ENSALADA DE BACALAO(COD SALAD)
This is a puertorican favorite of mine.

Steps:
- 1. Put the cod in a bowl of COLD water for 3hours,and change the water every hour. Then put cod to boil in water for 10min till flakes when touched.
- 2. Drain cod and mix with onion,tomatoe,avocado,olive oil,and salt if needed.
- 3. I peel and cook the batata in water/salt till tender, but if substituting it with a sweet potatoe i cook that in a microwave after i was/scrub it.
- 4. now plate your batata and yucca and top with cod salad. YUMM!
ENSALADA DE BACALAO (SALTED COD SALAD)
One of my favorite easy make ahead meals. Served chilled or room temperature it's the perfect recipe for the summer.

Steps:
- Soak salted cod in cool water for 15 - 30 minutes. Drain and transfer cod to a pot. Cover with water and bring to a simmer on the stovetop. Change the water and bring it to a simmer 3 - 4 more times or until cod reaches desired saltiness. Drain, using a fork break up the cod and set aside.
- Saute onion in a skillet with 2 tablespoons of olive oil until soft and translucent.
- In a large bowl combine cod with onions and remaining ingredients. Toss until well combined. If the salad is too dry to your liking add more olive oil.
- Serve with rice or boiled yucca root drizzled with olive oil.

ENSALADA DE BACALAO (CODFISH SALAD) RECIPE - (3.4/5)

Steps:
- Arrange cooked bananas, avocados, eggs in a large platter. In a saucepan, warm olive oil. Add onion, garlic, bay leaf, and 1 sprig parsley. Cook on low for about 3-5 minutes. Add vinegar. Remove from heat. Mix in bacalao. Place bacalao mix in center of platter surrounded with bananas, avocado and eggs. Sprinkle with red peppers and 2 sprigs Chinese parsley, chopped. Serve.
ENSALADA DE BACALAO (SALTED COD SALAD)
Steps:
- First rinse the salt off the cod. If you have the time you can also let it soak for about 30 minutes. I usually don't have the time so I just give it a good rinse. Bring a large pot of water to a boil, drop your cod in let it boil for about 10 mins and then change the water. Repeat this step 3 times, changing the water each time. During the last boil add your eggs. boil for about 7 minutes, transfer to a bowl with some of the hot water and let it sit about another 5 minutes or until ready to peel and dice. Sweat onions into a hot skillet with 2 Tbs of olive oil. Cook the onion until they just begin to get opaque, do not cook them through, you want to maintain a bit of a crunch. Drain cod fish. Combine, onions, cod fish, tomatoes, olives, eggs and avocado in a large bowl. Drizzle with 3 Tbs of olive oil and toss, breaking up cod fish. Served over a bed of white rice. Keep the olive oil handy in case you want an extra drizzle.
