BREAD PUDDING PEAR PIE
I've been serving this simple but elegant dessert for many years, after a friend shared the recipe, I especially enjoy baking yummy desserts. I guess it's in the genes--my grandfather came over from Norway and started a bakery in a small Minnesota town. -Kris Bailey Villand, Minnesota

Steps:
- Coarsely chop pears; place in a greased 9-in. deep-dish pie plate. In a large bowl, beat eggs and sugar. Add the milk, vanilla, lemon zest and salt; mix well. Stir in crumbled English muffins; pour over pears. bake, uncovered, at 350° for 30-40 minutes or until a knife inserted in the center comes out clean. Cool slightly on a wire rack., For butterscotch sauce, combine brown sugar and butter in a saucepan. Cook over medium heat until butter is melted. gradually add 1/2 cup cream. Bring to a slow boil over medium heat, stirring constantly. Remove from heat. Stir in vanilla; set aside., In a small bowl, beat the remaining cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Cut into wedges. Garnish with whipped cream and pear slices if desired. serve with butterscotch sauce.

RESTAURANT STYLE BREAD PUDDING
This is one of my favorite dessert recipes. It is a very rich and elegant bread pudding that starts with homemade white bread and ends with a perfect baked custard.

Steps:
- In a large bowl, dissolve yeast in warm water and let sit for 10 minutes.
- Add warmed milk, sugar, salt, and butter. Slowly stir in flour to form dough.
- Knead bread dough on lightly floured surface.
- Let rise until double.
- Punch down dough and form into a loaf.
- Let rise in loaf pan until double.
- Bake 400 degrees for 30 minutes or until done.
- Let bread cool.
- Cut bread into 1" cubes.
- Place cubes into a deep casserole dish.
- Toss in the raisins.
- In a separate bowl mix together custard ingredients. Pour over the bread and sprinkle top with coarse sugar crystals.
- Bake 375 degrees for 60 minutes.
- Serve warm.
- Note: You can double the bread recipe and have an extra loaf. I often make the bread the day before. You could use a dense store bought bread but you won't get the same results.
ELEGANT BREAD PUDDING
At holiday potlucks, our whole family looks forward to my sister-in-law bringing this best-of-the-season dessert. The scrumptious caramel sauce is a unique touch.

- Arrange bread cubes evenly in a greased 13x9-in. baking dish; sprinkle with raisins. In a large bowl, beat the eggs, half-and-half cream, sugar, cinnamon, nutmeg and orange zest; pour over bread. Bake, uncovered, at 350° for 30 minutes. Cover with foil and bake 15 minutes longer or until a knife inserted in the center comes out clean. , For sauce, in a saucepan, combine the brown sugar, butter and whipping cream; cook and stir over low heat until smooth. Remove from the heat; stir in vanilla. Serve bread pudding in bowls with caramel sauce and whipped cream if desired.

SWEET AND ELEGANT BREAD PUDDING
A tastey sweet dessert I modified to serve my wife and I. The caramel sauce gives this dish a wonderful sweetness and the crusty top just ties all the tastes and textures together.

Steps:
- DIce enough bread slices to fill two 16 to 20 ounce baking dish. Grease your baking dishes and add the diced bread and raisins.
- In a mixing bowl mix together eggs, 1 cup of heavy whipping cream, 1/2 cup brown sugar, cinnamon, and nutmeg. Pour half of mixture over each bread bowl.
- Bake, uncovered, at 350 degrees for 30 minutes. Check the center with a toothpick. If toothpick comes out clean remove from oven. If not, cover bowls and bake for another 10 to 15 minutes.
- Sauce-- Mix 1/2 Cup brown sugar, 1/4 cup butter, and 1/4 cup whipping cream. Heat on low until melted and bubbley. Add Vanilla and stir.
- Pour caramel sauce over each bowl, approximately 1/3 of the caramel per bowl. The other third is for later! Enjoy!
