AUTHENTIC NEW MEXICO GREEN CHILE STEW



Authentic New Mexico Green Chile Stew image

i first had this when i went to albuquerque to visit family 15 years ago...wow is this good!! after several attempts to recreate & falling short i've finally perfected it...at least in my mind but i haven't had the real stuff in over 8 years :( this recipe is so tasty and worth the time it takes to put together...try it out!

12 -15 hatch green chilies (if not available anaheim will work too)
2 lbs pork shoulder
2 tablespoons vegetable oil
1/2 cup onion, finely chopped
2 minced garlic cloves
1 -2 jalapeno, diced (only necessary if using anaheim chiles)
6 cups chicken broth
6 ounces beer (optional)
1/2 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper
3 bay leaves
1/2 teaspoon cumin
1 (10 ounce) can diced tomatoes
3 large potatoes, diced 1/2-inch
2 tablespoons butter
2 tablespoons flour

Steps:

  • Broil green chiles in the oven turning often to evenly darken skin making sure they don't burn.
  • Remove from oven and cover with a dish cloth for 10 minutes to steam the skins off.
  • While the chiles are resting, cube the meat, sprinkle with salt & pepper and brown with onions & garlic in oil in a large pot for 5 minutes.
  • add jalepeno, broth, half a can of beer, spices.bring to a simmer.
  • let simmer for 1 hour.
  • Peel skin from chiles, chop and add to the pot (including the seeds).
  • Let simmer for 30 minutes then add the tomatoes & potatoes (add a cup of hot water if needed).
  • Simmer until potatoes are done.
  • melt butter in a small skillet & add flour, cook for 2 minutes stirring constantly -- add to the pot.

1 ½ pounds ground elk meat
2 large yellow onions, diced
2 (10 ounce) cans tomato sauce
1 (14.5 ounce) can Italian-style stewed tomatoes
1 (15 ounce) can kidney beans, drained
1 (4 ounce) can diced green chiles
1 ½ tablespoons chili powder
1 ½ teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
½ cup brown sugar

Steps:

  • In a large deep skillet over medium heat, cook the ground elk with the onion until evenly browned. Drain off excess grease.
  • Pour the tomato sauce, stewed tomatoes, kidney beans and green chilies into the skillet with the meat, and stir to blend. Season with chili powder, cumin, salt, pepper, oregano and brown sugar. Cover, and simmer over low heat for at least one hour.

After the hunt it's nice to have options for cooking wild game. This recipe is sure to please. Even people who don't love wild game will eat this. This is one of my signature recipes, I used elk after running out of pork. Now it is one of my most requested dishes.

2/3 cup all-purpose flour
2/3 cup butter
14 cups water
1 medium onion, chopped
6 garlic cloves, minced
1 1/2 lbs elk meat, cubed
10 green chilies, fire roasted with skin removed, chopped
1/4 cup better than bouillon, beef bouillon
salt
pepper

Steps:

  • Cook butter and flour in a deep dutch oven until flour turns light brown. Add water while stirring vigorously with a whisk. Then add chopped onion, minced garlic, cubed elk, chopped green chilis, and bouillon.
  • Let simmer on med low for aprox. 2hrs. Let it cook down to an almost gravy consistency. Check to see if seasonings are to your taste, add salt and pepper if needed. Serve with flour tortillas, cheese, sour cream and salsa if desired and enjoy!

1 lb boneless pork chops (cut into bite-size pieces)
1/4 cup flour
1 tsp salt
1 tsp cumin
1/2 tsp pepper
1 onion (chopped)
2 cloves garlic (minced)
1 cup green chile (peeled and chopped)
4 small potatoes (peeled)
2 tbsp olive oil
3 cups chicken broth

Steps:

  • Cut pork chops into bite-size pieces.
  • In a medium bowl, combine flour, salt, ground cumin, and pepper. Add pork to the bowl and mix to coat pork pieces.
  • Peel and dice onion. Peel and mince garlic. Peel and dice green chile. Peel and cube potatoes.
  • Heat olive oil in a large pot over medium heat. Add onions and saute until translucent, about 4 minutes. Add in garlic and saute until fragrant, about 30 seconds. Add in pork and continue cooking until pork starts to brown.
  • Add chicken broth, scraping the bottom of the pan to get all of the brown bits. Add in green chile and potatoes.
  • Simmer about 30 minutes, until pork is cooked through and potatoes are tender (but not falling apart). Season with salt, pepper, and cumin, to taste.

Oil
3 heaping tablespoons flour
1 tablespoon fresh chopped garlic
2 1/2 cups chicken bouillon
One 14 1/2-ounce can crushed tomatoes
2 large potatoes, diced
1 (2 pound) package thawed Chile Products of New Mexico Green Chile with or without the juice
Salt
1 teaspoon kitchen bouquet
Shredded cheese, optional
Warm tortillas or crusty bread, optional

Steps:

  • Brown pork, chicken, or beef in oil. Sprinkle flour over the meat and add chopped garlic according to your taste. Add chicken bouillon, crushed tomatoes, potatoes, and Green Chile. Add salt to taste. Bring to a slow boil and simmer until meat and potatoes are tender, about 45 minutes. The secret is to add a teaspoon of kitchen bouquet at almost the end of cooking, which brings out the flavor even more! You can sprinkle shredded cheese on top if you like and serve with warm tortillas or crusty bread.

2 pounds pork loin, cubed
1 (15 ounce) can fire roasted tomatoes
1 medium onion, chopped
3 garlic cloves, minced
2 tablespoon olive oil
32 ounces chicken stock
2 tablespoons taco seasoning
1/2 teaspoon cumin

Steps:

  • Set slow cooker on high setting.
  • Add olive oil.
  • Add pork, onion, and garlic.
  • Add taco seasoning and cumin.
  • Mix well.
  • Allow mixture to cook for about one hour or until onions are translucent.
  • Add diced green chiles along with the liquid, diced tomatoes, and chicken stock.
  • Mix well.
  • Set on low for seven hours.
  • Serve as desired.

  • If you are using the dried corn, put it in a pot of water and start boiling it before you start anything else, because it can take a long time to soften.
  • Salt the venison well, then dust it in the flour, pressing the flour into the meat. Heat 2 tablespoons of the lard or vegetable oil in a Dutch oven or similar soup pot set over medium-high heat.
  • When the oil is hot, brown the meat in batches. Make sure no piece is touching another, and take your time with this. You want each piece well browned. Move them to a bowl as you go. You will likely need to add another tablespoon of oil late in this process.
  • When the meat is all browned, add the final tablespoon of oil and the onions. Stir this well, as the moisture from the onions will deglaze the pot. You want that. Sauté the onions until they too are nicely browned. This whole process, meat and onions, can take 30 minutes or more.

  • Roast the chiles, peel the skins off, remove the seeds, salt them and set aside. You can either keep them in fairly large pieces if they are well-roasted, or chop them roughly. Your call.
  • Make four burger patties. I prefer one-third pound burgers, but you can make them any size you want. Pro tip: Press the weighed out ground meat into a large circle mold for more even patties. Press a dimple about the diameter of a walnut in the center of each patty - this prevents them from balling up when cooked. Salt your patties well.
  • Get your grill hot. Scrape down the grates well, and grill your burgers with the grill cover open. Leave them on the grates for at least 3 or 4 minutes so you get grill marks and a good crust. Flip and cook to order. Typically a medium burger will need another 3 minutes.
