BEEF & ALE STEW



Beef & ale stew image

A good stew is delicious, comforting, nutritious, homely, nostalgic, cheap to make and can be eaten and enjoyed in so many different ways. This basic stew will work every time and should be thought of as a principal recipe that you can chop and change, using different meats, herbs and liquids - think chicken or butter beans and white wine, lamb and red wine, or pork and cider. Stews are great to serve up for family dinners, because once they're cooking away in the oven you're free to do other things.

olive oil
3 sticks of celery
3 carrots
3 onions
½ a bunch of fresh rosemary, (15g) or 3 bay leaves
1 heaped tablespoon plain flour
500 ml ale, Guinness or stout
1 x 400 g tin of plum tomatoes
750 g quality diced stewing beef

Steps:

  • If using the oven to cook the stew, preheat it to 180ºC/350ºF/gas 4.
  • Put a large shallow ovenproof casserole pan on a medium heat with 2 tablespoons of oil.
  • Trim the celery, wash the carrots, peel the onions, then roughly chop it all about the same size as your beef chunks, adding the veg to the pan as you go.
  • Season the veg with sea salt and black pepper, and fry for 10 minutes, or until softened and starting to caramelise, stirring occasionally.
  • Strip in the rosemary leaves, stir in the flour for 2 minutes, then pour in the booze and let it cook away.
  • Pour in the tomatoes, breaking them up with the back of the spoon. Fill the tin with water, swirl around, and pour into the pan.
  • Bring just to the boil, then stir in the meat, season, and cover. Either simmer slowly on the hob or place in the oven for 2 hours, or until the meat falls apart easily.
  • Taste the stew and tweak the seasoning, if needed, then serve with rice or mashed potato, and some lovely veggies, or check out the topping ideas below.

This is modified from Kate Rodriguez's recipe on suite101. She says that "One of the most popular and enduring dishes in Germany is lentil stew (Linseneintopf), a tasty blend of lentils, vegetables and broth, adaptable to different tastes." I say: it's veggies and lentils! (Meat is only optional, and you'll find this dish quite satisfying without!)

1 cup green lentil (uncooked)
6 -7 cups water
1 tablespoon canola oil
1 small onion, finely chopped
2 spring onions, white and greens chopped
2 potatoes, cubed (small)
2 carrots, diced (again, only peel if desired)
2 stalks celery, chopped
2 -3 vegetable bouillon cubes
1 pinch nutmeg
1 tablespoon white vinegar
salt and pepper, to taste
4 -8 sausages, precooked (wieners, knackwurst, bockwurst, etc.)

Steps:

  • Bring the lentils with 3 cups of water to a boil, reduce to a simmer, and cook for about 25 minutes while you prepare the other ingredients.
  • In a soup pot over medium heat, saute the onion and spring onion in canola oil for about 5 minutes, until softened. Add the potatoes, carrots and celery and saute 3-4 minutes.
  • Add 3 more cups of water and the stock cubes. Cover the pot, bring to a boil, then reduce heat and simmer on low for 20-25 minutes, till the lentils and vegetables are completely cooked. Add the final cup of water, if needed to reach desired consistency.
  • If preparing the omnivorous version, drop in the sausages, and continue simmering for 5 minutes.
  • Remove from heat and stir in nutmeg, to taste, along with the vinegar. Season with salt and pepper.
  • Lentil stew is usually served with bread or rolls. White vinegar is also offered at the table for those who want a stronger sour flavor in their soup.

Eintopf means "one pot". There are as many recipes for Eintopt as there are cooks in Germany, but this one is my favorite. I use a loop of smoked turkey sausage to cut down on the fat. Also, the frozen French-cut green beans are rarely available in my small town, so I often use the canned variety. They are almost as good.

1 lb Polish sausage, partly skinned
1 lb carrot, scraped and sliced
10 potatoes, peeled and diced
1 (16 ounce) bag frozen French-cut green beans
2 onions, peel and slice
10 cups water (you can use all or part chicken broth as well)
1/4 teaspoon fines herbes, dried
salt
pepper
maggi seasoning

Steps:

  • Put the first six ingredients into a pot and bring to a boil. Reduce heat and simmer for about 1 hour.
  • Add the herbs.
  • Adjust the seasoning with salt, pepper and Maggi seasoning.
  • Creativity is encouraged.
  • Enjoy!
