- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish.
- Bring Alfredo sauce to a simmer in a saucepan over medium-low heat, about 5 minutes; add garlic, salt, and pepper. Reduce heat to low and keep sauce warm.
- Mix Parmigiano-Reggiano cheese and Pecorino cheese together in a bowl.
- Arrange 1/4 the potato slices in the bottom of the prepared baking dish, overlapping them slightly. Sprinkle 1/4 cup cheese mixture, 1 tablespoon parsley, and 1/3 the ham over potato layer. Repeat layering 2 more times, ending with a final layer of potatoes and 1/4 cup cheese mixture. Pour Alfredo sauce mixture over and around the potatoes.

- Preheat oven to 375°F (190°C). Melt butter in a saucepan set over medium. Add onion, thyme and garlic. Cook for 5 minutes or until softened. Stir in soup, broth, black pepper, nutmeg and salt. Bring to a simmer.
- Meanwhile, layer one-third of the potatoes, overlapping slightly, in a greased 9x13-inch (3 L) baking dish. Sprinkle with 1/3 cup (75 mL) Gruyere cheese and top with one-third of the broth mixture. Repeat the layers twice.
- Press down on the potatoes to make sure they are immersed in liquid. Sprinkle the remaining Gruyere cheese and Parmesan cheese on top. Cover the surface directly with parchment paper then cover the pan with aluminum foil and place on baking sheet.

- Add sliced potatoes to well salted pot of water. Once it starts to boil, boil for three minutes. Do not overcook, drain well.
- In a skillet on medium heat, combine the olive oil and onions. Add salt and pepper to taste and cook for 4 - 5 minutes.
- Add the parsley, thyme, and ham and cook an additional 3 - 5 minutes then set aside in a bowl.
- Wipe skillet out with paper towel and melt the butter over medium heat.
- Add the flour and whisk to combine and the flour has turned a slight brown color.
- Slowly add the milk and whisk constantly. Add salt and pepper to taste.
- Bring to a boil and then turn heat down to low and whisk for another 2 - 3 minutes.
- Add the ham and onion mixture to the skillet. Add salt and pepper to taste.
- Cook an additional 2 minutes.
- Butter a 2 quart casserole dish.
- Add a spoonful of sauce and spread on the bottom of the casserole dish.
- Place a layer of potatoes on top of the sauce.
- Continue alternating sauce and potatoes.
- Sprinkle the gruyere cheese on top and then cover with foil.
- Bake at 400 degrees for 35 - 55 minutes.
- Remove foil and bake another 10 minutes to brown the cheese.

- Melt the butter over medium-low in a large deep pan.
- Add chopped onions and cook until the onions are soft.
- Add the flour and stir until the flour becomes frothy.
- Add the half and half and milk 1/2 a cup at a time, stirring in between.

- Preheat the oven to 350˚. Butter a large casserole dish.
- Heat butter in a large skillet. Add the onions and cook for 1 to 2 minutes, or until they start to turn translucent. Add the ham and cook for 3 to 4 minutes until thoroughly heated. Remove from heat and set aside.
- Combine the half-and-half and cream in a microwave-safe container and nuke for a minute or so, until no longer cold. Whisk in the flour and black pepper until totally combined. Set aside. (You may add salt, but the cheese and ham are salty, so add sparingly.)

- Generously coat the inside of a 6-quart slow cooker with cooking spray. (See recipe notes if using a smaller slow cooker.)
- Place a layer of potato slices in the bottom of the slow cooker, alternating the Yukon Golds and sweets. Generously sprinkle with kosher salt and black pepper (do not skimp or the potatoes will be bland). Repeat with a second layer of potatoes, another sprinkling of salt and pepper, then another layer of potatoes, continuing until all the potato slices have been used.
- Melt the butter in a medium saucepan over medium heat with the onion. Sauté until the onion is soft and beginning to turn translucent, about 4 minutes. Sprinkle the flour over the top, then whisk constantly until it turns a golden color and smells nutty, about 1 minute. Add the garlic and cook 30 seconds. Slowly pour in the milk a few splashes at a time, whisking constantly to smooth any clumps. As you add the milk, the mixture should begin to form a paste that becomes increasing golden. Finish adding the milk, then increase the heat to medium high. Let cook, stirring constantly, until the sauce bubbles and thickens, about 6-8 minutes. Remove the pan from the heat, then stir in the nutmeg, grated cheese, and half of the thyme. Continue whisking until the cheese melts and you have a smooth, rich sauce. Add 1/4 teaspoon kosher salt and 1/8 teaspoon black pepper. Taste and add additional salt and pepper as desired.
- Pour the sauce evenly over the potatoes, then jiggle the slow cooker gently so that the sauce seeps down to the various layers. Do not stir. Drape a triple layer of paper towels over the top of the slow cooker so that the sides of the paper towels overhang the edge, then cover the slow cooker with the lid over the top of the paper towels****. Cook for 2 1/2 to 4 hours on high, until the potatoes are tender, changing out the paper towels halfway through if they become soggy. The cooking time can vary widely depending upon your slow cooker, so adjust accordingly. Start checking at the 2 1/2 hour mark, then every 15 to 30 minutes afterward depending on how the potatoes are progressing.
- Once the potatoes are tender, uncover and sprinkle with Parmesan cheese and remaining thyme. Cook on high, uncovered, for 10 minutes to allow the cheese to melt and the top to crisp. Serve immediately or keep warm in the slow cooker for up to 1 hour.

- Start by washing, peeling, and slicing your potatoes to 1/4 inch thick. I recommend using a mandoline.
- Once potatoes are thinly sliced toss them into the Instant Pot. Add in your diced ham, parsley, garlic, onion, salt, chicken stock, and place lid on the Instant Pot.
- Make sure the valve is set to sealing and do high pressure/manual for 1 minute. Once the timer goes off do a quick release.
- Remove all your potatoes and ham and place them in your baking dish. Make sure to leave all the liquid in the Instant Pot. This will be the base of your creamy cheesy sauce.
- Now you will turn your Instant Pot to saute and add in your heavy cream and shredded Monterey jack cheese. You need to stir constantly so it doesn't burn.
- Once the cheese is fully mixed and melted, go ahead and mix up your cornstarch and tablespoon of cold water. Then pour that in and again continuously stir. This will thicken the sauce.
- When the sauce is thick, pour over the potatoes and ham. Then gently stir the mixture to cover the potatoes and ham.
- Top with 1/2 cup Monterey jack cheese and then place your mixture in a preheated oven and broil on high. Cook anywhere 3-5 minutes until it becomes golden brown on the top.
