ESPRESSO SODA
This espresso soda is the perfect afternoon pick-me-up! It's light and refreshing, and is the perfect way to mix up your coffee routine.

Steps:
- Place 1/2 cup of ice in a medium-sized glass.
- Pour in 1 shot of cooled espresso.
- Add in 1 teaspoon of simple syrup and 1 teaspoon of vanilla or almond extract.
- Top with 1 cup of club soda, and a splash of you favorite milk if desired.
- Enjoy immediately!

- 1. Combine the sugar and water in a medium saucepan, bring to a boil over high heat and cook until the sugar is completely dissolved, about 2 minutes. Remove from the heat, add the espresso beans, and let sit at room temperature for 30 minutes.
- 2. Strain, cover and refrigerate until very cold, at least 2 hours.
- 3. To make the sodas: Fill 8 tall glasses with ice cubes. Add about 1/4 cup of the espresso syrup to each glass. If desired, add a shot of coffee liqueur and vodka, and stir well.
- 4. Fill with about a cup of club soda, and serve each soda with a straw.

- Fill a glass with ice. We like to use coffee ice cubes for a stronger flavor, but regular ice works, too.
- Get out your cold brew. If you're using regular brewed coffee, let it sit for at least 10 minutes to cool down.
- Pour the sparkling water into your glass. Then pour the cold brew on top and take a moment to admire the beautiful layers. Add a sprig of rosemary or a wedge of lemon for a fun garnish!
