ULTIMATE GRILLED CHEESE SANDWICH
I always make this sandwich after the holidays when I can get get ham right off the bone. Any other time of the year, I get thick cuts from my local deli. This is my daughter's favorite sandwich and I usually reserve it for special occasions. Enjoy :)

Steps:
- Stir together the apple, pecans, salad dressing, and sour cream; set aside. Place a slice of Colby cheese onto 4 of the bread slices, the add the ham, followed by the remaining slice of cheese and bread. Spread the margarine on the outside of the sandwiches.
- Place the sandwiches into a large skillet and cook over medium-high heat until the bread is golden brown on both sides and the cheese has melted, about 3 minutes per side. Spread the apple mixture into the middle of each sandwich before serving.

Steps:
- Spread peanut butter on one slice of bread.
- Mash banana and spread it on the other slice of bread.
- Put the slices together to form the sandwich.
- Melt butter (not the peanut butter) in a frying pan.
- Fry the sandwich in the pan on both sides until it's golden brown.
THE ELVIS SANDWICH
Steps:
- Add bacon to a large non-stick pan and fry over medium heat until both sides are crispy and the fat has rendered down. Remove bacon and leave the fat behind (discard some if more than 1tbsp or so).
- Lightly butter one side of each slice of bread. Flip them over so they're butter-side-down. Spread peanut butter over all four slices, then top two of them with banana then bacon. Place the other slice on top butter-side-up.
- Add to the pan with the leftover bacon fat and fry both sides over medium heat until golden, with the peanut butter just starting to leak out. Serve up and enjoy!

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- Spread peanut butter on a slice of white bread, and cover with cheese slice and bacon. Top with the other piece of bread. Spread butter on both sides of the sandwich, and pan-fry in a skillet over medium heat until the bread is golden brown and the cheese has melted, 2 to 3 minutes per side. Serve hot.

- Preheat the oven to 350°F. Place a large wire rack on a sheet pan. Line a platter with paper towels. Arrange the bacon slices, well-spaced, on the rack. (The bacon will cook up crispier on the rack while the fat collects in the pan. This is key to the bacon remaining crisp in a grilled cheese.) Place in the oven for 15 to 20 minutes, until crisp. Transfer the bacon to the prepared platter to drain. Scoop up 2 tablespoons of the bacon fat from the sheet pan to use for the spread.
- To make the spread, in a small saucepan, combine the peanut butter and cheese, place over low heat, and stir just until soft and well mixed. Transfer to a food processor, add the bacon fat, and process until smooth.
- Line up half of the bread slices on a work surface. Slather one-fourth of the spread on each slice, then top with one-fourth of the banana slices and 2 bacon slices. Close the sandwiches with the remaining bread slices.
- Line a large platter with paper towels. In a skillet over high heat, melt 1 tablespoon of the butter. Turn down the heat to low, add 1 sandwich, and cook, turning once, for 2 to 3 minutes on each side, until browned and crisp on both sides and the cheese is melted. Transfer to the prepared platter to blot the excess grease. Repeat with the remaining butter and sandwiches.

- Heat cast iron pan over medium heat. Spread a tablespoon of mayonnaise on one side of each piece of bread.
- On the other side of one piece, spread bacon jam, then place mayonnaise side down onto heated pan, layer with roasted bananas and Fontina cheese. Spread peanut butter on the other side of remaining bread slice and place on top of sandwich with mayonnaise side up.
- Cook until bottom is golden brown, about 4 minutes. Flip sandwich and cook second side until golden brown, about another 4 minutes. Serve immediately.

- In a small bowl, mash banana and peanut butter together, using a fork, until mixture is creamy with small pieces of banana.
