Steak and Potato Pie image

An English-style pub pie, made with red wine to make the beef very tender. You can use the recipe for two pies (make two batches of pastry) or make one pie and use the remainder for stew.

2 ¾ cups all-purpose flour
1 teaspoon kosher salt
1 cup lard, chilled and cut into small pieces
½ cup ice water, or as needed
2 ½ tablespoons all-purpose flour
½ teaspoon dried thyme leaves
½ teaspoon paprika
⅛ teaspoon ground black pepper
⅛ teaspoon ground ginger
⅛ teaspoon ground allspice
1 ½ pounds boneless beef round steak, cut into 1-inch pieces
⅓ cup olive oil
2 cups chopped sweet onion
1 cup beef broth
¾ cup dry red wine
1 cup peeled and diced potatoes
1 cup sliced carrots
½ teaspoon dried thyme leaves

Steps:

  • Combine 2 3/4 cups flour and 1 teaspoon kosher salt in a large bowl. Cut lard into the flour mixture until it resembles coarse bread crumbs. Add ice water a tablespoon at a time, tossing to mix. Gather the dough into a ball, divide it in half, and wrap each piece in plastic wrap. Refrigerate the dough while you prepare the filling.
  • Mix together 2 1/2 tablespoons flour, 1/2 teaspoon dried thyme, paprika, pepper, ginger, and allspice in a bowl. Dredge the steak pieces in the seasoned flour and set aside.
  • Heat olive oil in a skillet over medium-high heat. Stir in beef cubes and onion; cook and stir until the onion has softened and turned translucent and the beef is browned on all sides, about 10 minutes. Pour in beef broth and red wine and simmer until sauce thickens, about 20 minutes.
  • Roll out one pastry crust on a lightly floured surface to fit a 10-inch pie plate. Place the crust in the pie plate, cover it loosely with plastic, and refrigerate. Roll out the top crust for the pie and set it aside.
  • Stir the potatoes and carrots into the beef mixture and simmer until tender, about 20 minutes. Remove the pan from the heat and allow it to cool slightly.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Transfer the beef mixture to the pastry-lined pie plate. Sprinkle with an additional 1/2 teaspoon of thyme, if desired; cover the pie with the top crust and crimp edges to seal. Cut vents in the crust or prick with a fork to allow steam to escape.
  • Bake in the preheated oven until the crust is golden and the filling is bubbly, about 30 minutes.

These are great to freeze. I sometimes break with tradition and use chicken but do make these around 3 times a year for ready made dinners.

1 large onion
2 teaspoons butter
1 garlic clove
1/4 cup brandy
2 lbs boneless lean pork butt
2 eggs
1/4 cup finely chopped parsley
1 1/2 teaspoons salt
1/2 teaspoon thyme
1/4 teaspoon ground allspice
1/8 teaspoon white pepper
1 teaspoon water
1 egg, beaten with the water
4 cups flour
1 teaspoon salt
1/2 cup butter
1/2 cup lard
1 egg

Steps:

  • Also need 10 straight sided, deep individual foil pans.
  • Preheat oven to 375°F.
  • In a skillet cook onion in the butter until browned.
  • Mix in garlic and brandy and continue cooking until most of the liquid has cooked away.
  • Using the fine blade of a food processor grind pork well-you should end up with 4 cups.
  • Add the onion mixture along with the eggs, parsley, salt, thyme, allspice and pepper; combine well.
  • Pastry: In a large bowl combine flour and salt.
  • Cut in butter and lard, continuing until mixture is crumbly and forms coarse crumbs.
  • Beat egg in a measuring cup, mix in cold water to make 2/3 cup.
  • Add egg mixture to flour mixture 2 tbsp at a time and mix with a fork.
  • Using your hands form into 2 balls, 1 large and 1 small (2 to 1 ratio) On a floured board roll out the larger ball of pastry to around 1/8 inch thick.
  • Cut into 5 inch circles and press them into the foil baking pans-the pans should be around 3 inches in diameter and 1 1/2 inches deep-Divide pork into the 10 lined pans.
  • Roll out remaining pastry and cut it into 3&1/2 inch circles, making a small hole in the center of each for venting.
  • Cover pork filling with top crusts, moistening edges and pressing them to seal.
  • Brush top with egg.
  • Place on a foil lined baking sheet and bake until well browned-around 1 1/2 hours.
  • Let stand for 5 minutes before serving or cool completely and freeze.

4 English muffins
8 slices Canadian bacon, about 4 ounces
1 large onion, peeled and sliced thin
1 tablespoon butter
3 tart cooking apples, like Granny Smith, 1/4 inch slices (leave peel on)
2 teaspoons granulated sugar
1 cup half-and-half
1 tablespoon brown sugar
1 tablespoon Dijon mustard

Steps:

  • Turn oven to lowest setting.
  • Split and toast muffins.
  • Spray nonstick skillet with cooking spray and set over high heat. Fry bacon just until it begins to brown, about 1 minute on each side.
  • Remove bacon from skillet and drain.
  • Arrange toasted muffin halves on baking sheet or heat-proof serving platter and place a bacon slice on each half. Place in oven to keep warm.
  • Wipe out skillet and place on low heat. Add butter to melt.
  • Add onion slices and saute 3 minutes.
  • Add apple slices to skillet. Sprinkle with granulated sugar and raise heat to med-high. Cook until apples and onions are tender, about 5 minutes.
  • Scatter apples and onions evenly over the bacon-topped muffins. Return to oven to keep warm.
  • Whisk together half-and-half, brown sugar and mustard.
  • Pour this into same skillet and bring almost to a boil over medium heat, whisking constantly. Cook for 1 minute more, but don't let boil.
  • Transfer 2 muffin halves to each individual serving plate, topping with plenty of apples and onions. Top with sauce and serve immediately.

