MOROCCAN COUSCOUS PASTA SALAD RECIPE
Take a fresh approach to a traditional favorite using this recipe for Moroccan couscous pasta salad.

- In a small bowl, stir together all ingredients for the dressing then set aside. Place a large saucepan or skillet with a tight-fitting lid over medium-high heat. Add oil and diced onion then cook until onion is browned and well-caramelized.
- Add pearl couscous and water and bring to a boil. Reduce heat, cover and simmer for 8-9 minutes, stirring occasionally until water is absorbed and pasta is tender. Remove from heat then set aside to cool until room temperature or slightly warm.
- Transfer couscous to a large bowl and add dressing. Stir to break up couscous and coat the ingredients with dressing then add carrot, peas, bell peppers, pine nuts and parsley. Stir to combine then season to taste with salt and pepper. Serve at room temperature.

MOROCCAN COUSCOUS SALAD
For all the vegetable lovers out there, this Moroccan Couscous Salad is for you! A healthy dish loaded with roasted vegetables that will surely excite your taste buds with its range of contrasting flavors.

Steps:
- Place chicken broth, turmeric powder and olive oil in a saucepan and bring to a boil over medium-high heat. Once it starts to boil, add the raisins.
- Turn off the heat when it reaches a rolling boil. Immediately add the couscous and stir to spread. Let it sit for several minutes to absorb the liquids.
- Fluff the couscous using a fork or spoon to loosen.
- In a small bowl, whish together grated garlic, lemon juice, olive oil, ground cumin and, ground coriander. Season with salt and pepper.
- See NOTE 1 below if you want to roast using oven. Heat a large heavy skillet or pan over medium-high heat. Coat the entire bottom of the pan with a thin layer of oil.
- Once the oil is hot, add the vegetables and spread evenly. Avoid to overcrowed the pan and cook in batches if needed.
- Cook without stirring for 3-5 minutes or until some browning occurs. Stir to turn the vegetables and then do the same for the other sides. Turn off heat.
- Add the cooked couscous to the roasted vegetables and toss to mix. Pour in the dressing, chopped mint, and parsley and give it a good tossing.
- Transfer to a serving bowl and top with more parsley if desired.

- In a large nonstick skillet, saute onion, garlic, sweet bell peppers and zucchini in olive oil.
- Season with salt, pepper, nutmeg and cinnamon.
- Add 1/2 cup olive oil to vegetables along with raisins, chickpeas and orange juice.
- Toss vegetable mixture with couscous and pan juices.
- Add parsley and gently fold in citrus segments.
- Mound mixture onto a serving platter and garnish with mint.

- Bring chicken stock to a boil and stir in the couscous. Cover and remove from heat; allow to stand for 5 minutes.
- In a separate bowl, mix together the orange juice, lemon juice, Dijon mustard, thyme, onions, parsley and oranges. Fluff couscous with a fork and mix well with the other ingredients. Season with salt and pepper, if necessary.

MOROCCAN COUSCOUS ROYAL
This is one of my family's favorite dishes. It also is extremely popular in France. Great stew for a cold winter dinner party. The aromas of the spices will make your guests hungry.

- Brown the lamb cubes in oil. Remove from pan. Brown in same oil chicken drumsticks for few minutes. Remove from pan. Sauté sliced onions and garlic, add ras el-hanout spice mix and stir for 2 minutes. Add lamb, tomato paste and cover with water. Season with salt and pepper and bring to boil. Reduce the heat to low and simmer. After 60 minutes, add carrots and turnips. After 30 minutes, add chicken, meatballs and garbanzo beans and zucchinis, chopped parsley and cook for an other 30 minutes.
- Cook the couscous according to the package directions. Serve the stew with a side of couscous and onion jam (recipe follows).
- Onion Jam: Sauté 4 sliced onions on low heat for 20 minutes until caramelized, add raisins and honey. Season with salt.

MOROCCAN COUSCOUS SALAD
Steps:
- Boil the water and add it to couscous in a large serving bowl, with ½ tsp of salt.
- Cover the couscous with a tea towel or lid and leave for 5 minutes.
- Take a fork and gently loosen up the couscous and add the cumin, ginger, olive oil and paprika powder. You want it nice and dry, no big clumps.
- Wash the orange and grate the zest.
- Peel and chop the orange and add it to the salad, along with the zest.
- Deseed the pomegranate (here's a helpful video) and add the seeds.
- Dice the zucchini and bell pepper finely. Add both to the salad, along with the raisins and radish slices, if using them.
- If you managed to find a fig, chop it up and add it to the salad.
- Wash and chop the parsley and any other optional herbs, again add them to the salad - for example, if you have any spare cilantro or mint knocking around, they would be perfect. Season with salt and pepper.
- Give it a good toss ;)
- That's it! You have one fresh, delicious, Moroccan couscous salad.

- For couscous:
- Bring chicken broth, 1 tablespoon oil, ginger, garlic, 1 teaspoon salt, turmeric, cinnamon, and cumin to boil in heavy large saucepan. Stir in couscous and remove from heat. Scatter raisins over, cover, and let stand until couscous softens, about 10 minutes. Fluff couscous with fork, breaking up any lumps with fingertips. Transfer couscous to large bowl. Add cucumber, red bell pepper, carrot, green beans, and lemon peel. Whisk remaining 1 tablespoon oil, 1 teaspoon salt, and lemon juice in small bowl. Add to couscous; toss to coat. Season to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature before serving.
- For chicken:
- Place 2 1/2 tablespoons oil, lemon juice, 1/2 teaspoon salt, and 1/2 teaspoon pepper in large resealable plastic bag. Add chicken and seal bag, releasing any excess air; turn several times to coat. Let stand at room temperature 30 minutes. Alternatively, chill 1 to 3 hours and bring to room temperature before continuing.
- Prepare barbecue (high heat). Brush grill rack with oil. Transfer chicken from bag to barbecue with some marinade still clinging and grill until slightly charred and just cooked through, about 4 minutes per side. Transfer chicken to platter and let rest 10 minutes. Stir 3/4 cup chopped cilantro into couscous. Sprinkle almonds over, if desired. Drizzle chicken with oil, sprinkle remaining 1/3 cup chopped cilantro over, and garnish with lemon wedges. Serve with couscous.
