You can add or omit indgredients to this sauce to your own taste. I love to make my own dressings and sauces and I think this is a great foundation for a steak sauce.

1 tablespoon Worcestershire sauce
1/2 teaspoon soy sauce
1/4 teaspoon onion powder

3 dashes hot sauce

Steps:

  • stir all ingredients and serve.

Delicious steak cooked just the way you like it served with creamy sauce made with shallots, garlic, Dijon mustard, blue cheese crumbles, fresh grated Parmesan, and heavy whipping cream.

3 tbsp salted butter
1 shallot
3 garlic cloves
1 cup heavy whipping cream
1 tsp (heaping teaspoon) Dijon mustard
1/4 cup blue cheese crumbles
1/3 cup freshly grated Parmesan cheese
1 tsp sugar
2 tbsp canola oil
2 1-inch ribeye steaks or any other steak of choice
salt
pepper

Steps:

  • Prepare all ingredients first: slice shallot thinly, smash and mince garlic, grate Parmesan cheese, and measure blue cheese crumbles, heavy whipping cream, butter, sugar, and Dijon mustard.
  • Melt butter in a preheated cooking pan over medium heat and add shallots and garlic. Saute shallots and garlic until browned and whisk in heavy whipping cream.
  • Whisk in Dijon mustard, sugar, and blue cheese crumbles.
  • Lower heat to medium low and slowly stir until blue cheese is melted and incorporated into the sauce.
  • Stir in freshly grated Parmesan cheese until well incorporated. Take off heat and serve over steaks when ready.
  • About 30 minutes before cooking the steaks, take them out of the refrigerator and out of the package. Let the steaks rest and warm up on the cutting board.
  • Preheat the oven to 450°.
  • Right before cooking the steaks, preheat an oven-safe skillet over medium-high heat. Add a couple of tablespoons of oil to the pan. Pat the steaks with paper towel on all sides and season with salt and pepper on both sides as well.
  • Sear steaks in the hot pan for about 45 seconds on each side, until there is a a brown sear and transfer the steaks to the preheated oven.
  • Cook until desired temperature is reached. Depending on the thickness and size of the steaks and the desired level of doneness, it could take anywhere from 4 to 10 minutes so you need to keep an eye on the internal temperature and use a meat thermometer. (Having a bone in the steak also affects how long it will need to cook too.)
  • When taking the temperature, insert meat thermometer through the side of the steak, towards the middle.
  • Once steaks reach desired temperature, take them out of the skillet immediately and let the steaks rest for about 5 minutes before cutting. You can let steaks rest on the cutting board or on the plate. (Note: for medium and less cooked steaks, there will be bloody juice running off the steak as it rests, so you may want to let it rest on the cutting board and not on the plate.)
  • Top each steak with cream sauce and serve with your favorite sides.
  • 125°-130° = Rare135°-140° = Medium-rare145°-150° = Medium150°-155° = Medium-well160°-165° = Well(*First number is when to take it out of the oven.)

½ cup ketchup
¼ cup water
¼ cup Dijon mustard
1/4 cup balsamic vinegar
¼ cup orange juice
½ cup Worcestershire sauce
2 garlic cloves (minced)
1 shallot (sliced)
¼ teaspoon cayenne pepper
¼ cup sugar (optional, adjust to personal taste)

Steps:

  • In a medium saucepan over medium heat, add all ingredients.
  • Bring to boil and then let it simmer for about 10-15 minutes, stirring occasionally.
  • Have a quick taste-test. Add sugar if you'd like the sauce to be slightly sweeter. Cook the sauce until it is thick enough to coat the back of a spoon.
  • Transfer the sauce to a jar and let it cool before serving

This is a recipe from the family cookbook. DH loves it and it's really simple! I am estimating on the oil for frying. Use your own judgement. You can add spices to the egg mixture if you want. I usually just add salt, pepper and paprika. I sometimes prepare a country gravy to go over these.

1 lb ground beef
1 cup wheat flakes
1 1/2 cups evaporated milk
1/4 teaspoon pepper
1 1/2 teaspoons salt
1/2 onion, minced
2 eggs
1 cup milk
1/2 cup oil, for frying
1 cup flour

Steps:

  • Mix the ground beef, wheat flakes, evaporated milk, pepper, salt and onion in a large bowl.
  • Press onto a square cookie sheet.
  • Chill for 1 hour.
  • When chilled, cut into strips.
  • In medium bowl, mix eggs and milk together.
  • Pour flour into a bowl or small baking dish. Dip beef strips in flour mixture, shaking off excess.
  • Then , dip them into the egg mixture, followed by the flour mixture a second time.
  • Fry in a skillet until golden brown, approximately 2-3 minutes.

2 sirloin tip steaks, 6 oz each
1/4 cup soy sauce
1 tsp minced garlic
1 tablespoon canola oil
1 tablespoon freshly ground pepper
1 tablespoon seasoning salt
6 cups spring mix greens (mesclun, dandelion greens, etc)
1/2 cup pecans
1/4 cup raisins
1/4 cup light cheddar cheese
Poppyseed dressing to taste

Steps:

  • Marinate the steaks in soy sauce and garlic for 15 mins. While the steaks are marinating, pre-heat your pan to high heat. Once hot, add pecans and toss in hot pan for 2 mins, until scent is released. Set aside. Return pan to high heat. Add canola oil. When the oil starts to bubble, add steaks. Season with half the seasoning salt and black pepper. Cook on high heat for 3 minutes, then flip. Season this side with remaining seasoning salt and pepper. Fry for another 3 minutes. Turn heat down to medium-low heat and flip steaks one more time. Cook another 2-3 minutes for a medium steak. Remove steaks and set them on cutting board to cool. Let the steaks rest for five minutes before slicing. Plate salad greens and add pecans, raisins and cheese. Slice the steaks thinly and place over salad. Dress with store-bought poppyeed dressing. Enjoy!
