TEA COOKIES I
This recipe makes 30 to 35 cookies. They are delicious, can't eat just one.

Steps:
- Beat together the butter and confectioners' sugar till creamy. Add vanilla.
- Mix the dry ingredients, stir into creamy mixture. Blend well.
- Add the nuts, mix well, roll the dough out into two balls. Wrap in plastic wrap and chill for at least 1 hour in the refrigerator.
- Flatten dough out and cut into 15 or 20 equal size pieces, shape into balls. Place on ungreased cookie sheet.
- Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes till firm but not brown. While still warm roll into confectioners' sugar, let cool and roll again.

Steps:
- Gather the ingredients and preheat the oven to 350 F.
- Line a cookie sheet with parchment paper or a silicone baking mat, or grease lightly.
- Combine the sugar and butter in a mixer bowl, beating until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In another bowl, combine the flour, baking soda, cream of tartar, and salt.
- Add the dry ingredients to creamed mixture and mix well.
- Shape the cookie dough into small balls and arrange on the prepared cookie sheet.
- Press flat with the bottom of a glass. Optional: Dip the glass in sugar before flattening each cookie and use a small square of parchment paper so the glass won't stick to the dough.
- Bake for 10 minutes.
- Serve and enjoy.

Combine the flour, baking soda, salt and nutmeg; stir into the creamed mixture. Knead dough for a few turnns on a floured board until smooth. Cover and refrigerate until firm.
- Preheat the oven to 325 degrees F (165 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- Sift together the flour, baking powder and salt, set aside. In a medium bowl, cream shortening, butter and sugar until smooth. Stir in the egg and milk. Add dry ingredients, stir until combined, then stir in the citron and raisins. Cover and refrigerate dough until easy to handle, about 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- Place remaining 2 tablespoons of sugar into a shallow bowl or saucer. Roll dough into walnut sized balls, dip tops in the egg white, and then in the sugar. My great-great-great grandmother, Frances Howard Ezell (b.1828) and her children and grandchildren made tea cakes together each year at Christmas time. They would make bunches and bunches, put them in a pillow case and hang them up in the kitchen for Christmas treats. In memory of my grandmother, Ruby Campbell Parnell.

- 1. Cream butter and sugar together. Add eggs, one at a time and stir after each one.
- 2. Dissolve baking soda in sour milk and add this to the mixture.
- 3. Add enough flour to make dough stiff enough to dump on floured board. Knead in more flour until you can roll the dough out and cut out tea cakes. Bake and cool.

- 1. Preheat oven to 400* degrees.
- 2. Mix together thoroughly first 4 ingredients.
- 3. In another bowl sift together the next 3 ingredients. Then stir this into your first mixture.
- 4. Now mix in the last 2 ingredients. This will now form a nice dough.
- 5. Chill dough. Now you are ready to roll into balls the size of walnuts. Dip tops in slightly beaten egg white, then sugar.
- 6. Place sugared side up 2" apart on ungreased baking sheet. Bake until delicately browned. The balls flatten some in baking and become glazed. They should bake in 12 to 15 minutes. Makes about 3 dozen 1 1/2" cookies.
