1 1/2 pounds lean ground beef
1/2 cup seasoned breadcrumbs
1 tablespoon ketchup
2 teaspoons dry mustard
4 dashes Worcestershire sauce
1 cube beef bouillon, crumbled (or powdered beef base)
Salt and pepper
1 tablespoon butter
1 tablespoon olive oil
1 whole onion, halved and thinly sliced (or diced if you prefer)
2 cups beef broth, more if needed for thinning
1 tablespoon ketchup
1 teaspoon seasoning sauce, such as Kitchen Bouquet, optional
4 dashes Worcestershire
1 teaspoon cornstarch, optional
Salt and pepper

Steps:

  • For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
  • Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
  • For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
  • Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

1 tablespoon Worcestershire sauce
1/4 teaspoon minced garlic
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 pound lean ground beef (90% lean)
2 tablespoons brown gravy mix
1/2 cup cold water

Steps:

  • In a small bowl, combine the Worcestershire sauce, garlic, salt and pepper. Crumble beef over mixture and mix well. Shape into two patties. In a small nonstick skillet coated with cooking spray, brown patties on each side., In a small bowl, combine gravy mix and water until smooth. Pour over patties. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until meat is no longer pink.

2 cups Creole seasoning
2 cups vegetable oil
4 (14 to 15-ounce) bone-in Rib-eye steaks
4 (14 to 15-ounce) T-bone steaks
4 (14 to 15-ounce) Top sirloin steaks
2 cups Bearnaise sauce, recipe follows
2 cups Emeril's Worcestershire sauce, hot, recipe follows, or use store bought
2 cups Mushroom Demi-Glace, hot
2 tablespoons finely chopped shallots
3 tablespoons white vinegar
1 tablespoon chopped tarragon
3 tablespoons white wine
1 tablespoon water
3 egg yolks
1 cup unsalted butter, melted
Salt
Freshly ground black pepper
10 peppercorns, crushed
1 tablespoon finely chopped parsley leaves
2 tablespoons olive oil
4 jalapenos, with stems and seeds, chopped (3/4 cup)
6 cups coarsely chopped onions
2 tablespoons minced garlic
2 teaspoons freshly ground black pepper
4 cans (2 ounces each) anchovy fillets
1/2 teaspoon whole cloves
2 tablespoons salt
2 whole medium lemons, skin and pith removed
4 cups dark corn syrup
2 cups Steen's 100 percent Pure Cane Syrup
2 quarts distilled white vinegar
4 cups water
3/4 pound fresh horseradish, peeled and grated (about 3 cups)

Steps:

  • In a mixing bowl, combine the Creole seasoning and the oil. Mix well. Smear each steak with the rub. Allow the steaks to sit for at least 1 hour. Preheat the grill. Place the steaks on the grill and cook for 6 to 8 minutes on each side for medium rare. Remove from the grill and let rest for at least 5 minutes before serving. Serve the steaks with the sauce of your choice.
  • In a saucepan, combine the vinegar, wine, peppercorns, shallots, and tarragon. Bring the liquid to a boil and reduce to 1 tablespoon. Add 1 tablespoon of water. Add the egg yolks and whisk, over low heat, until frothy, about 3 to 4 minutes. In a steady stream, add the butter until the sauce thickens. Season with salt and pepper. Strain the sauce through a chinois and set aside. Garnish with the parsley leaves.
  • Combine the oil, onions, and jalapenos in a large heavy stockpot over high heat. Saute for 2 to 3 minutes, or until slightly soft. Add the garlic, pepper, anchovy fillets, cloves, salt, lemons, corn syrup, cane syrup, vinegar, water, and horseradish and bring to a boil. Reduce the heat and simmer, stirring occasionally, for about 6 hours, or until the mixture barely coats a wooden spoon. Strain. Spoon the hot mixture into 3 hot sterilized pint-size jars, filling to within 1/2 inch of the top. With a clean damp towel, wipe the rim and fit with a hot lid. Tightly screw on the metal ring. Process in a hot-water bath for 15 minutes. Using tongs, remove the jars, place on a towel, and let cool. Test the seals. Tighten the rings. Store in a cool, dark place. Let age for at least 2 weeks before using. Can be stored in the refrigerator in a covered jar or bottle indefinitely. Refrigerate after opening.

Fresh ground beef, caramelized onions and a rich brown gravy make this one more delicious item to serve to your family and friends.

Number Of Ingredients 12

1 pound of Ground Round Beef
1/2 teaspoon of Black Pepper
1 teaspoon of Salt
1/2 teaspoon of Garlic Powder
1 teaspoon of Worcestershire Sauce
1 whole Egg
1/4 cup of dry Bread Crumbs
2 Tablespoons of Butter
1 large Onion, sliced
2 Tablespoons of Flour
2 cups of Water
2 teaspoons of Beef Bouillon Granules

Steps:

  • In a mixing bowl, combine the Beef, Black Pepper, Salt, Garlic Powder, Worcestershire Sauce, Bread Crumbs and one whole Egg. Stir mixture together well.
  • Shape into 4 equal sized patties.
  • Heat a skillet over medium heat for about a minute, and then add Butter.
  • Place meat patties in skillet and brown on both sides for about 4-5 minutes each. Remove from skillet and set aside.
  • Add the sliced Onion into the skillet, right on top of the browned bits.
  • Reduce the heat and cook the onions on medium-low heat until the onions turn translucent and brown. Don't rush this step. Cook the onions low and slow for about 20-25 minutes.
  • Sprinkle 2 Tablespoons of flour over the onions. Stir. Let cook and brown for about 2 minutes.
  • Add 2 cups of warm Water. Stir well. Raise the heat back up to about medium.
  • Add 2 teaspoons of Beef Bouillon Granules. Stir Well.
  • Place the meat patties back in the pan. Cover. Reduce heat just a little and let simmer for about 15 more minutes. Remove from heat and serve warm.
  • Enjoy!

Remove all but 3 Tbsp. of the bacon fat from the skillet. Reserve the additional rendered bacon fat in a small bowl and set aside.
  • Add in the minced onions to the fat in the pan and cook, stirring occasionally, till very soft and caramelized around the edges, about 6 min. Combine the onions with the bacon in the bowl of the food processor and process till smooth. Transfer to a large bowl and set aside to cold.
  • Heat 3 Tbsp. of the remaining bacon fat in the pan. Add in the mushrooms and 1 tsp. of the salt, and cook, stirring occasionally, till they have released their liquid and are golden around the edges, about 5 min. Add in the chopped shallots, thyme, and rosemary, and cook till the shallots are soft, about 2 min. Add in the red wine and cook till almost completely evaporated.
  • Sprinkle the flour over the shallots and mushrooms, and stir to combine. Cook for 1 minute. Add in the beef stock and cook for 5 min, till thickened. Add in 1/2 c. of the heavy cream, stir to combine, and cook till the sauce is thick sufficient to coat the back of a spoon and the flavors come together, about 6 min. Cover and keep warm while you prepare the meat patties.
