AUTHENTIC NEW MEXICO GREEN CHILE STEW
i first had this when i went to albuquerque to visit family 15 years ago...wow is this good!! after several attempts to recreate & falling short i've finally perfected it...at least in my mind but i haven't had the real stuff in over 8 years :( this recipe is so tasty and worth the time it takes to put together...try it out!

Steps:
- Broil green chiles in the oven turning often to evenly darken skin making sure they don't burn.
- Remove from oven and cover with a dish cloth for 10 minutes to steam the skins off.
- While the chiles are resting, cube the meat, sprinkle with salt & pepper and brown with onions & garlic in oil in a large pot for 5 minutes.
- add jalepeno, broth, half a can of beer, spices.bring to a simmer.
- let simmer for 1 hour.
- Peel skin from chiles, chop and add to the pot (including the seeds).
- Let simmer for 30 minutes then add the tomatoes & potatoes (add a cup of hot water if needed).
- Simmer until potatoes are done.
- melt butter in a small skillet & add flour, cook for 2 minutes stirring constantly -- add to the pot.

- In a large deep skillet over medium heat, cook the ground elk with the onion until evenly browned. Drain off excess grease.
- Pour the tomato sauce, stewed tomatoes, kidney beans and green chilies into the skillet with the meat, and stir to blend. Season with chili powder, cumin, salt, pepper, oregano and brown sugar. Cover, and simmer over low heat for at least one hour.

After the hunt it's nice to have options for cooking wild game. This recipe is sure to please. Even people who don't love wild game will eat this. This is one of my signature recipes, I used elk after running out of pork. Now it is one of my most requested dishes.

Steps:
- Cook butter and flour in a deep dutch oven until flour turns light brown. Add water while stirring vigorously with a whisk. Then add chopped onion, minced garlic, cubed elk, chopped green chilis, and bouillon.
- Let simmer on med low for aprox. 2hrs. Let it cook down to an almost gravy consistency. Check to see if seasonings are to your taste, add salt and pepper if needed. Serve with flour tortillas, cheese, sour cream and salsa if desired and enjoy!

Steps:
- Cut pork chops into bite-size pieces.
- In a medium bowl, combine flour, salt, ground cumin, and pepper. Add pork to the bowl and mix to coat pork pieces.
- Peel and dice onion. Peel and mince garlic. Peel and dice green chile. Peel and cube potatoes.
- Heat olive oil in a large pot over medium heat. Add onions and saute until translucent, about 4 minutes. Add in garlic and saute until fragrant, about 30 seconds. Add in pork and continue cooking until pork starts to brown.
- Add chicken broth, scraping the bottom of the pan to get all of the brown bits. Add in green chile and potatoes.
- Simmer about 30 minutes, until pork is cooked through and potatoes are tender (but not falling apart). Season with salt, pepper, and cumin, to taste.

- Add pork, onion, and garlic.
- Add taco seasoning and cumin.
- Mix well.
- Allow mixture to cook for about one hour or until onions are translucent.
- Add diced green chiles along with the liquid, diced tomatoes, and chicken stock.
- Mix well.
- Set on low for seven hours.
- Serve as desired.

- If you are using the dried corn, put it in a pot of water and start boiling it before you start anything else, because it can take a long time to soften.
- Salt the venison well, then dust it in the flour, pressing the flour into the meat. Heat 2 tablespoons of the lard or vegetable oil in a Dutch oven or similar soup pot set over medium-high heat.

- Roast the chiles, peel the skins off, remove the seeds, salt them and set aside. You can either keep them in fairly large pieces if they are well-roasted, or chop them roughly. Your call.
- Make four burger patties. I prefer one-third pound burgers, but you can make them any size you want. Pro tip: Press the weighed out ground meat into a large circle mold for more even patties. Press a dimple about the diameter of a walnut in the center of each patty - this prevents them from balling up when cooked. Salt your patties well.

- Crockpot Instructions I'm only going to tell you this once... throw everything into the pot and cook on low for 6-8 hours. I know, this is hard work!
- Stovetop Instructions Cook the meat with the onions and garlic. As the meat cooks, I usually open up all of the cans and add the spices to the top of them, so I can easily dump everything in to the pot.
- Throw everything into the pot after the meat is done cooking and cook a minimum of 1 hour. It's much better to cook it at least 2 hours.
