TRUE POUND CAKE
Follow step-by-step, photo illustrated instructions to make this True Pound Cake. Consisting of one pound each of Eggs, Flour, Sugar and Butter, this recipe is referred to as the "True" recipe for making pound cake. Dating back to the 1700's, this version is a bit more dense than today's pound cakes, but well worth adding to your recipe box.

Steps:
- Butter and eggs should be at room temperature before mixing.
- Weigh out one pound, or 3 ¾ cups of All-Purpose Flour
- Remove 7 Tablespoons of the flour and place back in bag.
- Add 7 Tablespoons of Corn Starch to the flour.
- Sift the flour and corn starch together, 3 to 4 times, set aside.
- Sift the Confectioners Sugar into another small mixing bowl.
- In a large mixing bowl, beat the softened butter on high speed until light and fluffy, about 5 minutes.
- Gradually add sugar to butter, beating continuously, until it's well incorporated, light and fluffy.
- Add eggs, one at a time, beating briefly, but well, after each addition.
- Scrape down the sides of the bowl as needed.
- Gradually add flour, beating briefly, but well, after each addition, until mixture is smooth.
- Add flavoring, beat just until incorporated.
- Use a spatula to scrape down the sides of the bowl and fold together a time or two.
- Grease and flour pan, making sure you don't leave any lumps of flour in the corners.
- Spoon the mixture evenly into the prepared pan. Level top gently with a spoon.
- Gently spread batter up the sides and center cone of the pan, pulling batter from the middle.
- Place cake on middle rack in a COLD oven.
- Bake at 275ºF for 2 hours, or until done. Test by inserting a wooden toothpick into center of cake. Cake is done when it comes out with just a few moist crumbs attached.
- Remove pan from oven and let cool on a wire rack, for 20-30 minutes.
- Carefully flip pan over and remove cake.
- Let cake cool completely before slicing.
- Enjoy!
EM'S BEST SOUTHERN POUND CAKE
This recipe came from "Sharon's Mom", who sent her 1st grade child to school with a piece of pound cake for the teacher. That was in 1964, and this has been my stand-by recipe ever since. I retired in 2007, after 27 years in the classroom and 11 additional years as a principal. **I hope that after all these many years, Sharon's...

Steps:
- 1. Cut butter into small pieces and cream with the sugar. Add the ten eggs, beaten slightly, a little at a time. Add the vanilla extract. (Substitute vanilla with almond, if you like.)
- 2. Add the salt to the flour. using a sturdy mixer, add the cake flour to the wet mixture. Prepare your separating tube pan with Crisco/flour or baking spray which is cleaner. (Be liberal in preparing the pan.)Lump the thick batter evenly into the pan.
- 3. Use real butter; use pure vanilla extract. I keep these ingredients on hand all the time. These are key to the flavor of the cake!
- 4. Place the pan in the center of the oven. Cook at 325 F. for approx. 1 1/2 hours. Do not overcook, or the cake will be dry.
- 5. **After drizzling the glaze on the hot cake, use a thin metal spatula and separate the cake gently around the circumference, allowing the glaze the flow down the outside of the cake. Let it sit a few minutes. **Don't stick holes into the cake for the glaze; the cake won't look 'pretty' when you slice it.
- 6. To remove the tube with the heavy cake, I use a large wooden spoon through the tube. Carefully loosen the bottom of the cake and turn the cake over on your hand. Avoid up-ending the cake on a plate, as the top need to look "pretty" as well. Have a plate or Tupperware cake box ready for the bottom of the cake to rest on.
THE VERY BEST POUND CAKE
I found this recipe in a church cookbook around 15 years ago and have been making it since. I never even thought about trying another pound cake recipe because I just don't think it gets any better than this. Make sure that you sift the flour into a measuring cup to total 4 cups. In other words; sift before measuring. I really don't know how much difference it would make but that's the way the recipe was written. And it is all purpose flour. The recipe in the cookbook didn't state what kind of flour so the first time I made it I used self rising. It rose beautifully and looked so pretty. For about a minute and a half. It fairly quickly deflated into a not so pretty mess.

Steps:
- Cream flour and butter together until smooth. I do this part in my stand mixer.
- Beat eggs and sugar together until lemon colored and frothy, I do this part with my hand held mixer.
- Add egg and sugar mixture to flour and butter mixture and mix until smooth and creamy.
- Place batter into a greased and floured 10" tube cake pan. Tap the bottom of the pan on a counter top a couple of times to get rid of any air bubbles.
- Bake @ 300° for 1 ½ hours or until tests done with toothpick.

BEST SOUTHERN POUND CAKE
In my husband's small South Carolina home town, decisions about whether to attend a local wedding were often made according to whether "Miss Lorene" was making the cake for the occasion. This is her version of the traditional Southern pound cake. Its texture is truly divine and quite dense. For some occasions, it is iced with 7 minute frosting. You can also use your favorite glaze. Makes nice cupcakes as well.

OLD FASHIONED POUND CAKE
This Old Fashioned Pound Cake recipe is one my mother made often throughout my childhood. Dense and buttery, this traditional pound cake is the perfect blank canvas for a fruit glaze or whipped topping.
