GRANDMA'S CHEW BREAD
A southern style bar cookie loaded with brown sugar and pecans. Relax in the afternoon and chew on some of these.

Steps:
- Preheat oven to 400 degrees F ( 200 degrees C ). Grease a 15x10x1 inch jellyroll pan.
- In a heavy saucepan combine the sugar and eggs. Cook over medium heat, stirring constantly until sugar is dissolved. Remove from heat, stir in the flour, salt, vanilla, and pecans.
- Spoon mixture into the prepared baking pan and bake for 15 minutes in the preheated oven. Cool and cut into squares.

CHEWY BREAD
I don't know where this dessert treat got it's name. I got the recipe many years ago form a co-worker and have made it many times.

Steps:
- 1. Preheat oven to 350 degrees F.
- 2. Mix all ingredients together and stir until well mixed.
- 3. Pour mixture into a greased 7" by 10" by 2" baking pan. (Or something close to that size)
- 4. Bake for approximately 30 minutes or until nicely brown and semi firm.
- 5. Remove from oven and cool before cutting into 2" by 2" squares.
CHEW BREAD

- 4. Add flour.

CAROLINA CHEW BREAD
WARNING THIS RECIPE IS NOT FOR THOSE WATCHING WHAT YOU EAT. This is a delectable chewy like brownie. Rich, sweet and with a little crunch from the nuts, there is a little bit of everything for everybody in this wonderful brownie. Doesn't last long around my family. When I take the brownies to a bbq it's the first to go. I bet you can't eat just one!

HASH BROWNS WITH CHEESY EGGS AND AVOCADO
Steps:
- For the hash browns: Preheat the oven to 250 degrees F.
- Grate the onion on the largest holes of a box grater into a large bowl. Grate the potatoes and put in a strainer lined with cheesecloth or a kitchen towel. Squeeze the liquid from the potatoes, then add the dry potatoes to the bowl with the onions. Season with salt and pepper. Add the herbs and mix until well combined.
- Heat 2 tablespoons oil in a medium cast-iron skillet over medium heat. Drop 1/4 cup of the potato mixture into the skillet, pressing down lightly with a spatula. Repeat until there are 4 hash browns in the skillet. Cook until golden brown on the bottom, 5 to 7 minutes, reducing the heat to medium low if they start to brown too quickly. Flip and cook until golden brown, 5 to 7 minutes more. Transfer to a baking sheet and keep warm in the oven. Repeat the process with the remaining 2 tablespoons olive oil and remaining potato mixture.
- For the cheesy eggs: In a medium bowl, whisk together the milk and eggs and season with salt and pepper.
- Melt the butter in a medium nonstick skillet over medium heat. Lower the heat and add the egg mixture. Using a heatproof rubber spatula, push the eggs toward the center of the skillet and let the liquid run out. Cook, continually moving, until just set, about 2 minutes. Drop 2 tablespoons of the garlic-herb cheese into the middle. Gently fold the cheese into the warm eggs.
- Divide the hash browns among 4 plates. Top each with some cheesy eggs and sliced avocado. Dollop each portion of eggs with 1 tablespoon of the remaining garlic-herb cheese. Serve immediately.

- Melt the butter in a 2-quart saucepan over low heat. Set aside to cool slightly.
- Sift together the flour, salt and baking soda onto a paper plate. Pour the butter into your stand mixer's work bowl. Add the sugar and brown sugar and beat with the paddle attachment on medium speed for 2 minutes.
- Meanwhile, whisk together the whole egg, the egg yolk, milk and vanilla extract in a measuring cup. Reduce the mixer speed and slowly add the egg mixture. Mix until thoroughly combined, about 30 seconds.
- Using the paper plate as a slide, gradually integrate the dry ingredients, stopping a couple of times to scrape down the sides of the bowl. Once the flour is worked in, drop the speed to "stir" and add the chocolate chips. Chill the dough for 1 hour.
- Preheat the oven to 375 degrees F and place racks in the top third and bottom third of the oven.
- Scoop the dough into 1 1/2-ounce portions onto parchment-lined half sheet pans, 6 cookies per sheet. Bake 2 sheets at a time for 15 minutes, rotating the pans halfway through. Remove from the oven, slide the parchment with the cookies onto a cooling rack and wait at least 5 minutes before devouring.
CAROLINA CHEW BREAD

- 1. Preheat oven to 400 degrees and grease a baking pan. You can use a 9 x 9, 8 x 8 or 13 x 9.
- 2. Sift flour and brown sugar. Add margarine, eggs, vanilla, chopped nuts and coconut. Pour into prepared pan.

CHEW BREAD
Steps:
- Preheat oven 350. Melt stick of butter in a 13x9-inch pan - do not burn the butter. (Put pan in oven while it is preheating, then add butter while you mix the first two ingredients.)
- Mix brown sugar & eggs in a bowl. Slowly add melted butter, flavoring, and gradually add flour. Add nuts or leave out if you just want vanilla flavoring. This mix will be a bit thick. Scrape bowl right into warm pan. You can shake the pan a little, but you will NOT need to spread out - chew bread is self-leveling.
- Bake approx 25-30 minutes depending on your oven. If you overbake, you will burn it! You will also make it very tough.
