Steps:
- Gently warm the milk in a pan till lukewarm or body temperature, 37ºC. Add the yeast and sugar and stir until the sugar is dissolved. Set aside for a few minutes until the mixture is creamy and starting to froth.
- Melt the shortening or lard, then in a large bowl, mix the yeast mixture, flour, shortening or lard and a pinch of sea salt into a soft dough. Add a little extra milk or flour, if needed.
- Knead until smooth and elastic. Transfer to a greased bowl, cover with clingfilm and set aside in a warm place to rise for 1 hour, or until doubled in size.
- Knock back the dough and roll out on a lightly floured surface to about 2cm thick. Using a round cutter or thin drinking glass, cut out circles of 5 to 8cm.
- Lightly sprinkle a piece of baking parchment with extra flour, or polenta (if using). Transfer the muffins to the paper and sprinkle over a little more flour or polenta. Cover with a tea towel and leave in a warm place for 45 minutes to 1 hour to rise.
- When ready to cook, preheat the oven to 170ºC/gas 3 and heat a heavy non-stick pan over a medium heat.
- Brown the muffins in the pan, in batches, for a few minutes each side, then turn the heat to low and cook for 10 minutes. Transfer to a baking tray and finish with 5 minutes in the oven, or until cooked through.
- Cool slightly on a wire rack then split open and spread with melted butter, or keep in an airtight tin, to split and toast as needed.

Steps:
- In a medium bowl, add the flour, yeast, and salt. Mix briefly.
- In a separate jug, add the milk, water, and butter. Pop it into the microwave for 15-30 seconds or until it's lukewarm and the butter has melted. Take care not to let it get too hot.
- Add the wet ingredients to the dry and mix until you form a dough. The dough will be quite soft and a little sticky. (NOTE: See the video about holding back liquid until you get the right consistency of dough).
- Once the dough has come together, just scrape down the sides of the bowl and cover tightly with cling wrap and a clean kitchen towel. Now let it sit at room temperature for a minimum of 12-18 hours. (If you want to cook off your muffins at a later time then pop the dough in the fridge after 18 hours)
- The next morning, the dough will have doubled in size. Turn it out onto a floured surface. Cover with cling wrap and a kitchen towel and let rest for just 10 minutes.
- After resting, the gluten will have relaxed. You can now roll it out to about 2 cm or slightly under an inch in thickness. (In the video I said roll to 1 cm however I found this to be very thin later)
- Using a 3-inch cookie cutter dusted in flour, cut out rounds and transfer them to another baking tray lined with parchment. Any scraps can you re-rolled and made into another muffin. Note: At this point, you can place the muffins in the fridge to be cooked off later.
- Cover the muffins with plastic wrap and a tea towel and let them rest for about 40-45 minutes. After 45 minutes, the dough circles will have puffed up a little. Proceed to cook!
ENGLISH MUFFINS
I've used this delicious recipe for about 29 years. They are very good... much better than any store-bought English Muffins I've ever had.

Steps:
- Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in the sugar, stirring until dissolved. Let cool until lukewarm. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, combine the milk, yeast mixture, shortening and 3 cups flour. Beat until smooth. Add salt and rest of flour, or enough to make a soft dough. Knead. Place in greased bowl, cover, and let rise.
- Punch down. Roll out to about 1/2 inch thick. Cut rounds with biscuit cutter, drinking glass, or empty tuna can. Sprinkle waxed paper with cornmeal and set the rounds on this to rise. Dust tops of muffins with cornmeal also. Cover and let rise 1/2 hour.
- Heat greased griddle. Cook muffins on griddle about 10 minutes on each side on medium heat. Keep baked muffins in a warm oven until all have been cooked. Allow to cool and place in plastic bags for storage. To use, split and toast. Great with orange butter, or cream cheese and jam.

TRADITIONAL ENGLISH CRUMPETS
Steps:
- Gather the ingredients.
- Warm the milk in a saucepan. Make sure that it is warm but not boiling. Otherwise, it will kill the yeast.
- Skim any film off of the top.
- Whisk together the warmed milk, flour , sugar, and yeast in a large bowl.
- Once combined, add half the water and beat into the batter.
- Continue to add more water until the batter is thick and smooth. Stop adding water once it reaches the consistency of thick cream.
- Cover with plastic wrap and leave in a warm, draft-free place until doubled in size and foaming. This should take about 1 hour but can take up to 2 hours (keep an eye on it).
- Whisk the salt and baking powder into the batter.
- Heat a large heavy-duty non-stick skillet over medium to medium-high heat until hot but not smoking.
- Moisten a paper towel with a little oil (alternatively, use cooking spray) and carefully grease the base of the pan and crumpet (or pastry) rings measuring approximately 3 inches wide by 1/2 inch tall.
- Place 1 ring on the heated pan and pour in enough batter to fill just below the top of the ring, about 1/4 cup.
- Cook for 5 minutes, until there are many tiny holes on the surface and the crumpet is setting around the edges.
- Flip the crumpet over (in the ring) and cook until the crumpet is light brown and cooked through, about 3 minutes more.
- Adjust the temperature as needed. Repeat with the remaining batter, greasing the pan in between each batch.
- Rest the crumpets on a wire rack until cool.
- To reheat, place crumpets in a toaster or directly on the center rack in a 350 F oven for about 5 minutes before serving.
- Serve with lots of butter and jam .

