2 tablespoons all-purpose flour
2 tablespoons chili powder
1 (8 ounce) can tomato sauce
1 cup water, or more if needed
¼ teaspoon cumin
½ teaspoon garlic powder

2 tablespoons brown sugar
salt to taste

Steps:

  • Heat oil in a skillet over medium heat. Stir flour and chili powder into the oil; cook and stir until smooth. Gradually stir tomato sauce, water, cumin, garlic powder, onion powder, and brown sugar into the flour mixture, respectively. Reduce heat to low and cook until thickened, about 10 minutes.

1 cup diced onion
3 tablespoons chopped garlic
1 teaspoon dried oregano
1 teaspoon ground cumin
¼ teaspoon ground cinnamon

5 tablespoons hot chili powder
4 ½ cups chicken broth
½ (1 ounce) square semisweet chocolate

Steps:

  • Heat oil in a large saucepan over medium-high high heat. Saute onion until tender. Stir in garlic, oregano, cumin and cinnamon; saute for a few minutes.
  • Stir in flour and chili powder, stirring until sauce thickens. Slowly whisk in chicken broth; reduce until sauce reaches desired consistency. Stir in chocolate until melted and well blended.

Homemade Enchilada Sauce image

This homemade red enchilada sauce has authentic Mexican flavor! It's so good and easy, you'll never go back to store-bought sauce again. You can even make a double batch and freeze half of it for later. Recipe as written below yields about 2 cups (16 ounces) sauce.

3 tablespoons olive oil
3 tablespoons flour (whole wheat flour, all-purpose flour and gluten-free flour blends all work!)
1 tablespoon ground chili powder (scale back if you're sensitive to spice or using particularly spicy chili powder)
1 teaspoon ground cumin
½ teaspoon garlic powder
¼ teaspoon dried oregano
¼ teaspoon salt, to taste
Pinch of cinnamon (optional but recommended)
2 tablespoons tomato paste
2 cups vegetable broth
1 teaspoon apple cider vinegar or distilled white vinegar
Freshly ground black pepper, to taste

Steps:

  • This sauce comes together quickly once you get started, so measure the dry ingredients (the flour, chili powder, cumin, garlic powder, oregano, salt and optional cinnamon) into a small bowl and place it near the stove. Place the tomato paste and broth near the stove as well.
  • In a medium-sized pot over medium heat, warm the oil until it's hot enough that a light sprinkle of the flour/spice mixture sizzles on contact. This might take a couple of minutes, so be patient and don't step away from the stove!
  • Once it's ready, pour in the flour and spice mixture. While whisking constantly, cook until fragrant and slightly deepened in color, about 1 minute. Whisk the tomato paste into the mixture, then slowly pour in the broth while whisking constantly to remove any lumps.
  • Raise heat to medium-high and bring the mixture to a simmer, then reduce heat as necessary to maintain a gentle simmer. Cook, whisking often, for about 5 to 7 minutes, until the sauce has thickened a bit and a spoon encounters some resistance as you stir it. (The sauce will thicken some more as it cools.)
  • Remove from heat, then whisk in the vinegar and season to taste with a generous amount of freshly ground black pepper. Add more salt, if necessary (I usually add another pinch or two). Go forth and make enchiladas!

  • In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Add chili powder and cook for 30 seconds. Add stock, tomato paste, oregano, and cumin. 700 g / 24oz tomato passata (1 bottle) or 16 oz (2 cans) US tomato sauce
1 1/2 cups chicken broth, low sodium (or vegetable broth, or water + bouillon cube)
1 tbsp dried oregano
2 tsp cumin
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tbsp brown sugar
Salt and pepper to taste
Optional extras: cayenne pepper (for spiciness), ground chipotle

Steps:

  • Heat oil in a saucepan over medium heat.
  • Add flour and whisk until well combined, about 1 minute.
  • Add remaining ingredients except salt and pepper, whisk, bring to boil, then reduce to simmer.
  • Simmer for 10 minutes or so, until thickened, whisking occasionally.
  • Season with salt and pepper.
  • This can be stored for up to 1 week in the refrigerator in an airtight container. It also freezes well.

1/2 cup Cacique® Crema Mexicana
1 pound cooked shredded chicken ((perfect use of leftovers or rotisserie chicken!))

12 corn tortillas
3 cups shredded Cacique® Manchego cheese, (divided)
chopped onions, (for topping)
chopped cilantro, (for topping)

Steps:

  • Preheat oven to 375°F.
  • In a medium saucepan, over medium-high heat, add salsa verde. Heat up until almost boiling and remove from heat. Add Cacique® Crema Mexicana and whisk together until fully combined.
  • In a large bowl, add shredded chicken and 1/2 cup salsa verde cream sauce. Toss together to coat chicken. Taste and season with salt if necessary.
  • Wet an extra long paper towel with water until slightly damp. Wrap the corn tortillas in the damp paper towel and microwave for 25 seconds. This will warm and soften the tortillas so they're pliable and don't rip.
  • Assemble the enchiladas by filling the tortillas with shredded chicken and 2 cups of shredded cheese. Place the enchiladas seam side down in a large 3-quart baking dish.
  • Pour the remaining salsa verde cream sauce on top of the enchiladas and top with remaining 1 cup of shredded cheese.
  • Bake for 15 minutes.
  • Top with chopped onions and fresh cilantro.
