CLASSIC CRANBERRY SAUCE



Classic Cranberry Sauce image

Sweet, tart, homemade cranberry sauce is the key to a bright and balanced Thanksgiving meal-and it's easy to whip up in just 20 minutes.

Provided by The Gourmet Test Kitchen

Time 20m

Yield Makes about 2½ cups

Number Of Ingredients 4

1 cup water
1 cup sugar
12-oz bag fresh or frozen cranberries (3 cups)
½ teaspoon freshly grated orange zest

Steps:

  • Bring water and sugar to a boil, stirring until sugar is dissolved. Add cranberries and simmer, stirring occasionally, until berries just pop, 10 to 12 minutes. Stir in zest, then cool. Do Ahead: Cranberry sauce may be made 3 days ahead and chilled, covered. 5 Star Gourmet Sauce for Steak image

This sauce was like heaven had come to my lips. I used it on a freshly peppered steak which was an experience. This is now my favourite sauce. It is more of a gourmet sauce and is not sickly so you can serve large quantity's on a single piece of meat.

Number Of Ingredients 8

1/2 diced tomato
salt
pepper
1 tablespoon dry sherry
2/3 cup tomato sauce
1/3 cup water
2 teaspoons paprika
oil

Steps:

  • Place the oil in the bottom of a saucepan.
  • Cook the diced tomatoes in saucepan on low heat.
  • Continually stir them.
  • Add pepper and salt early on in the cooking of the tomatoes.
  • When the tomatoes are nearly cooked add the dry sherry.
  • Now leave the tomatoes for 1 minute so that all the sherry is absorbed in the tomatoes.
  • Add the tomato sauce and stir in and then add the paprika.
  • Add the water slowly so that the thickness is what you desire.
  • Serve on top of steak or as part of a fancy dish.
