Capture a taste of summer in this thirst-quenching spritz cocktail made with prosecco, gin and elderflower liqueur, and garnished with slices of lime.

25ml elderflower liqueur
20ml gin
90ml prosecco
35ml soda water, for topping up
lime slices, to garnish

Steps:

  • Fill a tumbler with ice, then pour over the elderflower liqueur.
  • Add the gin and prosecco, then top up with soda water and garnish with lime slices to serve.

Elderflower Spritz image

The Elderflower Spritz is EO's version of the St-Germain cocktail invented by Robert Cooper, the creator of St-Germain liqueur. The difference is that we add lemon slices for citrus in the middle. Our recipe was developed as a French version of the Italian Spritz, to offer to guests who dislike the bitterness of Aperol. Its flowery essence is calming and soothing, with a welcome simplicity.

Yield makes 1 drink

Number Of Ingredients 4

4 ounces Perrier-Jouët Grand Brut champagne
2 ounces St-Germain elderflower liqueur
2 ounces club soda
3 thinly sliced lemon wheels

Steps:

  • Fill a large wine goblet with ice. Carefully pour the champagne over the large cold ice cubes, followed by the St-Germain, and finish with the club soda. Add the lemon wheels and stir slightly.
  • Dominant Flavors: floral with pear and grapefruit
  • Body: light, effervescent
  • Dryness: medium to off-dry
  • Complexity: low
  • Accentuating or Contrasting Flavors: summer fruits like apricot from the champagne against citrus
  • Finish: short, sweet
  • Glass: large wine goblet

CUCUMBER & ELDERFLOWER SPRITZER

Cool off this summer with a light, refreshing cocktail made with fresh seasonal ingredients

Number Of Ingredients 5

1 cucumber , ends trimmed
½ bottle white wine
200ml elderflower cordial
few mint sprigs, leaves picked
2 x bottles soda water , chilled

Steps:

  • Chop the cucumber into a few chunks, then put in a blender or food processor with the wine and elderflower cordial. Whizz until well blended, then pour through a sieve set over a large bowl or jug. Tip the contents of the sieve back into the machine, whizz again until pulpy, then sieve again into the liquid already collected. Add 1-2 tbsp of the cucumber pulp from the sieve into the liquid and discard the rest. Chill until ready to serve.
  • To serve, fill glasses with a few ice cubes and some mint leaves. Pour in enough cucumber base to come halfway up the glass, then top up with soda water.

50ml passion fruit juice
25ml lemon juice
2 tsp elderflower cordial
150ml sparkling water
1 tsp passion fruit seeds or a lime leaf (optional), to serve

Steps:

  • Make sure all the ingredients are well chilled before you start. Ideally chill a flute glass too. Pour all of the ingredients into your glass, taking your time when you add the sparkling water so it doesn't overflow, then stir gently.
  • Drop in a few passion fruit seeds to garnish and a lime leaf, if you like.
