Yield Makes about 5 quarts

Number Of Ingredients 13

1 tablespoon vegetable oil
1 pound Virginia ham, cut into 1/2-inch pieces
2 large onions, cut into 1/2-inch pieces (about 3 cups)
4 garlic cloves, thiny sliced
2 bunches collard greens (about 1 pound), stems discarded, washed, and roughly chopped
1 can (28 ounces) whole tomatoes with juice, roughly chopped
7 cups homemade or low sodium canned chicken stock
2 cups homemade or low-sodium canned beef stock
8 medium red potatoes, cut into 1/2-inch cubes (about 6 cups)
1 1/2 tablespoons chopped fresh thyme leaves
1 1/2 tablespoons chopped fresh flat-leaf parsley
Coarse salt and freshly ground pepper
Hot-pepper sauce, such as Tobasco (optional)

Steps:

  • Heat the oil in a large stockpot over medium-low heat. Add ham, and cook until it starts to release juices, about 2 minutes; do not brown. Add onions and garlic; cook, stirring occasionally, until soft, about 10 minutes.
  • Working in batches, if necessary, so as not to overcrowd pot, cook collard greens, tossing frequently with tongs until thoroughly wilted. Add tomatoes and juice, chicken and beef stocks, potatoes, thyme, and parsley. Bring to a boil, and reduce heat to a gentle simmer; cook, stirring and skimming any foam from surface occasionally, until potatoes are easily pierced with a paring knife, 30 to40 minutes. Remove from heat; season with salt, black pepper, and hot-pepper sauce, as desired. Serve hot.

4 slices Jones Dairy Farm Sliced Bacon, diced
1/4 cup unsalted butter
2 cloves garlic, minced
1 onion, diced
1 1/2 cups frozen corn kernels
2 teaspoons fresh thyme leaves
2 tablespoons all-purpose flour
3 1/2 cups milk, or more, as needed
2 russet potatoes, peeled and diced
1 (7-ounce) package Jones Dairy Ham Steak, diced
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside. Melt butter in a large stockpot or Dutch oven over medium heat. Add garlic and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes. Stir in corn and thyme until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk, and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in potatoes. Bring to a boil; reduce heat and simmer until potatoes are tender, about 12-15 minutes.* Stir in ham, salt and pepper, to taste. If the chowder is too thick, add more milk as needed until desired consistency is reached. Serve immediately, garnished with bacon, if desired.

10 bacon strips, diced
1 large onion, chopped
1 cup diced carrots
3 tablespoons all-purpose flour
3 cups whole milk
1-1/2 cups water
2-1/2 cups cubed potatoes
1 can (15-1/4 ounces) whole kernel corn, drained
2 teaspoons chicken bouillon granules
Pepper to taste
3 cups shredded cheddar cheese
2 cups cubed fully cooked ham

Steps:

  • In a Dutch oven, cook the bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. In the drippings, saute onion and carrots until tender. Stir in flour until blended. Gradually add milk and water. Bring to a boil; cook and stir for 2 minutes or until thickened. , Add the potatoes, corn, bouillon and pepper. Reduce heat; simmer, uncovered, for 20 minutes or until potatoes are tender. Add cheese and ham; heat until cheese is melted. Stir in bacon.

1 tbsp sunflower oil
2 leeks , thinly sliced
3 medium potatoes , cut into small cubes
1 tbsp plain flour
700ml skimmed milk
2 ready roasted chicken breasts, skin removed and cut into chunks
2 thick slices ham , chopped
175g each frozen sweetcorn and frozen peas

Steps:

  • Heat the oil in a large pan and fry the leeks over a low heat for 3 mins until softened. Stir in the potatoes and flour, then slowly blend in the milk, stirring with a wooden spoon. Bring to the boil and simmer, uncovered, for 10-12 mins until the potatoes are soft.
  • Add the chicken, ham, sweetcorn and peas, then stir over a medium heat for 5 mins or until hot and bubbling. Season to taste and serve with crusty bread.

This soup is creamy as well as hearty and filling; easy to prepare and budget-friendly. The corn adds a tiny bit of sweetness to the taste. For variety, you could probably add some peas and/or carrots; shredded cheddar for topping upon serving. Add some nice warm bread to accompany the meal. 2 celery ribs, diced
1/4 cup onion, diced
2 tablespoons margarine or 2 tablespoons butter
2 tablespoons flour
3 cups milk
2 cups cooked ham, diced
2 cups potatoes, cooked and diced small
1 1/2 cups frozen corn
1 (14 3/4 ounce) can cream-style corn
1/4 teaspoon dried thyme
1/8 teaspoon cayenne pepper
1/8 teaspoon salt

Steps:

  • Boil water; meanwhile peel and dice potatoes.
  • Boil for about 10-15 minutes (soft but not too mushy).
  • Meanwhile, dice up ham, onion, celery.
  • In a large saucepan, saute the onion and celery in butter until softened.
  • Stir in the flour and stir until well blended, then gradually add milk.
  • Bring to a boil while stirring until thickened, about 2 minutes.
  • Stir in remaining ingredients and bring to a boil.
  • Reduce heat, cover and simmer about 15 minutes or until heated through.

