Homemade Elderberry Gummy Vitamins image

Kids love gummy vitamins, but they often contain artificial colors and flavors or other questionable ingredients. And if you have more than one child, those pricey bottles of vitamins don't last very long. This homemade version is easy to make and fun for your little ones.

2 cups dried elderberries
2 cups distilled water
½ cup dried rosehips
½ cup dried hibiscus flowers
1 tablespoon grated fresh ginger
1 cinnamon stick
6 whole cloves
8 tablespoons grass-fed gelatin (such as Great Lakes®)
1 cup raw, local honey
12 ounces pureed strawberries

Steps:

  • Combine elderberries, distilled water, rosehips, hibiscus flowers, ginger, cinnamon stick, and cloves in a heavy saucepan and bring to a boil. Reduce heat and simmer, stirring occasionally, about 30 minutes.
  • Strain mixture through a sieve into a bowl, squeezing all juice from berries. Discard solids. Return liquid to the saucepan over low heat. Sprinkle gelatin on top and whisk until dissolved. Remove from heat and let cool until mixture is warm but no longer hot. Stir in honey or pureed strawberries until dissolved.
  • Immediately pour mixture into fun-shaped silicone molds a 9x13-inch baking pan lightly greased with coconut oil.
  • Refrigerate until hardened, about 30 minutes. Remove gummies from molds or cut into pieces. Store in an airtight container in the refrigerator

Homemade gummy bears with a base of elderberry syrup help boost the immune system and are fun for kids (or adults) to take!

1 TBSP coconut oil
1 cup elderberry syrup
1/4 cup gelatin powder
½ cup hot water (but not boiling water)

Steps:

  • Grease molds or glass pan with coconut oil to prevent sticking.
  • Place ¼ cup of cooled elderberry syrup in a 2 cup measuring cup and quickly whisk in the gelatin powder.
  • Add the ½ cup of hot (not boiling) water and stir quickly until smooth.
  • Add the rest of the elderberry syrup and stir or whisk until completely smooth.
  • Pour into molds and refrigerate for 2 hours or until completely firm.
  • Pop out of molds and store in airtight container with parchment paper between layers.

  • In a saucepan over medium-high heat, add Elderberry Ginger Liquid (see notes below) and agar-agar powder. Stir continuously to remove any chunks. Bring the mixture to a boil.
  • Move quickly and use the liquid dropper to transfer the sea moss gel mixture into the gummy bear cavities.