Steps:
- Warm the milk until it reaches between 120 F -130 F but not past 140 F or the yeast will begin to die off.
- Add the warmed milk, yeast, butter, egg, salt, sugar, and flour to the bowl of a stand mixer fitted with a paddle attachment.
- Beat the dough on low speed until it comes together in a ball and pulls away from the sides of the bowl.
- Scrape the sides of the bowl and tidy the dough into a ball. Cover the bowl with plastic wrap or beeswax wrap and place in a draught free area.*
- Allow the dough to rise until it has almost doubled in size (roughly an hour). Remove from the bowl and separate into eight equal portions.
- Sprinkle cornmeal onto a plate.
- Using your hands, roll each dough portion into a ball, then flatten it on the cornmeal crusted plate. Push it down until it is the shape of an English muffin and ensure each side has a cornmeal crust.
- Next, lightly grease an electric griddle or griddle pan and heat it on low. Cook the muffins on the lowest setting for 7-15 minutes. Remember, you want a nice golden exterior and a fluffy fully cooked interior*
- Allow to cool before serving.

Steps:
- Measure the bread flour into the bowl. Add in all the other ingredients apart from the semolina which is for dusting the muffins before they're cooked.
- Mix this together until it forms a soft dough. Tip this out onto the work surface and begin to knead it.
- Knead the dough for between 5 - 10 minutes until it forms a smooth and stretchy dough.
- Grease a clean bowl with olive oil and pop the kneaded dough into it to rise. Cover with a clean tea-towel and put it somewhere that's not in direct sunlight or cool draughts.
- Leave to double in size, this should take about an hour.
- Sprinkle half of the semolina out onto a baking tray. Divide the dough into 8 roughly equal sized pieces and shape them into balls. Place them on the baking tray and cover with a tea towel and leave to rise for about 30 minutes.
- At the end of that time, dust the tops of the balls with the remaining semolina and warm your non-stick frying pan on a medium to low heat. Add some butter to the pan until is sizzles.
- Place a ball of dough into the pan and let it cook for about 5 minutes. If your pan is large enough you can fit in more pieces of dough.
- At the end of this time, turn the muffins over, they should be golden brown coloured, and cook the other side for a further 5 minutes.
- Pre-heat the oven to 160C Fan/180C/350F
- When all the muffins have been cooked in the frying pan place them on a baking tray. Pop this into the oven and cook for a further 5 minutes. This ensures that the muffins are cooked through.
- Place them on a cooling rack and leave for about an hour before trying one.
- Your English muffins are now ready. Now search out the butter and try one!

- Combine all of the ingredients (except the semolina or farina) in a mixing bowl, or the bucket of your bread machine., This is a very soft dough, so you'll need to treat it a bit differently than most yeast doughs.
- If you have a stand mixer, beat the dough using the flat beater paddle until it starts coming away from the sides of the bowl, and is satin-smooth and shiny; this will take about 5 minutes at medium-high speed.

- Preheat oven to 425 degrees F and grease muffin tins with butter or muffin liners with cooking spray.
- In a medium sized pan over medium heat, melt the butter with the tea bag and vanilla bean over medium heat. Swirl occasionally to ensure butter is cooking evenly and the flavors of the tea and vanilla are infused. As the butter melts, it will begin to foam and the color will get darker. Continually scrape bottom of pan to release any brown specs. Once you start smelling the nutty aroma, remove browned butter from heat and allow to cool.
- In a separate bowl, whisk eggs, buttermilk, vanilla, and mostly cooled browned butter together. Make a well in the dry ingredients and pour in the liquid ingredients. Fold together and do not over mix.

- In a jug measure out the milk and water, and place in the microwave for 40 or so seconds. It needs to be warm to touch and NOT hot. Then add the sugar and dried yeast and leave it in a warm place for 10-15 minutes till there is a good frothy head on it. (see photo)
- Sift the flour and salt into a large mixing bowl, make a well in the centre then pour the yeast mixture in then mix until a soft dough forms. To tell if it is mixed enough, the dough should not stick to the sides of the bowl. If it's still a bit sticky add a bit more flour, or if it's a little dry, add a drop more water.
- Once you have a soft dough, knead for 10 minutes by hand or using a stand mixer on medium speed until it is very smooth and elastic. Cover and leave in a warm place until the dough has doubled in size. This will take about 45 minutes.
- When the dough has risen, lightly flour your work surface, then place the dough out and roll it out to about ½ inch (1 cm) thick. *** do not start kneading the dough, just place on the table and roll!
