EUROPEAN MUESLI
I first enjoyed this scrumptious, nutty cereal in Germany and Austria, and more recently at the Naramata Centre in British Columbia, Canada. It's excellent mixed into fruity yogurt.

- Preheat oven to 225 degrees F (110 degrees C). Lightly grease a large baking sheet.
- In a large bowl, mix together wheat germ, sesame seeds, sunflower seeds, pumpkin seeds, cashews, almonds, coconut, rolled wheat and rolled oats.
- In a medium saucepan over medium heat, mix oil, honey and vanilla. Cook and stir just until the mixture is hot. Stir into the wheat germ mixture.
- Spread the mixture on the prepared baking sheet. Bake 1 1/2 hours in the preheated oven, stirring approximately every 20 minutes, until golden brown.

- In the morning, grate 2 apples (including the peel), and mix into the bircher muesli. I use one red and one green for the photos, but both varieties work. See post for more info.
- After the bircher has soaked overnight, serve with your favorite toppings. I use a spoonful of regular yogurt, then add on walnuts, sunflower seeds, pepitas, brown and golden flax seeds, raisins and cranberries. You can also add in a swirl of jam if you like.

- All you need to do is mix the almond, apricots, and all of the remaining elements in a large bowl. Then move the mixture to a large, airtight container for storage.
- You can toast some or all of the elements within the blend. I prefer to only toast the nuts, seeds, and grains though. To do this, spread them in a single layer over a large baking tray and toast in the oven for 10-15 minutes at 325ºF/160ºC, until lightly golden and aromatic.Nuts can take less time - 7-8 minutes, though I just chuck everything in together to save time and it always works well. Once toasted, allow to cool and then mix with the remaining ingredients.
- Homemade muesli cereal should be stored in an airtight container at room temperature, for between 1-2 months. There’s no need to refrigerate the mixture unless you plan to blend/chop the nuts and seeds (this may also reduce the shelf life).If you decide to make a meal-prep batch of overnight oats style muesli, then these will last in the fridge for 5-6 days.
