MEXICAN PIZZAS
Thanks to a gordita kit, you can have Mexican pizza on your dinner table in just 30 minutes.

- Heat oven to 425°F. In 10-inch skillet, heat oil over medium heat until hot. Cook tortillas (from dinner kit), one at a time, in oil about 20 seconds or until golden brown; turn and cook 10 seconds longer. Drain on paper towels.
- In same skillet, cook beef, stirring occasionally, until thoroughly cooked; drain. Stir in seasoning mix (from dinner kit) and water; heat until hot.
- Spread 2 tablespoons refried beans on each tortilla. Top with 2 tablespoons beef and 1 tablespoon ranch sauce (from dinner kit). Sprinkle each with 1/2 cup cheese; garnish with olives and onions. On ungreased cookie sheets, place pizzas.
- Bake 5 to 7 minutes or until cheese is melted.

Steps:
- Heat oven to 400°F. Spray or grease 15x10-inch or larger dark or nonstick cookie sheet. Unroll dough on cookie sheet; starting at center, press dough into 15x10-inch rectangle.
- In 10-inch skillet, cook beef, taco seasoning mix and water as directed on package. Spoon evenly on dough. Top with chiles, olives and cheese.
- Bake 13 to 16 minutes or until crust is golden brown and cheese is melted. Top with remaining ingredients.

EL PASO PIZZA

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Cook ground beef in a large skillet over medium heat until meat is browned and crumbly, about 10 minutes. Season meat with cumin, chipotle pepper, ancho chili powder, and salt. Stir in poblano pepper slices and green onions; cook until beef juices caramelize onto beef and peppers.
- Hold a paper towel with tongs and use it to wipe the skillet clean of excess grease. Tilt the pan to get as much as possible. Pour marinara sauce into meat mixture and continue to cook and stir until pepper strips are slightly tender, 2 to 3 more minutes.
- Roll pizza crust into a large rectangle on a floured work surface and place onto a large baking sheet lightly dusted with flour. Use tongs to pick out pepper strips from sauce and distribute them evenly onto the crust; spread rest of meat sauce over crust. Spread pepperjack cheese over top.
- Place pizza on the bottom of the preheated oven and bake for 6 minutes. Move pizza to the middle of the stove; continue baking until pizza crust is browned and cheese is bubbling and melted, 8 to 10 more minutes.
- Remove pizza from pan and slide pizza onto a cooling rack to prevent crust from becoming soggy. Cool for about 10 minutes before slicing.

- While the crust is prebaking, put the ground beef in a pan on medium heat, breaking it up. Once the beef has browned, drain the grease from the pan. - Roll out your pizza dough to be at least a 12 inch pizza size and place on a baking sheet or pizza stone. (Of course you can also use premade dough and roll it out into it's square shape.)
- In a large skillet, cook the ground beef breakin it up. Once it is browned and cooked through, drain the fat, stir in the taco seasoning and 1/4 cup of the salsa. Cook for another minute and then remove from the heat.
- Spread the refried beans carefully over the pizza dough. If they are difficult to spread, you can put them in the microwave for 30 seconds and that will make it easier. (Please be smart and don't microwave them in the can they came in.)
