Steps:
- Put the cheese, tomatoes, chilli and coriander leaves into a bowl with some seasoning, then mix well.
- Warm tortillas in the microwave according to pack instructions - this makes them more bendable. Divide the cheese mix over one half of each tortilla. Fold over the other half to make 8 half-moons, then press down to seal.
- Brush the tops with a little oil, then sit, oil-side down, on a hot area of the barbecue. Cook for a couple of mins until crisp and golden, brush the uncooked side with oil, then flip over for another few mins. Slice into wedges, then pile onto a platter while you cook the rest.

Steps:
- 1. Cut English muffins in half. Set aside.
- 2. In large bowl, mix together olives, cheese, onions, mayonnaise, and salt.
- 3. Spread mixture evenly over 12 muffin halves. Place on baking sheet.
- 4. Broil 3 - 4 minutes, or until cheese is bubbly and melted.
- 5. Cut in half before serving.
- 6. ***Leftovers can be used as the base for an egg sandwich for breakfast -- simply fry up egg using the English muffin egg form and cutting as needed.
TUNA MELTS ON ENGLISH MUFFINS
Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Melt butter in a small frying pan over low heat. Add onion and garlic and saute over low heat until soft and translucent, 5 to 7 minutes. Stir in seafood seasoning, cilantro, onion powder, salt, and pepper. Remove from heat.
- Combine tuna and mayonnaise in a bowl. Add the sauteed mixture from the frying pan and blend well with a fork.
- Place all 6 halved English muffins on a cookie sheet. Spoon on tuna mixture, dividing it evenly between each muffin. Top each with a slice of tomato; add a slice of American cheese.
- Bake in the preheated oven until cheese is melted, about 5 minutes.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a medium-size mixing bowl, combine olives, green onions, Cheddar cheese, curry powder, mayonnaise, and salt.
- Mix well.
- Spread mixture on English muffins.
- Cut the English muffins into fourths.
- Note: If you want to freeze these, now is the time!
- Arrange the muffin pieces on a cookie sheet.
- Bake at 400 degrees F (200 degrees C) for 10 minutes.
