Endive Tomato and Cucumber Salad

1 teaspoon dijon mustard
1/2 teaspoon salt
2 tablespoons rice wine vinegar
2 tablespoons olive oil
pepper
2 heads endive - roughly chopped
1 small cucumber - roughly chopped
1 pint cherry tomatoes - halved
pine nuts

Steps:

  • Into a small bowl whisk: mustard, salt, vinegar and olive. Season with pepper.
  • Into your serving bowl add: Add endive, cucumber, tomatoes. Coat with dressing and toss to combine.
  • Garnish with pine nuts.

4 slices turkey bacon
2 large endives
1 small tomato, diced
1/2 cup fat-free blue cheese dressing
1/3 cup minced red onion
1/3 cup chopped walnuts
Kosher salt and freshly ground black pepper

Steps:

  • Lay the bacon in a large nonstick skillet and cook over medium heat until golden and crispy, about 5 minutes per side. Transfer to a paper towel-lined plate to drain. Chop and set aside.
  • Separate the endive leaves and arrange 14 large spears on a serving platter. Set aside the remaining leaves.
  • Divide the tomatoes evenly between the endive spears. Drizzle with the blue cheese dressing. Top with the red onion, bacon and walnuts. Season with salt and pepper. Chop the remaining endive leaves and use them to garnish the platter before serving.

8 cups curly endive lettuce, cut into bit-size pieces rinsed and spun dry (instead of cutting, endive can be hand torn)
8 cups Baby Spinach, rinsed and spun dry
1/2 lb feta cheese, broken into pieces (imported preferred as taste is superior to domestic)
2 cups cherry tomatoes
1 tablespoon chopped mint leaf
2 shallots
2 tablespoons sherry wine vinegar or 2 tablespoons other favorite vinegar
1 teaspoon sea salt or 1 teaspoon kosher salt
2/3-3/4 cup olive oil
fresh ground black pepper, to taste

Steps:

  • Combine endive, spinach, tomatoes, and mint in bowl and distribute evenly.
  • TO MAKE THE DRESSING: Chop the shallots and add to the vinegar with the salt. Let sit for 5 minutes. Whisk in the olive oil. Add black pepper to taste.
  • Dress salad as heavy or as lightly as you like. Either add the feta cheese to each individual plate or add with the rest of the salad ingredients and distributing cheese throughout being careful not to moosh cheese.

2 heads endive, leaves seperated
5 medium tomatoes, thinly sliced
1/2 cup thinly sliced onion, recommended, but (optional)
1 tablespoon chopped fresh flat leaf parsley
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh basil
3 tablespoons olive oil
3 tablespoons red wine vinegar, balsamic is good too
1/2 teaspoon sugar
1/4-1/2 teaspoon salt
1/4 teaspoon pepper
2 -3 tablespoons fresh grated parmesan cheese (optional)

Steps:

  • Arrange endive leaves around edge of a serving platter. Arrange the sliced tomatoes and onion slices in the center.
  • Sprinkle with chopped parsley, chives, and basil.
  • Whisk together the olive oil, vinegar, sugar, salt and pepper; drizzle over salad platter.
  • Sprinkle with the optional parmesan cheese, if using it. For Vegan omit it.

2 bacon strips, diced
1 tablespoon olive oil
2 garlic cloves, minced
2 tablespoons finely chopped green onion
2 tablespoons tarragon vinegar
2 tablespoons minced fresh tarragon or 2 teaspoons dried tarragon
1 teaspoon salt
1/4 teaspoon pepper
1 bunch curly endive, torn
4 slices bread, cubed and toasted

Steps:

  • In a skillet, cook bacon until crisp. Remove to paper towels to drain. Add oil to drippings; saute garlic and onion until tender. Stir in vinegar, tarragon, salt and pepper. , In a large bowl, toss the endive, bread cubes and bacon. Pour the warm dressing over salad and serve immediately.

1 large head Belgian endive, leaves separated
2 cups watercress sprigs (large stems removed)
4 medium-size ripe tomatoes, cut into wedges
Raspberry Vinaigrette, recipe follows
1/4 cup seedless raspberry jam
3/4 cup extra-virgin olive oil
1/4 cup raspberry vinegar
1/2 teaspoon minced garlic
Salt and pepper

Steps:

  • Arrange the endive leaves on a large platter, fanning them out from the center. Roughly chop the watercress, and sprinkle it over the endive. Top with the tomato wedges, and drizzle with Raspberry Vinaigrette, to taste. Serve immediately.
  • Whisk all the ingredients together in a small bowl. Cover and chill until ready to use.
