My mom came up with this recipe when I was a child. It is the ONLY way I will eat green onions.

- Melt butter in a skillet, and mix in the soy sauce. Saute the green onions and garlic until lightly browned.
- Place the pork steaks in the skillet, cover, and cook 8 to 10 minutes on each side, Remove cover, and continue cooking 10 minutes, or to an internal temperature of 145 degrees F (63 degrees C).

- Mix the marinade ingredients in a non-reactive container or a freezer bag. Place the pork steaks inside and make sure they are covered with marinade. Refrigerate covered, from 4 hours to overnight.
- Bring the marinated steaks to room temperature and preheat oven to 350 F. Line a baking sheet with parchment paper (optional, for easier clean up).
- Scrape the marinade from the pork steaks and season with salt and pepper. Place on the baking sheet and bake for 20 minutes.
- Flip the steaks over and continue baking to get the other side nicely browned OR broil the other side but watch closely. About 5-8 minute more minutes, depending on how thick the steaks are. Internal temperature should be at least 145 F, but up to 180 F is fine, pork shoulder steaks do not dry out easily.
- Loosely tent with foil and rest for 5 minutes before serving.

- Place steaks on a cutting board and cover with plastic wrap. Pound the meat with a meat millet, being careful not to hit the bones to tenderize and flatten the steaks. Trim the fatty parts on the outside of the steaks.
- Place in a bowl or a large zip lock bag. Add the olive oil, vinegar and seasoning. Cover and refrigerate for at least 30 minutes to up to 24 hours.
- Preheat a gas grill to 450-500F. Clean the grates.Place the meat (make sure there is no oil dripping) on the grill and cook for 5-6 minutes per side, until charred and the internal temperature reaches at least 145 F. I cook it to a slightly higher temperature.
- Let the meat rest for 3-5 minutes. Serve.

ERNIE'S PORK SHOULDER STEAKS
Hubby found a basic recipe for pork steaks & tweaked it to our liking. The salsa gives it a little kick. This is our new favorite dish. Love the leftovers! My Photo.

- Spray a large skillet with nonstick cooking spray or brush skillet with some vegetable oil. Heat skillet on medium high heat, while seasoning the meat.
- Season pork shoulder steaks with salt, pepper, and 1-2 tsp. garlic powder, on both sides. Place pork in the large skillet, and brown on each side for 4 minutes.
- Slice a small to medium onion, and place of top of steaks. Stir together the cup of ketchup and cup of salsa and 2 cups of water. Pour over steaks.
- Bring liquid to a simmer, over medium heat; then, reduce heat to medium low or low; cover, and cook approximately 2 hours, or until cooked through & tender. Remove lid & place meat on a platter with aluminum foil to cover to keep warm. Keep skillet with sauce on burner with lid off, so it can cook down some. When ready to serve, remove foil from meat, & spoon sauce, including cooked onions over the top of the meat. Great leftovers. Makes 4 servings.

- Preheat grill to medium-low heat.
- Season the pork steaks on both sides with seasoned salt and seasoned pepper. In a large bowl, stir together the vinegar and water, and season with seasoned salt and seasoned pepper to taste.

- Purée garlic, ginger, sake, gochujang, mirin, and 1/4 cup oil in a blender. Set 1/4 cup marinade aside; chill. Transfer remaining marinade to a large dish. Add pork; turn to coat. Chill, turning occasionally, at least 2 hours.
- Prepare grill for medium-high heat; oil grate. Remove pork from marinade and grill, basting with reserved marinade, turning occasionally, and moving pork to a cooler area if flare-up occurs, until cooked to desired doneness, 8-10 minutes for medium-rare.
- Transfer pork to a cutting board and let rest 5 minutes before thinly slicing against the grain.

SLOW COOKER PORK SHOULDER STEAKS WITH MUSHROOMS, POTATOES AND GRAVY
Pork steaks are browned and then slowly cooked until tender. They are served alongside a mushroom gravy and sliced potatoes. A good old fashioned dinner!

- Trim your pork steaks of excess fat. Generously salt and pepper your pork steaks. Heat a large pan over medium heat on your stove top. Add in the oil and let it heat for a minute. Arrange each of the pork steaks on the bottom of the pan so they are all in contact with the bottom of the pan (you may need to work in batches). Let the steaks brown for 5 minutes. Do not move the steaks or turn them over for the full 5 minutes. You'll be tempted to move them or mess around with them, but don't.
- While the meat is browning prepare your vegetables. Dice the onion, mince the garlic and peel the potatoes. Slice the potatoes into quarter inch rounds. Slice the mushrooms.
- When the 5 minutes is up remove the pork steaks and place them into the slow cooker. I only browned one side of the steaks for sake of time but if you want you can brown both sides. Add the onion into the hot pan and saute for 3 minutes. Add in the garlic and saute for 1 more minute. Pour the chicken broth in and deglaze the pan. Add the mixture into the slow cooker.
- Stir the mushrooms, mustard, lemon juice and tarragon into the slow cooker.
- Place the potatoes in a oven safe dish that will fit inside your slow cooker. You can use a pyrex,* corningware* or cake pan*. Salt and pepper the potatoes and toss. Cover the dish with foil. Lower the dish into the slow cooker on top of the pork.
- Cover the slow cooker and cook on low for 8 hours.
- Carefully remove the dish of potatoes and set aside. Pour the half and half into the sauce. Turn the slow cooker to the high setting. Stir 3 Tbsp of cornstarch and 3 Tbsp of cold water together in a small bowl until smooth. Stir the cornstarch slurry into the pot and let the sauce thicken without the lid for about 30 minutes.
- Once sauce is thickened salt and pepper to taste. Serve sauce, mushrooms and pork over the top of the potatoes.
