ELVIS PRESLEY'S FRIED PEANUT BUTTER AND BANANA SANDWICH

- Place 2 pieces of white bread in the toaster on a light setting. Heat skillet over medium heat with 2 tablespoons butter. While the bread is toasting, in a small bowl, using a fork mash the ripe banana until it reaches a smooth consistency. Using a knife, take both pieces of the toasted bread and spread 2 tablespoons of creamy peanut butter, topping 1 side with the mashed banana. Place 1 slice of bread on top of the other forming a sandwich. Place sandwich in hot skillet browning each side, flipping with a spatula, about 2 minutes per side. Take out of skillet, slice on a diagonal and serve on a plate.
ELVIS' BURGER
One of the best meals in the world is burger and chips, and this burger is fantastic. This is a tribute to The King, Elvis Presley. I don't like to buy minced beef, because I don't know what's in it, so I always mince my own.

- Slice the chuck steak, then pulse in the processor; this is great, as you get some smaller bits and some larger bits of meat. In a big frying pan slowly fry the onion in olive oil for about 5 minutes until softened, but not coloured. This gives the sweetness to the burger. Add the onion to the meat.
- Using a pestle and mortar, bash up the cumin, coriander seeds, salt and pepper until fine and add to the meat.
- Add the Parmesan, Dijon mustard, egg and 1/2 the bread crumbs and mix. If too sticky, add a few more bread crumbs.
- Lay out some greaseproof paper, sprinkle with bread crumbs, and then shape the meat into patties. Place them on the crumbs, and sprinkle more crumbs on top. These burgers are better if they are chilled in the fridge for about 1 hour before you cook them.
- Heat a little oil in a frying pan, and cook the burgers on a medium-high heat for about 8 to 10 minutes, turning occasionally. Serve on a toasted burger bun with tomato ketchup and a "wally" (pickled gherkin).

- Split the meat into two quarter-pound patties and grill or pan fry with the bacon, adding the onions and mushroom to soak up the grease as a sauce.
- When you're done, stack your burger in the following order, from bottom to top: Top bun, 1/4 patty, slice cheese, 2 slices bacon, 2 teaspoons peanut butter, 1/4 patty, slice cheese, 2 slices bacon, 2 teaspoons peanut butter, onions and mushrooms, ketchup, mustard, relish& mayonnaise, lettuce, tomato, bottom bun.

Piled high with creamy peanut butter, extra-crispy bacon, caramelized bananas, and a sweet honey drizzle, this totally unique combination of flavors will have you all shook up. Whether you grill the patties or cook them smash burger-style on the stovetop, these burgers will be a hunk of burning love at your cookout.

- Heat a griddle over medium heat. Butter the inside slices of each burger bun, then toast in the skillet until golden brown, 2 to 3 minutes. Set aside.
- Heat a large skillet over low heat; pan-fry the bacon for 2 minutes, then increase heat to medium-high and continue to pan-fry until crispy, 5 to 7 minutes, turning often. Drain on paper towels and discard most of the bacon grease.
- Cut each banana lengthwise into long slices, about 4 inches in length. Pour the sugar into a small bowl, then add in the banana slices to coat both sides in sugar. Fry the banana slices in the same skillet over medium heat until caramelized, 2 to 3 minutes.
- Cook the burgers on a griddle over medium-high heat for 3 to 4 minutes per side, seasoning with salt and pepper. Press down firmly with a spatula to flatten the patties as they cook. A thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
- To assemble the burgers, lay down the bottom half the burger bun and spread on 1 tablespoon peanut butter. Place a burger patty on top, then add another tablespoon of peanut butter. Top with 2 to 3 slices of caramelized bananas, then 2 to 3 pieces of bacon. Drizzle with 1 teaspoon honey, then place the remaining burger bun on top.

- Preheat grill to high. Season meat liberally with salt and pepper. Cook burgers over direct heat for 3-5 minutes on each side or until desired doneness.
- Meanwhile, slice bananas lengthwise and then in half, creating 8 small thin slices of banana. Add to a medium sauce pan and top each with 1/2 tablespoon of brown sugar over medium heat.
