ENCHILADAS - NEW MEXICO STYLE
These enchiladas are stacked like pancakes, not baked in oven. This is a family recipe handed down two generations. Quick, easy and definitely delicious. Use your favorite kind of meat in this dish - it also works well for leftover meat.

Steps:
- Heat the oil in a large skillet over medium heat. Add the chicken pieces, and cook until browned. Season with cumin and chili powder. Pour in the enchilada sauce, and simmer for about 15 minutes. Stir occasionally.
- In a separate skillet over medium heat, warm the tortillas. Don't fry them, just warm them until they are flexible.
- To assemble the enchiladas, dip a tortilla in the enchilada sauce, and place it on a serving plate. Spoon some of the meat and sauce on, then add shredded lettuce, cheese, onion and sour cream. Top with another tortilla that has been dipped in the sauce. You may repeat the layering as many times as you wish depending on your appetite. Make additional stacks for each person. Top stacks with a fried egg, if desired.

SONORAN ENCHILADA PANCAKE
I think most people know by now that Sonoran enchiladas are not rolled but stacked. This is a Sonoran enchilada pancake (my husband rates it 5 stars). Not only did his mom and grandma make this, but when we went to Vera Cruz on vacation this year, it was right there on the breakfast menu, YES!!!!!

Steps:
- In small bowl heat enchilada sauce in microwave about 1/2 -to 1 minutes, depending on microwave.
- In pan on stove, heat oil and dip one tortilla at a time. Sprinkle cheese in between layers or on top, as you like.
- Put on plate-tortilla.
- Put on sauce.
- Put on tortilla.

- Fry egg and put on top.
- Garnish with your favorite hot sauce, or thinly sliced green onion bottoms.

CHICKEN PANQUECAS (BRAZILIAN CHICKEN ENCHILADAS

- To make the panquecas discs: Blend all the ingredients together in a blender. Heat a lightly oiled, small frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 1/4 to 1/3 cup for each panqueca. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook it for about 1 minute or until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Reserve and prepare filling. I made about 8-12 small panquecas discs with this panquecas batter.
- To prepare the panquecas filling: Rub chicken well with salt, pepper, cumin, chicken bouillon, garlic and onion powder. Coat a large sauté pan with oil and brown chicken over medium heat, allowing 7 minutes for each side or until no longer pink. Remove chicken to a platter, allow to cool.
- Sauté onion and then garlic in chicken drippings until tender. Add corn and olives. Stir well to combine. Add canned tomatoes, sauté for 1 minute.
- Pull chicken breasts apart either by hand into shredded strips or use a food processor to shred the cooked chicken. Add shredded chicken to sauté pan, combine with vegetables.
