GINGER CHILE GLAZED HAM WITH FLAMBE FINISH



Ginger Chile Glazed Ham with Flambe Finish image

Number Of Ingredients 10

One 7- to 8-pound fully cooked bone-in ham
1 cup chicken stock
4 tablespoons unsalted butter
2 tablespoons fresh ginger grated on a rasp
1/2 teaspoon chile flakes
3/4 cup brown sugar
1/2 cup honey
1/2 cup lime juice
1 tablespoon plus 1 teaspoon Dijon mustard
1/3 cup bourbon, optional

Steps:

  • Temper the ham by bringing it out of the fridge 90 minutes before cooking. (This will allow it to heat more evenly and not dry out.)
  • Preheat the oven to 300 degrees F.
  • Place the ham in a shallow roasting pan fitted with a rack. Using a paring knife, score the fatty side of the ham by gently slicing lines 1/2-inch apart, crisscrossing on an angle to create a diamond pattern. This will allow the glaze to soak into the ham. Add the chicken stock to the bottom of the pan, then cover the pan in foil. Cook for 40 minutes, basting every 10 to 15 minutes.
  • To make the glaze, warm the butter in a medium saucepan over medium heat. Add the ginger and chile flakes and cook until fragrant, about 1 minute. Add the brown sugar, honey, lime juice and Dijon mustard. Bring to a simmer, then cook until slightly reduced, about 2 minutes. Set aside the glaze in a bowl, leaving about 1/4 cup behind in the pan for finishing.
  • Remove the ham from the oven and raise the oven to 425 degrees F.
  • Remove the foil from the ham and discard the drippings from the pan. Brush the ham liberally with half of the glaze. Return to the oven and cook, uncovered, for 15 minutes, then brush again. Bake again until dark and caramelized, another 15 minutes. Remove the ham to a rimmed platter.
  • Heat the remaining 1/4 cup glaze to a simmer over medium-low heat. If using the bourbon, remove the glaze from heat and add the bourbon. Using a lighter, flambe the alcohol in the pan and very carefully pour over the ham. (The alcohol can be omitted and you can just put the warm glaze over the ham.)

1/2 cup gochujang, Korean fermented chili paste
1/2 cup apple juice
1/4 cup maple syrup
1 teaspoon Worcestershire sauce
1/4 cup espresso or strong coffee
7 pounds cooked bone-in spiral ham
Leaves from ½ bunch purple kale or cabbage
1/2 cup pomegranate seeds

Steps:

  • Preheat oven to 380 degrees F. Whisk gochujang, apple juice, maple syrup, Worcestershire sauce, and espresso in a small bowl.
  • Place ham onto a rack fitted over a sheet pan. Generously brush the glaze all over the ham with a pastry or silicone brush. The glaze will seep into the ham, giving it a burnished finish throughout. Bake 1-1½ hours, depending on the size of your ham, basting every 15 minutes.
  • After 15 minutes, for the first basting, the spiral cuts will begin to brown and separate. Baste all over, then place back in the oven. The ham will be basted 5-6 times in total, for a bubbly, burnished finish.
  • Remove ham from oven and pull away the outermost layer from the cut side (this slice will be dried out). Let rest while preparing the garnish. Lay kale or cabbage leaves onto a platter, then sprinkle with pomegranate seeds. Gently place the ham on the leaves and serve.

1 cup packed brown sugar
3 tablespoons honey
2 tablespoons cider vinegar
2-1/4 cups ginger ale
4 chipotle peppers in adobo sauce, minced
3 garlic cloves, minced
1-1/2 teaspoons Dijon mustard
3/4 teaspoon ground cinnamon
3/4 teaspoon ground cumin

Steps:

  • Preheat oven to 325°. Place ham on a rack in a roasting pan. Using a sharp knife, score surface of ham with 1/2-in.-deep cuts in a diamond pattern. Bake, uncovered, 1-1/2 hours., Meanwhile, for glaze, in a small saucepan, mix brown sugar, honey, vinegar and ginger ale. Bring to a boil; cook until mixture is reduced by half, about 15 minutes. Stir in remaining ingredients. Reduce heat; simmer, uncovered, 5 minutes. Remove from heat. Reserve 1 cup mixture for sauce; keep warm., Brush ham with some of the remaining glaze. Bake, uncovered, until a thermometer reads 140°, about 30 minutes, brushing twice with additional glaze. Serve with reserved sauce.

One 7- to 9-pound fully cooked spiral-cut ham
1 cup dark brown sugar
1/4 cup grainy brown mustard
2 tablespoons apple cider vinegar
1/2 teaspoon ground cinnamon
1/2 teaspoon paprika
1/2 teaspoon chili powder
3 medium oranges, zested and juiced
2 cloves garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
  • Preheat the oven to 325 degrees F.
  • Make the glaze: In a medium pot over medium-high heat, combine the brown sugar, mustard, vinegar, cinnamon, paprika, chili powder, orange zest and juice, garlic and some salt and pepper. Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
  • Place a rack in a roasting pan. Put the ham on the rack large open-face down (so the spiral cuts are stacked on top of one another). Brush half of the glaze over the surface of the ham, getting it between the slices as much as you can.
  • Pour about an inch of water in the base of the roasting pan; the water should not touch the ham. Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound (1 hour 10 minutes to 1 hour 25 minutes).
  • Take the ham out of the oven and remove the foil. Raise the oven temperature to 375 degrees F. Brush half of the remaining glaze on the ham. When the oven is up to temperature, return the ham, uncovered, and bake for 15 minutes. Brush the remaining glaze over the ham and cook for another 15 minutes.
  • Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!

HABANERO BOURBON GLAZED HAM

2 cups freshly squeezed orange juice
1/2 cup freshly squeezed lime juice
1/2 cup dark brown sugar
1/4 cup smoked maple bourbon, such as Knob Creek
1/4 cup pure maple syrup
1/4 cup apple cider vinegar
1 large habanero, 3 slits cut into it
One 3- to 4-pound spiral ham

Steps:

  • Combine the orange juice, lime juice, brown sugar, bourbon, maple syrup, vinegar and habanero in a large saucepot. Bring to a boil then reduce to a simmer. Simmer until reduced and slightly thickened, about 30 minutes. Remove from the heat and cool completely (the mixture will thicken as it cools). Remove the habanero and set aside until ready to use. This can be done ahead of time.
  • Preheat the oven to 425 degrees F.
  • Put your ham in a roasting pan and cook until gently warmed through, about 45 minutes. Then begin basting it was the glaze until it's nicely caramelized, another 20 minutes. Remove the ham, tent with foil and let rest for 10 minutes before slicing. Serve with any remaining glaze.
