BASIC COOKIES

Basic cookies image

Bake a batch of these easy cookies with just five ingredients - or fewer. A perfect partner to a cup of tea, you can whip them up in no time

Provided by bendickson

Categories     Afternoon tea, Treat

Time 32m

Yield Makes 25

Number Of Ingredients 5

225g butter, softened
110g caster sugar
275g plain flour
1 tsp cinnamon or other spices (optional)
75g white or milk chocolate chips (optional)

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Cream the butter in a large bowl with a wooden spoon or in a stand mixer until it is soft. Add the sugar and keep beating until the mixture is light and fluffy. Sift in the flour and add the optional ingredients, if you're using them. Bring the mixture together with your hands in a figure-of-eight motion until it forms a dough. You can freeze the dough at this point.
  • Roll the dough into walnut-sized balls and place them slightly apart from each other on a baking sheet (you don't need to butter or line it). Flatten the balls a little with the palm of your hand and bake them in the oven for around 10-12 mins until they are golden brown and slightly firm on top. Leave the cookies on a cooling rack for around 15 mins before serving.

  • Peanut Butter Cookies. With their delicious blend of salty and sweet flavors, peanut butter cookies always hit the spot. Use a fork to create that traditional crosshatch pattern on the top, which gives them a little extra texture once they bake.
  • Sugar Cookie Recipe. Make these light and sweet sugar cookies as a base for decorated treats, or eat them all on their own. For tender cookies, don't work the dough too much.
  • Chocolate Chip Cookies. These basic chocolate chip cookies use the drop method, for a quick and easy cookie. This recipe uses semi-sweet chocolate chips and brown sugar for that old-fashioned, TollHouse flavor.
  • Homemade Nilla Wafers. No need to head to the grocery store if you make the vanilla-scented Nilla Wafers at home. Kids and adults love snacking on light and crispy Nilla Wafers.
  • Oatmeal Raisin Cookies. Oatmeal-raisin cookies taste just like grandma's house. This traditional recipe comes out chewy, sweet, and studded with lots of raisins, just like they should.
  • Snickerdoodles. The perfect snickerdoodle cookie comes out slightly soft and chewy with a generous dusting of cinnamon sugar on top. This recipe has plenty of cinnamon to fill your kitchen with that delectable aroma, and makes lots of cookies for an exchange, bake sale, or to give as gifts.
  • Molasses Cookies. With cinnamon, cloves, and ginger, these molasses cookies have an assertively spiced flavor. The dough does need to chill overnight before rolling, cutting, and baking, so plan ahead.
  • White Chocolate Macadamia Nut Cookies. Mild white chocolate and rich macadamia nuts give these classic cookies a sweet and salty taste that will have you coming back for "just one more."
  • Jam-Filled Thumbprint Cookies. Thumbprint cookies often show up on holiday dessert trays, but they taste great any time. Fill them with your favorite jam flavor, or grab a few different kinds for a fun variety.
  • Meltaway Butter Cookies. These meltaway butter cookies come out rich and creamy, with almond and vanilla extract adding extra dimension. Sprinkling a little extra sugar on top gives them more texture.

  • Preheat your oven to 350°F. Lightly grease a couple of baking sheets, or line them with parchment.
  • Measure the flour and baking powder into a mixing bowl. With a pastry blender, two knives, or your fingertips, rub the butter into the flour mixture. Toss in the sugar and enough milk to make a stiff dough.
  • Roll the dough out to a bit more than 1/8" thick, and cut into any desired shape. Traditionally, these "biscuits" are round and about 2 1/2" in diameter.
  • Place the cutout cookies on the prepared baking sheets. Prick them all over with a fork, and bake until pale gold, between 15 and 20 minutes.
  • Remove the cookies from the oven, and cool right on the pan. Store airtight at room temperature for up to a week; freeze for longer storage.
