This is Mexican street food at its finest. Anytime I visit El Paso or Mexico the craving of elote en vaso steps into high gear. Now anytime I crave this I whip it up at home, except I make it fancy by serving it in a pretty glass instead of the traditional Styrofoam® cup. No matter how you serve it the taste is sweet, crunchy, fiery, and juicy. This is a very loose recipe. Feel free to adjust the proportions of lime juice, crema, cheese, and spices to taste!

10 ears corn, shucked and kernels removed
1 ¼ cups butter
2 ½ cups lime juice
2 ½ cups crema Mexicana (Mexican cream)
1 teaspoon chili powder, or to taste
salt to taste
1 ¼ cups crumbled cotija cheese
1 dash hot pepper sauce (such as Valentina®), or to taste
10 wedges fresh lime

Steps:

  • Place corn in a saucepan and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 2 to 3 minutes. Drain and return corn to saucepan.
  • Spoon 3/4 cup corn into 10 serving bowls; add 2 tablespoons butter to each and stir until butter is melted. Mix 1/4 cup lime juice and 1/4 cup crema Mexicana into each bowl; sprinkle a generous amount of chili powder over each. Season with salt.
  • Top each serving with 2 tablespoons cotija cheese and hot sauce; garnish with a lime wedge.

2 tablespoons mayonnaise
1 tablespoon lime juice
1 ½ teaspoons chili powder
4 ears sweet corn, shucked and kernels cut off
¼ cup chopped cilantro
3 tablespoons cotija cheese

Steps:

  • Whisk mayonnaise, lime juice, and chili powder together in a bowl until evenly combined. Set aside.
  • Heat a large cast iron skillet over medium-high heat. Add corn and cook for 5 minutes without stirring. Toss around with a spatula and cook until corn has started to brown, about 3 minutes more. Remove from heat.
  • Add reserved mayonnaise mixture and stir until evenly combined. Add cilantro and stir again. Transfer to serving plates and sprinkle cotija cheese over the top.

I grew up just outside of a Mexican border town, and at least twice month my grandmother would take me across the border to do some shopping. I remember the food stands found at every corner street and almost all of them sold elotes. It was one of my favorite vendor foods. Every time I make it, I am reminded of my childhood.

2 (15.5 ounce) cans whole kernel corn, drained
4 tablespoons mayonnaise, or to taste
4 tablespoons grated Parmesan cheese, or to taste
4 teaspoons chile-lime seasoning (such as Tajin®), or more to taste
1 lime, or more to taste

Steps:

  • Heat corn in a skillet over medium heat until steaming, about 5 minutes. Remove from heat and drain water.
  • Fill several cups or mugs halfway with the corn. Add 1 tablespoon mayonnaise, 1 tablespoon Parmesan cheese, and 1 to 2 teaspoons chile-lime seasoning to each cup. Squeeze lime juice on top.

4 cobs of corn
1/2 c cotija cheese, crumbled
3/4 c crema mexicana
juice from 1 lime
1 tsp cayenne pepper
hot sauce to taste

Steps:

  • 1. Preheat grill or oven to 350 degrees.
  • 2. If cooking on the grill, cook for 15 minutes (still in husks), remove from grill, cool for 5 minutes. Remove husks and cut the corn off the cob, drizzle with lime juice. If using the oven,place the cobs of corn (still in husks) in the oven. Bake for 30 minutes. Remove from oven and cool for 5 minutes. Remove husks and cut the corn off the cob. Drizzle with lime juice
  • 3. Place the corn in a medium bowl and add the crema Mexicana. Toss to well combine.
  • 4. Divide the corn between four cups. Top each cup with crumbled cotija cheese, a ¼ teaspoon of cayenne pepper and a dash of hot sauce. Serve immediately.

1 Tablespoon salted butter (, softened)
1/3 cup diced onion (, (optional))
1 jalapeño or serrano pepper (, seeded, diced, (optional))
1/3 cup water
4 ears corn* (, husked, cut from the cob (about 3 cups))
salt and pepper (, to taste)
5 Tablespoons mayonnaise
5 Tablespoons Mexican sour cream
1/3 cup shredded cotija cheese or queso fresco*
Chili powder, Tajin, or hot sauce ( , to taste)
1 lime (, quartered)

Steps:

  • Add butter to a skillet over medium heat. Once melted, add onion and pepper and saute until tender. Add water and corn. Cover and cook, stirring occasionally, until corn is tender (about 5-8 minutes).
  • Season with black pepper and a little salt and divide among 4 cups.
  • To each cup add 1 heaping teaspoon of mayonnaise and 1 heaping teaspoon of Mexican crema (or sour cream). Stir to combine.
  • Sprinkle generously with grated cheese and chili powder, to taste. Serve with lime wedges to squeeze on top. Enjoy immediately.

Steps:

  • You will need an air fryer basket with relatively small holes in the basket. If your air fryer has a grid-shaped basket, you may need to make this in a heatproof pan that fits inside the air fryer basket.
  • Place frozen corn in the bottom of the air fryer basket. Spray with oil.
  • Set fryer to 350°F for 10 minutes. At the end of the cook time, pour the corn into a serving bowl. Add butter and mix well until the butter has melted.

  • Do watch the video for this recipe to have guided visual instructions. Shuck the corn to remove all of the husks and the silk. Rinse to remove any extra silks, but if a few are left it won't hurt anything. Use a tomato slicer knife or a sharp or serrated knife to cut off the kernels from the ears of corn. You can hold the ear of corn inside of a bowl and rest it on the bottom, then slice off the kernels -- carefully so you don't cut yourself. Continue until all ears of corn have been done.
  • Melt the butter in a hot pot, then add the onion and garlic and sprinkle a small pinch of the salt over them, saute until soft. Next add the serrano and cook for a couple of minutes before adding all of the corn kernels. Saute until the kernels begin feeling just a bit crispy. Now add the epazote, the broth and give the ingredients a good stir. This is completely optional, but I like to add a couple of the leftover corn cobs that have had their kernels sliced off, to the pot to give the broth extra flavour. Next cover the pot and bring to a boil, once boiled uncover and continue simmering until the liquid has halved and the kernels are nice and tender. Taste and adjust salt if necessary -- but remember you'll be adding cheese too which is a bit salty.
  • Once the esquites are cooked you can allow to cool slightly then serve in small cups. This recipe makes enough for four small servings. Remove the corn cobs, if used, ad the sprig of epazote. Ladle some corn and as much broth as desired (it tastes really good, so do add it) into each cup. Top with some mayo, cheese, lime juice and ground chile pepper -- the amounts are to taste and not everyone likes everything, customize it to your taste.
