UMM ALI
Umm Ali is a delicious traditional Egyptian dessert equivalent to North America's bread pudding. You can serve it warm with a scoop of French vanilla ice cream.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Unroll the puff pastry sheets, and place flat on a baking sheet. Bake for 15 minutes in the preheated oven, or until puffed and golden brown.
- Break the puff pastry into pieces, and place in a large bowl. Add the raisins, almonds, pine nuts, pistachios, and coconut, and toss to distribute. Pour into a 9x13 inch glass baking dish, and spread evenly.
- Pour the milk into a saucepan, and stir in the sugar and vanilla. Heat until hot but not quite boiling. Pour over the mixture in the baking dish.
- Bake for 15 minutes in the preheated oven. Turn the oven to broil, and broil for 2 minutes to brown the top. Remove from the oven and let stand for 5 minutes. Serve warm.

EGYPTIAN ROSES
Another recipe I collected for Christmas and can't remember where it came from. Prep time does not include chill time.

Steps:
- Cream together shortening, sugar, eggs and rose water until light and fluffy.
- Sift together dry ingredients and stir until sugar mixture.
- Chill several hours or overnight.
- Preheat oven to 350 degrees.
- Roll dough into walnut-sized balls. Place on greased cookie sheets about 2 inches apart and flatten slightly. Make four cuts from edge to near the center evenly around the cookie. Gently pinch each "petal". Pinch and lift and center of the cookie.
- Sprinkle with colored sugar.
- Bake until 8 to 10 minutes or until lightly browned on the bottom.

KARKADEH (EGYPTIAN HIBISCUS ICED TEA)
This traditional Egyptian hibiscus tea is made with loose dried hibiscus flowers, which are left to steep in the tea as it cools so the tea is quite strong. Tea bags are not suitable. We drink this tea rather sweet to break fast during the month of Ramadan. Make sure to sweeten the tea while still warm so that the sugar dissolves easily and then serve chilled.
