10 cups sliced peeled tart apples (about 8 medium)
1/3 cup sugar
2 tablespoons cornstarch
1/2 to 1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter, cubed

Steps:

  • Place apples in a 2-1/2-qt. microwave-safe bowl. Combine the sugar, cornstarch, cinnamon and nutmeg; sprinkle over apples and toss to coat. Dot with butter. Cover and microwave on high for 11-12 minutes or until apples are tender, stirring every 5 minutes.

½ cup brown sugar
3 tablespoons all-purpose flour
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
6 apples - peeled, cored, and chopped, or more to taste
½ cup raisins
½ cup chopped walnuts
¼ cup butter, cut into small cubes
½ cup whole milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Combine brown sugar, flour, cinnamon, nutmeg, and cloves together in a large bowl; add apples and toss to coat. Stir raisins, walnuts, and butter into apple mixture. Spread apple mixture evenly in prepared baking dish. Combine milk and vanilla extract together in a bowl; pour evenly over apple mixture. Cover baking dish with aluminum foil.
  • Bake in preheated oven until apples are easily pierced with a fork, about 30 minutes.
  • Remove foil and stir apples. Bake until apples are very soft and mixture is bubbly, about 30 minutes more.

1 medium Granny Smith apple, peeled and thinly sliced
1 teaspoon sugar
1 teaspoon lemon juice
2 tablespoons butter
1/2 cup sliced sweet onion
4 medium red potatoes, thinly sliced (about 1 pound)
3/4 cup plus 2 tablespoons shredded Parmesan cheese, divided
1/2 cup heavy whipping cream
1/2 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
4 bacon strips, cooked and crumbled
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a small bowl, combine apple slices, sugar and lemon juice; toss to coat. Set aside. In an 8- or 9-in. cast-iron or other ovenproof skillet, heat butter over medium heat. Add onion; cook and stir until crisp-tender, about 3 minutes. Remove from the heat., Alternately arrange potato and apple slices in a single layer in same skillet. Combine 3/4 cup Parmesan cheese, cream, thyme, salt and pepper; pour over top., Bake, uncovered, 50 minutes. Top with bacon and remaining 2 tablespoons Parmesan cheese. Bake until potatoes are tender and top is lightly browned, 5-10 minutes longer. Let stand 10 minutes before serving. If desired, sprinkle with parsley.

1/2 c sugar
3 Tbsp flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp clove
1/2 c raisins (or dried cranberries)
1/2 c walnuts, chopped
1 tsp vanilla
1/2 c whole milk

Steps:

  • 1. Place apples in a large bowl. In a small bowl, mix together sugar, flour, cinnamon, nutmeg, and cloves.
  • 2. Stir spice mix into apples until evenly distributed. Fold in walnuts and raisins.
  • 3. Spoon mixture into a greased 2-qt. casserole. Mix vanilla and milk; pour evenly over apple mixture. Bake at 350 degrees for 45-60 minutes, or until soft and bubbly. Allow to cool slightly before serving.

1 (2 lb) can sauerkraut
6 cups tart apples, peeled, sliced
2 tablespoons flour
1/2 teaspoon cinnamon
1 dash clove
1 dash nutmeg
1 dash salt
2 tablespoons honey
2 tablespoons butter
1 cup chopped onion
1/2 teaspoon dry mustard
1/2 lb mild cheddar cheese, grated
3/4 cup fine breadcrumbs
3/4 cup finely-chopped walnuts or 3/4 cup almonds

Steps:

  • Place the sauerkraut in a colander and rinse well under cold tap water. Squeeze dry.
  • Toss together the apple slices, flour and spices. Drizzle in the honey and mix well.
  • Saute the onions in the butter until clear and soft (5- 8 mnutes). Add the dry mustard and the sauerkraut, and cook another few minutes over medium heat. Remove from heat.
  • Take half the grated cheese, and combine it with the breadcrumbs and chopped nuts. Leave the other half of the grated cheese to stand alone.
  • In your buttered deep-dish casserole, make the following pattern of layers: 1st a layer consisting of half the apple mixture, next, half the onion-sauerkraut mixture; 3rd the plain grated cheese, 4th the remaining apples, followed by the remaining/sauerkraut mix, and FINALLY, the nut-crumb-cheese topping!
  • Cover and bake for 20 minutes and uncover and bake 20 minutes more.
