.
- Bake 18 to 20 minutes.
- NOTE: It's almost foolproof, but you can test for doneness with a toothpick if you like: they should be moist but not wet.
- To retain moisture, store in a plastic bag.
- They're best served warm; reheating with the microwave works just fine.

OAT BRAN MUFFINS
This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

- Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
- Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
- Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
- VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.
