ERIC'S PIMM'S CUP COCKTAIL

If you've never had a Pimm's Cup before, you're in for a treat. The refreshing cocktail, long a favorite in the U.K., is editor in chief Eric A. Pike's go-to summertime drink. This version of it includes both its namesake, Pimm's No. 1 (a gin-based liqueur), and Crop Cucumber vodka. The result is a citrusy, herbal flavor that isn't cloying in the least. Cheers!

Ingredients

4 ounces Crop Cucumber vodka or plain vodka
2 ounces Pimm's No. 1
1/2 cup grapefruit soda, such as Sanpellegrino Pompelmo
2 Persian-cucumber spears, for serving

Steps:

Fill each glass with ice. Divide vodka and Pimm's evenly between them and stir. Top with grapefruit soda. Serve with cucumber spears.

Ice cubes
4 lemon slices
4 cucumber slices
1 cup seltzer or lemon-lime soda
1 cup lemonade
3 cups Pimm's No. 1 Cup, available at liquor stores

Steps:

Fill 4 (8 to 10-ounce) highball glasses with ice cubes. Divide the lemon and cucumber slices among the glasses.
In a large pitcher, pour in the seltzer, lemonade and Pimm's. Stir to combine. Pour mixture into prepared glasses and enjoy!
