OLD-FASHIONED APPLE CRISP
Ina Garten's Old-Fashioned Apple Crisp, a recipe from Barefoot Contessa on Food Network, is best served warm with a scoop of vanilla ice cream.

- Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval baking dish.
- Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
- To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over the apples.
- Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly. Serve warm.
APPLE CRISP - PERFECT AND EASY
I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
- Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.

- Preheat oven to 350 F (175 degree C).
- In a medium size bowl, toss apples with sugar, flour, cinnamon, lemon juice, and water; spread evenly into a 8x8 inch pan. In another bowl, mix together flour, brown sugar, oats, and butter; spoon mixture evenly over apples.
- In a heavy sauce pan over low heat, melt the caramels with the evaporated milk. Heat , stirring frequently, until mixture has a smooth consistency. Drizzle the caramel sauce over the top of the crumble.

- Preheat oven to 350 degrees F.
- In a large bowl, combine flour, oats, cinnamon and brown sugar. Cut in butter until mixture has a crumbly texture. Set aside.
- Grease the sides and bottom of a 13x9 baking dish.
- In a small bowl, combine remaining sugar, cinnamon and cornstarch.
- Place chopped and peeled apples into a large bowl. Drizzle lemon juice over apples and stir to combine. Sprinkle sugar, cinnamon and cornstarch mixture over apples and stir to combine well.
- Pour apple mixture into prepared pan. Top with crumb mixture.
- Bake for 45-50 minutes. Remove from oven and allow to cool slightly.
- Place each serving in a bowl and top with a scoop of vanilla ice cream and caramel sauce. Store any leftovers in the refrigerator, and reheat individual servings if desired.