I made the recipe up with leftovers I had one day. It's a ham and potato based soup with leeks, onions, rosemary, cream, bacon, and carrots. The ham and bacon give this soup a smoky taste while the cream gives it a rich texture. Chowder is better served the next day.

8 cups chicken or ham stock
4 cups cubed Country ham
4 tablespoons dried rosemary
2 pounds bacon, diced
2 large onions, diced
3 leeks, diced
3 cloves garlic, minced
6 green onions, diced
6 large potatoes, cubed
1 pound carrots, cubed
1 ½ cups heavy cream

Steps:

  • Pour stock into a large pot set over medium heat, and bring to a simmer. Stir in the cubed ham and 2 tablespoons rosemary.
  • In a large skillet over medium heat, cook diced bacon until crisp. With a slotted spoon, remove bacon, and add to pot. Drain half of the bacon grease, and return skillet to medium heat. Stir in onions, leeks, garlic, and green onions; cook until tender, then add to pot.
  • Place cubed potatoes, carrots, and 2 tablespoons rosemary in pot; simmer until vegetables are tender, about 20 minutes. Turn off heat, and add cream to pot.

2 cups water
2 cups chopped potatoes
½ cup chopped carrots
½ cup chopped celery
¼ cup chopped onion
¼ cup butter or margarine
¼ cup all-purpose flour
¼ teaspoon black pepper
2 cups milk
2 ½ cups shredded cheddar cheese or 10 ounces American cheese, torn
1 15 ounce can cream-style corn
2 cups cubed cooked ham

Steps:

  • In a large saucepan or pot, combine water, potatoes, carrots, celery, and onion. Bring to boiling; reduce heat. Cover and simmer for 10 minutes.
  • In a medium saucepan, melt butter or margarine. Stir in flour and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly.
  • Add cheese to sauce and cook and stir until melted. Add cheese sauce to vegetable mixture. Stir in corn and ham. Heat through, but don't boil. Ladle into soup bowls and top with additional pepper, if you like. Makes 6 main-dish servings.

Served with some home-made French bread croutons and sprinkled with grated Cheddar cheese. Do NOT boil the soup after adding the clams--this contributes to Rubber Clam Eraser Syndrome!!! Ewwwww!!!!

Number Of Ingredients 12

8 slices bacon (at least, more is good too)
1 large onion, chopped
1 -2 tablespoon butter
8 large potatoes, peeled, chopped
1 green bell pepper, deseeded & chopped (or red, orange, yellow)
1/4 lb ham, diced (optional)
1 (46 ounce) can clam juice, divided
2 cups whipping cream, divided (half-n-half or milk)
2 tablespoons cornstarch
salt & pepper, to taste
1 pinch parsley
2 (6 ounce) cans clams, reserve juice (chopped or minced)

Steps:

  • In a soup pot, brown the bacon; set aside when crisp.
  • Add chopped onion (add the butter if you don't have a lot of bacon grease--otherwise save the butter for *later*--as noted below); saute onion for 2-3 minutes, then add potatoes, saute a few more minutes.
  • Add green pepper to the pot, saute for about 1 minute.
  • Mix veggies, then add ham and about 1/3 of the clam juice (don't bother measuring, just make sure the potatoes are covered).
  • Simmer until the potatoes are just starting to get soft (20 minutes?).
  • Add another shot of clam juice and 1 1/2°C of cream (or milk); return to a low simmer.
  • Add remainder of clam juice from the big can and reserved from smaller cans; bring to a simmer again, stirring the pot occasionally to prevent sticking.
  • ****If you'd like to have a more "rich" chowder, add the butter now.****.
  • Mix remaining cream/milk with cornstarch, add gradually to simmering pot until slightly thickened (not goopy, please).
  • Add salt and pepper to taste along with pinch (or two) of parsley.
  • Remove from heat and add the clams; stir. Allow to rest for two - three minutes.
  • Crumble crisp bacon over top of soup; stir.
  • Serve immediately along with some hearty home-made croutons (1/2 loaf of French bread, cubed & toasted) and grated Cheddar cheese.
  • VARIATIONS: Skip the ham and add 1-2 cups sweet corn kernels.
  • ***NOTE*** When the store has a special on peppers, I buy a bunch, clean them up and chop into preparation-size bits, then quick-freeze them on cookie sheets (one-layer deep), then pour them into one-gallon zipper bags to store in the freezer. I keep a smaller container in my kitchen freezer for ready-access (and doesn't take up so much space).

1 onion, diced
3 red potatoes, quartered, or more to taste
½ cup cubed cooked ham, or to taste
3 cups heavy whipping cream
1 (15 ounce) can creamed corn
1 (12 ounce) package frozen corn kernels
1 cup 2% milk
½ cup water
1 cube chicken bouillon
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground ginger
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat; cook and stir onion until translucent, 5 to 10 minutes. Add potatoes and ham to onion; cook and stir until ham is heated through, about 5 minutes.
  • Mix whipping cream, creamed corn, frozen corn kernels, milk, water, chicken bouillon, garlic powder, onion powder, and ground ginger into onion-potato mixture; cook over medium-high heat until potatoes are softened, 30 to 45 minutes. Season soup with salt and pepper.
