Escabeche image

In this traditional Mediterranean dish, sauteed red snapper or lemon sole is flavored overnight in a vinegar-and-citrus marinade.

Number Of Ingredients 15

2 pounds lemon sole or red snapper (6 fillets)
Coarse salt and freshly ground pepper
6 tablespoons olive oil
1 red bell pepper, cut in 1/4-inch-thick rings, seeds removed
1 navel orange, sliced 1/4 inch thick
1 red onion, very thinly sliced
4 mild chile peppers
8 cloves garlic, smashed
6 fresh bay leaves
1 tablespoon whole black peppercorns
2 cups white-wine vinegar
2 cups water
1/4 cup freshly squeezed lime juice (about 3 limes), plus lime wedges for garnish
24 cracked green olives
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Cut each fillet into 3 pieces; season with salt and pepper. Heat 2 tablespoons oil in a skillet over medium heat. Working in batches, saute until golden brown and cooked through, about 2 minutes on each side, adding remaining oil to pan as needed. Transfer to a plate to cool completely.
  • Layer fish with red pepper, orange, onion, chiles, garlic, bay leaves, and peppercorns in a large wide-mouthed jar. Combine vinegar, 2 cups water, and lime juice, and pour over fish and vegetables in jar. If liquid doesn't cover all of it completely, continue adding equal parts vinegar and water. Cover with plastic wrap or lid; refrigerate 3 hours or overnight. Serve garnished with lime, olives, and parsley.

ROASTED PAPAYA ESCABECHE



Roasted Papaya Escabeche image

This tropical side dish surprises the palate with its sweet and acidic notes.

3 cups papaya planks (like steak-cut french fries)
1 yellow onion, sliced
1/2 cup sugar
1/2 cup apple cider vinegar
4 cloves garlic, sliced thinly
3 tablespoons olive oil
1 tablespoon fresh ginger strips
Leaves from 1 sprig fresh cilantro
Leaves from 1 sprig fresh thyme
Juice of 1 fresh lime
Kosher salt and freshly ground black pepper

Steps:

  • Add the papaya, onion, sugar and vinegar to a medium saucepan. Bring to a simmer and cook, uncovered, until the papaya is soft and the liquid has reduced slightly, 10 to 15 minutes. Remove from the heat and cool completely over a bowl of crushed ice.
  • Stir in the garlic, olive oil, ginger, cilantro, thyme and lime juice. Season to taste with salt and pepper and serve.

2 -3 lbs red snapper, whole fish
4 tablespoons vegetable oil
1 tablespoon salt
1/4 teaspoon ground pepper
2 tablespoons soy sauce
1/2 cup apple cider vinegar or 1/2 cup white vinegar
1/4 water
1/2 cup brown sugar
1 large chopped onion
6 tablespoons minced garlic
1/2 cup ginger, julienned
1/2 cup carrot, julienned
1/2 cup red bell pepper
1/2 cup scallion, julienned (spring onions)
1 tablespoon sifted flour

Steps:

  • Clean the fish and slit it open. Let it stand for few minutes and drain well.
  • Sprinkle fish with 1 tbsp salt.
  • In a medium skillet, heat the oil and fry the fish until brown. Remove the fish from the pan and set aside.
  • In the same skillet, sauté the garlic until light brown, then sauté onion.
  • Add salt and white pepper. Stir in ginger, scallions, carrot and red bell pepper.
  • Add soy sauce, vinegar, water and sugar. Salt and pepper to taste.
  • When the mixture boils, add flour to thicken. Then, add the fish.
  • Cover the skillet and simmer for 5 minutes.

1 cup sugar
1 cup boiling water
3 1/2 cups cold water, divided
3 cups peeled chopped papayas
1 cup fresh lemon juice (about 4 large lemons)

Steps:

  • Combine sugar and boiling water, stirring until sugar dissolves.
  • Let cool slightly.
  • Place sugar syrup, 2 cups cold water, papaya, and lemon juice in blender; process until mixture is smooth.
  • Stir in remaining 1 1/2 cups cold water.
  • Serve over ice.
  • Enjoy!

1 medium fish
1 large onion, sliced
1 head garlic, sliced thin
1 tablespoon ginger, sliced into strips
1 sweet red pepper, cut in strips
1 hot pepper, cut in strips
4 tablespoons vinegar
1 1/2 cups water
3 tablespoons soy sauce
1 1/2 tablespoons flour
4 tablespoons sugar
2 tablespoons lard
2 teaspoons salt
fat (for frying fish)

Steps:

  • Clean fish and sprinkle with salt.
  • Let stand about 15 minutes and drain well.
  • Fry in hot oil until brown and set aside.
  • Saute garlic,ginger,onion and papaya until papaya is half cooked.
  • Add salt and hot pepper and mixture of vinegar,water,sugar,soy sauce and flour.
  • Cook until liquid thickens and the papaya becomes tender.
  • Place fried fish on a platter and pour over it the gravy mixture.
  • Garnish with sliced red-sweet pepper.
