This pretty English Garden Cocktail of cucumber gin, apple juice and mint is a one-unit cocktail, a perfect light tipple for pre-dinner drinks.

Ingredients

25 ml Gordon's Crisp Cucumber Gin (or gin of your choice)
50 ml Apple Juice
20 ml Lime Juice
20 ml Sugar Syrup
1 leaf mint
1 slice cucumber

Steps:

Fill a shaker with ice.
Add Gordon's Crisp Cucumber, apple juice, lime juice and sugar syrup to the shaker.
Shake until cold.
Strain into a martini glass.
Garnish with a slice of cucumber and a mint leaf.

50ml gin
25ml St Germain elderflower liqueur
75ml apple juice, not from concentrate
10ml lime juice
cucumber ribbons, to serve

Steps:

Shake all the ingredients except the cucumber with ice and strain into a tall glass with filled with fresh ice.
Decorate with cucumber ribbons to serve.

Ingredients

5 mint leaves, bruised
30ml gin
2 tsp elderflower cordial (use more or less, depending on how sweet you like it)
2 tsp lemon juice
large handful of ice
cloudy apple juice, for topping up
1 long strip of cucumber, peeled using a vegetable peeler

Steps:

Mix the mint leaves, gin, elderflower cordial and lemon juice together in the bottom of a tall glass using a long-handled spoon.
Add a large handful of ice, then top up with the apple juice. Stir well, then drop in the strip of cucumber before serving.

Put the mint leaves (keep a few of the prettiest leaves to serve) and cucumber in the bottom of a cocktail shaker, large lidded jar or a jug and muddle together with a cocktail muddler, the end of a rolling pin, or even a wooden spoon.
Add the gin, lemon juice, apple juice, honey and ice cubes and shake or mix vigorously to ensure the honey is well distributed. Pour into 4 glasses and top up with sparkling wine.

Put the cucumber, lemon juice, thyme and cordial in your shaker and muddle with a muddler or the clean end of a rolling pin. Try to get the juice out of the cucumber. Alternatively you can grate the cucumber on the large holes of a box grater and use your hands to squeeze the juice into your shaker.
Shake vigorously until a frost forms on the shaker then strain into two chilled martini glasses (or use small elegant flutes as in the pictures).
