ENGLISH PEA POTATO SALAD WITH OPTIONAL BACON



English Pea Potato Salad with Optional Bacon image

This simple potato salad boasts sweet emerald peas, creamy cheddar cubes, zingy red onions, and tender baby red potatoes tossed with light, lemony mayo sauce. Serve with crisp bacon bits for optional topping (or just stir bacon into half for the meat-eaters). Don't forget to set the peas out to thaw a couple of hours before starting!

1 1/2 to 2 pounds baby red potatoes (scrubbed and unpeeled)
1 1/2 cups frozen peas (thawed and drained if necessary)
1 cup cubed medium or sharp cheddar cheese (1/2-inch cube (4 ounces))
1/4 cup finely chopped red onion
1/3 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon kosher salt
Freshly ground black pepper
Additional salt and black pepper to taste
6 slices thick-cut bacon (diced, cooked until crisp, and drained)

Steps:

  • Bring a large pot of water to a boil. Add the potatoes and return to a boil. Cook until potatoes are fork-tender, about 15 minutes. Drain and return potatoes to pan, filling with cold water and ice to cool the potatoes. Let sit for a minute or two and then drain. Allow potatoes to cool to room temperature.
  • Place cooled potatoes in a large bowl and add peas, cheese, red onion, and bacon if you're making a full-on meaty version.
  • In a small bowl, whisk together the mayonnaise, lemon juice, kosher salt, and freshly ground black pepper. Pour over the veggies and gently toss until all ingredients are coated. Taste and add additional salt and pepper if desired.
  • If adding bacon to half, remove half of the salad to its own bowl and stir the bacon into half. Or, a little easier, just serve the bacon alongside for optional topping.

Herbed Potato Salad With Bacon and Peas image

A little different from your usual potato salad. There is no mayo in this one! If you don't want to use as many peas, it can easily be halved.

1/4 cup minced shallot
2 tablespoons fresh dill, snipped
1 tablespoon fresh tarragon, minced
3 tablespoons fresh parsley, chopped
2 garlic cloves, minced
3 tablespoons Dijon mustard
5 tablespoons white wine vinegar
3/4 cup olive oil
salt & freshly ground black pepper
3 lbs small red potatoes
4 cups fresh peas or 4 cups frozen peas
8 ounces sliced bacon, cooked until crisp and crumbled

Steps:

  • In a small bowl, whisk all dressing ingredients together until well blended. Set aside.
  • Cook potatoes in boiling salted water for about 12 minutes. Drain, let cool to touch, and cut into quarters.
  • Cook fresh peas in salted boiling water for 6 minutes, frozen peas for 3 minutes. Drain under cold water and let cool.
  • In a large bowl, toss still-warm potatoes with about half of dressing and let cool. Combine with peas and bacon and add remaining dressing. Taste and adjust seasoning.

1kg new potatoes , scrubbed
200g lardon , or chopped bacon
bunch chives , snipped
1 tbsp walnut oil or hazelnut oil
2 tbsp sunflower oil , groundnut oil or corn oil
3 tbsp Dijon mustard
5 tsp white wine vinegar
200ml single cream

Steps:

  • For the dressing put the oils, mustard and vinegar into a bowl with ¼ tsp each salt and pepper and whisk hard for 3 mins. Add cream and stir in. Keep at room temperature until ready to serve.
  • Boil potatoes for 12-15 mins until tender, drain, then when cool enough to handle, halve. Meanwhile, fry lardons with lots of black pepper until golden. Mix together the potatoes, lardons and chives. Pour over the dressing and mix again.

  • Cook the lentils according to the package instructions until al dente, adding a big pinch of salt to the pot as they cook—they should be tender but not mushy and have a pleasant chew. Drain and place in a large mixing bowl.
  • In a large skillet over medium-low heat, cook the bacon until it is crisp and the fat has cooked off, about 8 minutes. With a slotted spoon, remove the bacon to a paper-towel-lined plate and lightly pat dry. Leave the bacon drippings in the skillet.
  • Add the potatoes, increase the heat to medium, and sprinkle with salt and pepper. Stir to coat the potatoes in the vinegar, mustard, and drippings, then scrape all of the skillet contents into the bowl with the lentils. Add the peas.
  • Stir to combine, then give the salad a taste. Add salt and pepper and/or a splash of vinegar (for more tanginess) as desired. (I added a bit of all three.) Add the chives. Enjoy immediately or refrigerate for up to 1 day. Serve at room temperature.
