RACH'S EASY CHEESY CHIPOTLE CHICKEN + BLACK BEAN BURRITOS WITH BACON
Go southwestern with layers of spicy green rice, smoky beans and rotisserie chicken in a cheesy chipotle sauce.

Steps:
- For the rice, combine the rice and stock in a pot, bring to a boil and reduce the heat to simmer, add a pinch of salt
- Add the spinach, juice of 1 lime, scallions, garlic and jalapeño to food processor and pulse to finely chop
- Cook rice 15 minutes, stir in the spinach, cook 3 minutes more, remove from heat, let stand 5 minutes and fluff with fork
- For the beans, in a medium skillet, heat oil, ½ turn of pan, over medium-high heat, add bacon and render the fat, add onions, jalapeño pepper and garlic, stir, add spices and stir again, add ½ cup water, let it absorb, add black beans and juice of 1 lime, and reduce heat to low
- For the chicken, heat a large skillet over medium to medium-high heat, melt butter and add the onion and garlic, season with salt and pepper, and stir to soften, add chipotle in adobo, add honey and stock, stir in crema and cheese, add chicken and heat through
- Char the tortillas in stainless skillet or over open flame on gas burner
- Build burritos: rice, beans, chicken in cheesy chipotle sauce, tuck in sides, wrap and roll tightly
- Halve the burritos
ELVIS BURRITOS
This recipe came from a cookbook called "Fit for a King". It is supposed to have been one of Elvis's favorite foods. My friend's son called them Elvis Burritos. The name stuck and this is what we have always called them.

Steps:
- 1. Thaw and drain the spinach well. I squeeze dry in paper towels.
- 2. Combine all ingredients except tortillas.
- 3. Spread a few spoonfuls of mixture evenly over tortillas. Roll them up.
- 4. Wrap in moist paper towels. Place in ziplock bags. Chill. When ready to serve, slice into 12-inch slices.

A friend raved about trying these on holiday and I had to try replicating them at home. Being Australian, I'm not sure how authentic they are, but they're definitely delicious.

- Divide ground beef into 4 patties, sprinkle with salt and black pepper, and set aside.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and keep warm. Cook onion in the bacon drippings until lightly browned, about 10 minutes, stirring often; sprinkle with sugar during frying if desired. Set onion aside.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Open hamburger buns and place onto a baking sheet with cut sides up; toast under the broiler until browned, 1 to 2 minutes. Set buns aside.
- Pan fry ground beef patties in the same skillet as onions until browned and the juices run clear, 5 to 8 minutes per side. An instant-read meat thermometer inserted into the center of a burger should read at least 160 degrees F (70 degrees C). Place a slice of Cheddar cheese onto each patty and allow cheese to melt.
- To assemble, spread peanut butter onto bottom halves of buns; spread ketchup onto top halves. Top the peanut butter with pickle slices, cooked onion, burgers with cheese, a slice of bacon, several tomato slices, and about 1/4 cup shredded lettuce per sandwich.