For the pastry:
3 cups (450 grams) plain/all-purpose flour
1/2 teaspoon salt
2 sticks/1 cup (226 grams) unsalted butter, cubed and kept cold until ready to use
1/2 cup (118 ml) cold water
1 large egg beaten to brush on pastry
For the filling:
1 tablespoon vegetable oil
1 tablespoon unsalted butter
2 pounds (907 grams) beef chuck, cut into bite size cubes
1 medium onion, chopped
2 large carrots, peeled and cut into bite-size chunks
2 garlic cloves, peeled and finely chopped
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 tablespoons all-purpose flour
3/4 cup (177 ml) dark English ale
1/2 cup (118 ml) beef stock (low sodium if possible) * see note
1/2 teaspoon fresh thyme, finely chopped
1/2 teaspoon fresh rosemary, finely chopped
1 teaspoon salt
1/4 teaspoon ground black pepper
1 large egg, beaten
1 bag dried beans

Steps:

  • To make the pastry in a food processor: Add the flour and salt and butter. Pulse until you get the texture of fine breadcrumbs. With the processor running, slowly drizzle in cold water until it forms a ball. You may need more or less water depending on the dough.
  • To make the pastry by hand: Add the flour, salt and butter to a large bowl. Using your fingertips (or a pastry cutter) rub the butter and flour until it resembles breadcrumbs. Drizzle in the water and mix using a fork until the it starts to come together and holds together when pressed in your hand.. You may not need all of the water.
  • Remove and shape into a ball on a floured board. Wrap in plastic wrap and refrigerate.
  • For the filling:
  • Add the vegetable oil and butter to a large, heavy, ovenproof saucepan or braising pan over medium high heat. Add the beef and cook, turning the pieces until brown on all sides. Remove and set aside.
  • To the same pan, add the onion and carrots and cook until the onions soften, about 5 minutes. Add garlic, tomato paste and Worcestershire sauce. Stir to mix well and cook for 1 minute.
  • Sprinkle in the flour and stir well until all the flour is well mixed. Cook for 2 minutes, then add the ale and stir until it starts to thicken. Stir in the beef, beef stock, thyme, rosemary, salt and pepper.
  • Cover with a lid and allow to come to a low simmer for 35-45 minutes. Remove the lid and simmer for 15 more minutes to thicken the liquid. You do not want the liquid too runny, it should be thick. The meat should be quite tender, but will also continue cooking in the oven.
  • Preheat oven to 425°F/220°C with rack in the center of the oven. Lightly butter a 9 or 10-inch (23 or 25.5 cm) pie dish.
  • Remove the dough from the refrigerator and cut in half. Wrap one half back in the plastic wrap and refrigerate.
  • Roll out the other half onto a floured surface to a thickness of 1/8 of an inch. Cut a circle from the dough 1/2 inch larger than your pan and place into the pie dish allowing the edge to hang over.
  • Cut a large circle of parchment paper or foil larger than the pan or and place on top of the pastry in the pie dish. Pour the dried beans to the center to weigh down the dough. Or, place a piece of foil on top of the dough and weigh down with an oven-proof dish that will fit inside. Bake for 12 minutes until you start to see the edges get a little golden brown.
  • Remove the crust from the oven, grab the corners of the paper or foil and remove the beans. Make holes in the bottom of the pastry with a fork to prevent it puffing. If it puffs, it should go down. Return the crust to the oven for 5 more minutes to cook the bottom of the pastry.
  • Once the crust is out of the oven take the rest of the dough and roll out onto a floured surface and cut a 10-inch circle.
  • Fill the cooked crust with the beef filling.
  • Brush the edges of the cooked pastry with the egg. Roll the pastry circle over your rolling pin, lift and place on top of the pie with the egg washed edges down so they stick to the other dough, pinch the edges or press with a fork.
  • Brush with the entire top with egg wash and cut a couple of slits in the center of the crust. Bake for 15 minutes until golden brown. The time will vary depending on your oven.

2 pounds potatoes, peeled and diced
2 cups milk
1 bay leaf
½ teaspoon ground nutmeg
1 (1 pound) fillet cod
½ cup butter, divided
1 medium leek, white part only, chopped
¼ cup all-purpose flour
4 ounces grated sharp Cheddar cheese, divided
1 cup peas
salt and ground black pepper to taste
2 hard-boiled eggs, quartered

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool.
  • Combine milk, bay leaf, and nutmeg in a large pan and bring to a gentle simmer over medium-low heat. Add cod and poach until flaky, about 5 minutes. Use a slotted spoon to transfer cod onto a plate; reserve poaching liquid. Use a fork to flake fish into bite-sized pieces.
  • Mash potatoes in a large bowl. Mix in 3 tablespoons butter and 2 tablespoons poaching liquid until potatoes are fairly stiff and not too runny.
  • Heat 1 tablespoon butter in a skillet over medium heat and stir in leek. Cook and stir until softened and translucent, about 5 minutes. Set aside.
  • Melt remaining 1/4 cup butter over medium heat in a large, deep skillet until it just stops bubbling. Add flour and stir roux continuously for 1 minute. Slowly pour in remaining poaching liquid, stirring continuously, to make base of sauce. Add 1/2 the sharp Cheddar cheese and stir until melted. Fold in flaked cod, leek, and peas. Season with salt and pepper.
  • Place fish mixture in an oven-proof dish; press boiled eggs gently into the filling across the surface. Cover with a thick layer of mashed potatoes. Sprinkle with remaining Cheddar cheese.
  • Bake in the preheated oven until top is starting to brown, about 30 minutes. Serve immediately.
