AUTHENTIC CHIMICHURRI (URUGUAY & ARGENTINA)



Authentic Chimichurri (Uruguay & Argentina) image

Authentic Chimichurri from Uruguay & Argentina is the best accompaniment to any barbecued or grilled meats! Also used to serve as a dressing on salads!

Number Of Ingredients 8

1/2 cup olive oil
2 tablespoons red wine vinegar
1/2 cup finely chopped parsley
3-4 cloves garlic (, finely chopped or minced)
2 small red chilies (, or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili))
3/4 teaspoon dried oregano
1 level teaspoon coarse salt
pepper (, to taste (about 1/2 teaspoon))

Steps:

  • Mix all ingredients together in a bowl. Allow to sit for 5-10 minutes to release all of the flavours into the oil before using. Ideally, let it sit for more than 2 hours, if time allows.
  • Chimichurri can be prepared earlier than needed, and refrigerated for 24 hours, if needed.
  • Use to baste meats (chicken or steaks) while grilling or barbecuing. We don't use it as a marinade, but choose to baste our meats with chimichurri instead. However, you can use it as a marinade if you wish. Also, add a couple of tablespoons over your steak to serve.

This salad goes great with any steak barbecue.

Number Of Ingredients 8

1 - head iceberg lettuce, washed and seperated
2 medium tomatoes, cut into segments
2 medium avocados
1/2 cup(s) green olives, without seed
1/3 cup(s) vinegar from the olives
1/3 cup(s) extra virgin olive oil
2 cup(s) manchego cheese, grated
1/2 teaspoon(s) ground oregano, dried

Steps:

  • Put the olive oil, vinegar, salt, and oregano in deep bowl. Mix well.
  • Cut the avocados in half and and then into medium pieces. Add the avocado to the vinaigrette and mix.
  • Rip lettuce into bite-size pieces and put into large bowl.
  • Add the tomatoes, olives, and vinegar with avocado to the bowl.
  • Mix the ingredients together so that all is covered with vinaigrette
  • Add cheese to the top of the salad and serve.

4 (6 ounce) beef sirloin steaks, thick cut
1 ½ tablespoons Better Than Bouillon® Roasted Beef Base
¼ cup olive oil
1 ½ teaspoons chopped fresh garlic
1 teaspoon ground black pepper

Steps:

  • Preheat grill to 400 degrees F.
  • In a bowl, whisk beef base, olive oil, garlic and black pepper.
  • Add steaks to mixture and coat. Marinate in refrigerator for 30 minutes or up to 6 hours.
  • When ready to cook, place steaks directly on grill and allow grill to flame-up while turning to char outer surface.
  • Cook to desired temperature (approximately 5 to 6 minutes).
