AVOCADO DESSERT - SRI LANKA
This recipe is being posted for ZWT II & my source is asianonlinerecipes.com. Since I have a special fondness for Tex-Mex fare, I'm no stranger to using avocado & this is amazingly simple. I must admit I've never made an avocado dessert & didn't even know you could. (Stated time does not include chilling time)

Steps:
- Cut avocados in half lengthways. Remove seeds & reserve them. Scoop pulp from shells & mash smoothly w/a fork. Discard shells.
- Add sugar to taste & stir in the cream.
- Put in serving bowl, return seeds to the pulp, cover tightly w/plastic wrap & chill before serving. NOTE: The presence of the seeds in the puree is said to keep the avocado from discoloring, but the plastic wrap is always used as well.
- To Serve: If desired, extra whipped & sweetened cream can be piped over the top of the dessert. While many favor adding rum for flavor, the delicate avocado flavor may be allowed to stand alone -- or -- the mixture can be divided & served both ways.
- Personal Note: I would reserve the avocado shells & use them to serve this dessert.

CHOCOLATE CHIP COOKIE COOL WHIP DESSERT
My family has shortened the name of this dessert down to "The Kick Ass Dessert" because it is so easy and tastes delicious! Plus, there's quite a bit of it, so there are always leftovers!

Steps:
- Combine milk and Amaretto in a shallow bowl.
- Dip cookies into the milk/Amaretto mixture, and place a single layer of cookies in the bottom of a deep dessert dish.
- Once cookies cover the bottom of the dish, spoon out a layer of Cool Whip over the cookies so that it covers the cookies completely. Layer should be about an inch thick.
- Repeate layers, placing cookies so that it covers up the Cool Whip, then Cool Whip to cover up the cookies.
- End the layering with a layer of Cool Whip.
- Crumble remaining cookies over the top of your dessert as garnish.
- Refrigerate for 1-2 hours.
- Serve cold.

- Peel avocados and cut into pieces. Place with remaining ingredients in blender. Cover and blend until smooth and creamy.

RHUBARB WHIP DESSERT
Easy Rhubarb pudding type dessert. I have not tried this. It is for a board request. The 4 hour prep time is only meant for the chilling in the refrigerator :)

Steps:
- Mix rhubarb, sugar and ½ cup water in saucepan.
- Stir occasionally and bring to a boil.
- Cover saucepan and cook for 8 10 minutes.
- Continue cooking, and add strawberry gelatin,continuously stirring until gelatin dissolves.
- Remove from heat and add 1-cup cold water.
- Allow to cool, then place in refrigerator to chill until partially set.
- Remove from refrigerator and whip mixture with electric beater until fluffy.
- Fold in whipped cream.
- Garnish with fresh strawberries (whole or sliced).

ESKRIM POKAT (AVOCADO WHIP DESSERT)
The lovely flavor & smooth texture of the avocado seem to be finding their way into more desserts as time goes by. Here is yet another by Yohanni Johns from "Dishes From Indonesia" that is so easy to fix & sounds divine! Enjoy! (Time does not include time for avocado mixture to chill in the freezer)

Steps:
- Using a hand-held mixer or immersion blender, add lemon juice & sugar to the mashed avocado flesh & mix well.
- Combine avocado mixture w/ice cream & beat till smooth.
- Place in a freezer to chill for 1 to 1 1/2 hrs & stir every 30 min, but do not freeze.
- To Serve: Divide mixture between 4 sml dessert bowls & serve immediately.
- NOTE: The recipe did not suggest a garnish, but to my surprise I discovered during ZWT that avocado & chocolate are just wonderful together, so I would add chocolate shavings to the top of ea dessert.
