1 cup (227 g) of softened butter
1.5 cups (300 g) of granulated sugar
1 large egg
1 teaspoon (4.9 mL) of vanilla extract
2.75 cups (398 g) of flour
1 tsp (13 g) of baking soda
1/2 tsp (6.5 g) of baking powder

Steps:

  • Preheat your oven to 375 °F (191 °C). Turn your oven on before you start mixing your ingredients, so it will be ready for your cookies. Keep it at 375 °F (191 °C) so your cookies bake to the perfect consistency.
  • Combine butter and sugar in a large bowl. Mix together 1 cup (227 g) of softened butter and 1.5 cups (300 g) of granulated sugar with a baking spatula. Mix them together until they make a smooth mixture. If you have a store-bought sugar cookie mix, you can use that instead.
  • Beat in 1 egg and vanilla extract. Crack 1 large egg into the bowl and make sure there are no egg shells. Pour in 1 teaspoon (4.9 mL) of vanilla extract and stir your mixture until it is smooth. Use imitation vanilla extract for a cheaper option.
  • Blend in flour, baking soda, and baking powder. Add 2.75 cups (398 g) of flour, 1 tsp (13 g) of baking soda, and 1/2 tsp (6.5 g) of baking powder to your bowl. Stir them in gradually with a baking spatula until your mixture is combined and makes a soft dough. Try not to overmix your dough, or you could cause your dough to become more dense.
  • Roll out your dough with a rolling pin. Pour a thin layer of flour out on a countertop or cutting board. Use a rolling pin to spread your dough out until it is about 0.5 inches (1.3 cm) thick. Using flour helps the dough become less sticky and roll out smoother.
  • Use cookie cutters to cut out circles, hearts, and other Emoji shapes. Place a few different cookie cutter shapes, like circles and hearts to make shapes for your Emojis. Cut out all of your shapes until you run out of dough.Tip: If you don't have circle cookie cutters, use the top of a small glass instead. Circles are great for Emoji faces, and you can even use the top of a Christmas tree cookie cutter to make the poo Emoji. Add small horns to the top of a circle cookie to make a devil Emoji shape. Use a unicorn outline cookie cutter for a cute unicorn Emoji.
  • Lay your cookies out on a cookie sheet. Gently pull your shapes up and out of the dough. Lay them out on a baking tray with about 1 in (2.5 cm) in between each cookie. Since sugar cookies have a lot of butter in them, you don't need to grease your baking tray.
  • Bake your cookies for 8 to 10 minutes. Set your cookies on the middle rack of your oven and take them out when they are hard around the edges. Make sure your cookies don't get too brown, or they could burn.
  • Take your cookies out and let them cool. Set your baking tray on your stove top to let your cookies cool down. Wait for about 1 hour or until they get to room temperature. If you have a cooling rack, use a spatula to transfer them there to make them cool down faster.

3 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
8 ounces unsalted butter, softened, room temperature
2 cups sugar
2 large eggs, room temperature
4 cups yellow royal icing (recipe follows)
1 cup black royal icing
1 cup light blue royal icing
6 cups confectioners' sugar
4 tablespoons meringue powder
1/2-3/4 cup water
food coloring, gels red, blue, black, yellow

Steps:

  • In a large bowl, whisk to combine flour, baking powder and salt. In the bowl of a stand mixer, use a paddle attachment to beat butter and sugar on medium speed until pale and fluffy, about 2-3 minutes. Add eggs, one at a time, and beat to combine. Reduce speed to low and gradually beat in flour. Divide dough in half and shape each half into a flat disk.
  • Working one at a time, place the dough on a silpat or piece of parchment paper cut to 12x17 inches. Cover with a large piece of plastic wrap and roll dough out to 1/4-inch thick. Place rolled dough, covered with plastic on a baking sheet. Repeat process with 2nd disk and place rolled dough on top of 1st piece. Refrigerate until dough is firm, about 1 hour.
  • Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper. Remove plastic from dough and use a 4-inch cat emoji cutter to cut out shapes. Place cookies 1 1/2-2 inches apart on prepared baking sheets. Roll out scraps and repeat process. Chill for about 15 minutes if dough is too soft.
  • Bake cookies rotating baking sheets halfway through until edges start to turn golden, about 12-14 minutes. Transfer cookies to a wire rack to cool completely before decorating.
  • To make the icing: Place sugar, meringue powder and 1/2 cup water in a large mixing bowl. Using a hand-held mixer or stand mixer fitted with whisk attachment, whisk to combine until smooth and thick, adding additional water to achieve a thick but pourable consistency. Separate icing into four bowls and use coloring gels to dye icing red, yellow, black, and light blue.
  • Fill a small squeeze bottle with yellow royal icing and trim the tip to make it easier to squeeze the icing out. Alternatively use a pastry bag fitted with a small tip.   • To decorate cookies, start with the yellow royal icing and draw an outline around the edge of the cookie. Fill the center with yellow icing by squeezing in a zig zag and then use a toothpick to make smooth. Place heart eyes on some of the cookies. Let icing dry completely before decorating the face.
  • Once the yellow icing is dry, use the black icing to make eyes, whiskers and a mouth. Let dry completely.
  • Use the light blue royal icing to draw tears of laughter on some of the cat emojis.
