The best Lemon Slice you will ever try, so good! my favourite ever treat! A winner with my friends and family, young and old alike.

125 g flour
90 g sugar
75 g butter, cold and chopped into small pieces
1 1/2 teaspoons lemon zest
4 eggs
225 g sugar
1/2-3/4 cup lemon juice, freshly squeezed
2 tablespoons flour

Steps:

  • to make the base put all base ingredients in a food processor and wizz until the mixture forms a ball.
  • roll out and press into the base of a 23cm buttered springfoam tin.
  • bake at 180 degrees C for about 20 mins until just turning golden.
  • meanwhile, for the filling, beat together the eggs and sugar until creamy.
  • fold in the lemon juice and flour.
  • pour this mixture over the crust and bake at 180 degrees C for a further 15 minutes.
  • lower the heat to 150 degrees C and bake for a further 30 mins, until the lemon mix is set.
  • cool and dust with icing sugar.
  • enjoy!

I'd lost my family recipe for lemon squares and spent a lot of time trying new ones that would measure up. None did, but thankfully I recently found the recipe again. Best lemon squares out there.

cooking spray
2 cups all-purpose flour
1 cup cold butter
½ cup confectioners' sugar
2 cups white sugar
4 eggs
¼ cup all-purpose flour
¼ cup lemon juice, or more to taste
1 teaspoon baking powder
1 teaspoon lemon zest, or to taste
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.
  • Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.
  • Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.
  • Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.
