TOMATO HARVEST MARINARA SAUCE
Fresh-tasting Italian-style marinara sauce is a winter luxury. It's a process to make this canned version, but oh, so worth it! Follow canning protocol to prepare this cooking staple you'll love finding in your pantry in January. Vary the amounts of garlic and spices according to your family's taste. Use this as a base sauce and add sausage, ground turkey, and other spices.

Steps:
- Place tomatoes, bay leaves, honey, oregano, 1 tablespoon salt, and black pepper in a large stockpot and cover with water. Stir to combine, cover, and bring to a low boil over medium-high heat. Remove cover and simmer 20 minutes, stirring occasionally. Remove bay leaves. Taste and adjust seasoning.
- Heat olive oil in a large skillet over medium-high heat. Cook and stir onions and garlic in the hot oil until the onions are softened but not browned, about 10 minutes.
- Transfer the cooked tomatoes to a food mill placed over a bowl and puree in batches, separating the tomato pulp and juice from the tomato skins and seeds. Return the tomato pulp and juice to the stockpot, add the cooked onions and garlic, and cook, uncovered, over medium-high heat until sauce thickens and reduces by about half, about 1 to 1-1/2 hours. Stir occasionally to prevent scorching.
- Prepare quart jars, rings, and lids by heating them in boiling water in a canning kettle for at least 5 minutes. When the sauce is ready, remove jars and lids and place on dry towel.
- To each jar, add 1 teaspoon salt and 3 tablespoons bottled lemon juice. Ladle the hot tomato sauce into jars, leaving 1/2-inch of space at the top of each jar. Wipe jar rims with a clean, damp cloth, place lids onto jars, and screw on rings.
- Place filled jars in the canning kettle. Return water to a simmer, adding more water if needed to cover the jars by at least 1/2 inch. Cover kettle and bring water to a boil. Cook at a steady boil to process the jars until fully sealed, about 45 minutes. Turn off heat and let jars rest 5 minutes before removing and cooling on a clean, dry towel placed on kitchen counter or table. Check that the lids have sealed, and store in a cool, dark place for up to 1 year.

ITALIAN SAUSAGE IN TOMATO RAGU
This is a favorite of my father who would grow tomatos in the garden and have a huge harvest at the end of the summer. He would cook pots and pots of tomato sauce that he would freeze and we would eat all winter. Some years had more red pepper than others. One of his great desires was simmering sweet italian sausage in a tomato ragu. Great on a cool fall or winter day while watching football.

END OF THE SUMMER HARVEST TOMATO SAUCE
Harvesting the remainder of the tomatoes, zucchinis, yellow squash and cherry tomatoes before a reported frost had me scrambling a bit. I figured on making sauce but needed a bit more, so this came out a chunky, vigorous sauce for dinner and for freezing. I also used fresh herbs, basil, oregano, and chives to add spunk. Dried herbs can be subbed. Season to your taste. This is a basic sauce.

- Eat them whole. Really! Vine ripened tomatoes are delicious all on their own. You can take a big bite out of one like an apple, or do what my mom always does: slice the tomato into thick slices and sprinkle with salt.
- Fresh salsa. recipestonourish-salsa. I love Mexican food. When it’s served with fresh salsa I really can’t resist. There’s something about the fresh ingredients in uncooked salsa that makes it such a treat for the summer.
- Cooked salsa. cooked-salsa-commonsensehome. Though fresh salsa is my favorite, it’s only available in the summer, and I like salsa all year round. Canning your own salsa is a great way to have quality salsa through the winter.
- Too many tomatoes? Use them as a skin cleanser. Did you know you could clean your face with a tomato? YES, it’s true! (Check out this line of tomato facial products :)) The acids in tomato juice are great for softening and cleaning skin, while the lycopene helps eliminate free radicals.
- Sunburn relief. Tomatoes are also wonderful at soothing sunburn. If your sunburn is recent and not blistering or peeling, rubbing a slice of tomato on it can lessen the redness.
- Make your own pasta sauce. Here’s a great homemade pasta sauce recipe you can make using fresh tomatoes. The recipe calls for five pounds of fresh tomatoes, perfect for when you have too many tomatoes!
- Tomato sandwiches. heirloom-tomato-sandwich-theorganickitchen. I could care less about including yucky winter tomatoes on my sandwiches, but when I’ve got too many tomatoes ripening in the summer, I can’t get enough.
- Tomato soup. Delicious Tomato Soup with Bread. And what goes great with sandwiches? Soup of course! Homemade tomato soup is full of lycopene, which has been shown to fight chronic diseases and increase the body’s natural sun protection.
- BLT’s. This is one of my favorite ways to use up too many tomatoes. I like making a classic BLT, but there are some really interesting ways of dressing up a BLT that are worth a try.
- Tomato juice. If you have too many tomatoes, making tomato juice is a great way to use them up. You can use tomato juice in soups, to add flavor to meat, to deodorize a stinky refrigerator, or to make a kick butt Bloody Mary.

- **Before starting, please be aware that sterilizing your canning jars and lids is very important! Improperly sterilizing the jars and lids can be very dangerous to your health. There are various methods to sterilize your jars and lids, but make sure that they are fully dry and still very warm once you are ready to add in the tomato sauce.
- Start off by washing the tomatoes thoroughly. Cut off the top part of the tomatoes to remove the stem and cut off any bruised spots. Slice the tomatoes down the middle. Cut out any yellow pieces found inside. Lightly squeeze the seeds and water out into a bowl and then place the tomatoes into a large pot. Discard the seeds and water.
- Place the pot of tomatoes over a high flame and cook for 45 minutes. Make sure to stir every couple of minutes so that the tomatoes are cooking evenly. Remove the pot from the flame and scoop out some of the tomatoes and place into a colander over a separate pot to let the water strain.
- Next, place those tomatoes into an electric tomato press and allow for the skin to be removed while the pressed tomatoes are poured into a separate bowl. Pour the pressed tomatoes into a separate clean pot. Repeat this step until all of the tomatoes have gone through the tomato press. Discard the tomato skins.
